YUMMY Chocolate Zucchini Cake - so good! Moist and delicious and you'd never know it had grated zucchini in it! Also, has a smooth chocolatey frosting.

2 cups all-purpose flour
1/2 cup Hershey's unsweetened cocoa
2 tsp baking soda
1 tsp salt
1 3/4 cup sugar
1 cup butter (melted)
1 tsp vanilla extract
3 eggs (lightly beaten)
3/4 cup buttermilk
2 cup zucchini (grated and squeezed dry)
3/4 cup butter
1/3 cup milk (or cream)
1/4 cup cocoa powder (sifted)
3 1/2 cups powdered sugar (sifted)
1 tsp vanilla extract

Steps:

  • In a large mixing bowl, whisk together dry ingredients. Create a well or nest in the center of the dry ingredients and pour in the butter, buttermilk, vanilla extract and eggs. Using a spatula or wooden spoon stir for 10 seconds, then fold in the grated zucchini. Continue mixing until no flour pockets remain.
  • Place into a buttered (or sprayed) 9x13 inch baking pan. Place in the oven and bake at 350 degrees for 25-28 minutes. Remove from the oven and allow to cool.
  • Meanwhile, to make the frosting, in a medium saucepan set over low heat, melt the butter, then add the milk and sifted cocoa powder. Stir to combine, then remove from the heat and add the vanilla extract and the sifted powdered sugar. Spread over the slightly warm cake. Allow to cool/set for 30 minutes before slicing and serving.

3 cups all-purpose flour
1/2 cup baking cocoa
2 teaspoons baking powder

1 cup buttermilk
3 cups zucchini, coarsely shredded and unpeeled
1 cup walnuts, chopped
1 cup butter, softened
2 lbs confectioners' sugar
1/2 cup baking cocoa
1 tablespoon vanilla extract
1/2 cup milk

Steps:

  • In a large bowl, beat eggs until fluffy.
  • Add sugar gradually, beating until mixture is thick and lemon-colored.
  • Beat in vanilla and butter.
  • Combine flour, cocoa, baking powder, soda and salt; add alternately with buttermilk.
  • Beat until smooth.
  • Fold in zucchini and walnuts.
  • Divide batter into four greased and floured 8 or 9-in. round pans.
  • Bake at 350 degrees Fahrenheit for 25 to 30 minutes or until top springs back when gently pressed.
  • Cool in pans 10 minutes; remove to wire wracks and cool completely.
  • For frosting, beat all ingredients in a large bowl until creamy.
  • Frost between layers and on sides and top of cake.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
  • In a medium bowl, stir together the flour, sugar, cocoa, baking soda, baking powder, salt and cinnamon. Add the eggs and oil, mix well. Fold in the nuts and zucchini until they are evenly distributed. Pour into the prepared pan.
  • Bake for 50 to 60 minutes in the preheated oven, until a knife inserted into the center comes out clean. Cool cake completely before frosting with your favorite frosting.

Would also be good with chocolate ganache, a thin white icing or glaze or even just sprinkled with chocolate chips while hot. *i used hershey's special dark cocoa- it's a mix of dutch and regular unsweetened so i think either would work here

1/2 cup oil (i used coconut)
1/4 cup butter
2 eggs
3/4 cup plain yogurt (or sour cream)
1 teaspoon vanilla
2 1/2 cups flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups zucchini, shredded (generous cups!)
1/2 cup chocolate chips
8 ounces cream cheese, soft
2 tablespoons butter, soft
1 teaspoon vanilla
3 cups powdered sugar (or to taste)

Steps:

  • cream sugar, oil and butter.
  • add eggs, yogurt and vanilla.
  • sift dry ingredients and add to wet- batter will be really thick, moisture from the zucchini will come out while cooking.
  • fold in zucchini and chocolate chips.
  • spread in greased 13x9 in pan and bake at 325 for 30-35 minutes.
  • cool completely and frost
  • beat cream cheese and butter until fluffy, beat in vanilla and powdered sugar until smooth- i start adding it by 1/2 cup increments and taste along the way.
  • refrigerate until serving.

  • Preheat oven to 350°F (177°C). Grease two 9×2 inch cake pans. (Make sure they’re at least 2 inches high, deep dish style.) Set aside.
  • Whisk the flour, cocoa powder, baking soda, baking powder, espresso powder (if using), and salt together in a large bowl. In another large bowl using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the oil, granulated sugar, brown sugar, eggs, sour cream, vanilla, and zucchini together until combined. Pour into dry ingredients and beat on medium speed until completely combined. Beat in the chocolate chips. Batter will be slightly thick.
  • Pour batter evenly into cake pans. Bake for around 25-32 minutes or until the cakes are baked through. To test for doneness, insert a toothpick into the center of the cake. If it comes out clean, it is done. Allow cakes to cool completely in the pans set on a wire rack. The cakes must be completely cool before frosting and assembling.
  • First, using a large serrated knife, slice a thin layer off the tops of the cakes to create a flat surface. Discard (or crumble over ice cream!). Place 1 cake layer on your cake stand or serving plate. Evenly cover the top with frosting. Top with 2nd layer and spread the remaining frosting all over the top and sides. Pipe any leftover frosting on top. (I used Ateco #30 tip.) Decorate with chocolate sprinkles or mini chocolate chips if desired. Slice and serve.
