CHOCOLATE DREAM COOKIES (NO BAKE)
My dad brought this recipe home from the Navy nearly 50 years ago. I have been making them since I could stand on a chair by the stove and stir. The peanut butter in this recipe makes these cookies a little different than similar recipes I've seen here.

Steps:
- If using cookie sheet, prepare pan by coating lightly with butter or margarine.
- In a large heavy saucepan, combine the milk, cocoa, butter and sugar.
- Stirring constantly, bring to a full boil, then boil for 1 minute.
- Remove from heat.
- Stir in vanilla and peanut butter until peanut butter is completely melted.
- Stir in quick oats.
- Quickly* drop by spoonfuls onto waxed paper, or spread in a buttered cookie sheet.
- Allow to cool completely.
- If using cookie sheet, cut into squares to serve.
- *If you don't move quickly, cookies will set up in the pan.
- If cookies do not set, you didn't boil long enough.
- If cookies are dry, you boiled too long.

- Cream butter and sugar until light and fluffy. Beat in egg. In another bowl, whisk together flour, baking powder and salt; gradually beat into creamed mixture., Divide into thirds. Add cherries and food coloring to one portion, chocolate to another portion and nonpareils to remaining portion., Line a 9x5-in. loaf pan with waxed paper. Spread cherry dough over bottom. Cover with chocolate dough, then remaining dough. Refrigerate, covered, until firm, about 2 hours., Preheat oven to 375°. Remove dough from pan; cut in half lengthwise. Cut each portion into 1/4-in. slices. For easier handling, freeze until firm, 10-15 minutes. Bake 1 in. apart on lightly greased baking sheets until edges begin to brown, 10-12 minutes. Remove to wire racks to cool.

- Mix together the flour and the brown sugar. Cut in the butter until it looks like coarse granules. Chop pecans and stir them inches Press this into a 9x13" pan and bake at 350 degrees for 20 minutes. Remove from oven and cool completely.
- In separate bowl, beat together cream cheese and confectioners sugar. Stir in a little less than of half of the Cool Whip tub. Spread this on top of the cooled cookie crust.
- In another bowl, pour the milk in and beat in the instant pudding until thick - about 3 minutes. Spread this over the cream cheese layer.
- Top the pudding layer with the remaining Cool Whip. You may top this with more chopped pecans or slices strawberries. Chill for at least 3 hours before serving.

- Preheat the oven to 275˚F (135˚C). Line 2 baking sheets with parchment paper.
- In a medium bowl, sift together the flour, salt, and baker's ammonia.
- In a separate medium bowl, cream together the butter and sugar with an electric hand mixer on low speed until light and fluffy, about 2 minutes.
- Add the vanilla and continue beating until fully combined.
- Add the dry ingredients to the wet ingredients and beat to incorporate.
- Roll about 1 ounce of dough at a time in your hands to make walnut-sized balls. They will be small, about ½ inch (1 ¼ cm) wide. Place the balls of dough on the prepared baking sheets, leaving about 1 inch (2 ½ cm) of space between each cookie. Using a flat-bottomed measuring cup, gently press down on the cookies to flatten.
- Top each cookie with 3 chocolate chips, a single almond, or raisins.
- Bake the cookies for 30 minutes, or until the bottoms are light golden brown and the edges are crispy.

CHOCOLATE MINT DREAM COOKIES
These are such a smooth cookie; minty, chocolate, and a pretty frosting. They are from a TOH and are a must have on a cookie tray!

- In a large mixing bowl, cream butter and sugar.
- Beat in chocolate and mint extract; gradually add flour.
- Stir in chocolate chips. Dough will be soft.
- Drop by Tbsp 2 inches apart on ungreased baking sheets.
- Bake at 375 for 6-8 minutes. Cool 4 minutes before moving to racks to cool completely.
- Combine icing ingredients and spread over cooled cookies; let set.

- Seperate egg. Cover and chill egg white until needed.Set egg yolk aside.
- In a large bowl, beat butter with an electric mixer for approx 30 seconds. Add sugar and beat well. Beat in the egg yolk, milk and vanilla until combined.
- In a med bowl stir together flour, cocoa and salt. Add flour mix to butter mixture and beat until well mixed. Cover and chill approx 2 hours( *I didn't do this and it still worked out well).
- Preheat oven to 350. Lightly grease cookie sheets. In a small saucepan combine caramels and whipping cream, heat and stir over low-medium heat until mixture is smooth .set aside.
- In a shallow dish beat the egg white. Place chopped pecans on another plate. Shape the dough into one inch balls and roll in egg white and then into pecans. Place on baking sheet approx 1 inch apart. Using your thumb make an indent in each cookie.
- Bake 10 to 15 minutes until edges are firm. Original recipe says 10 minutes but mine took 15. Remove from oven and spoon a bit of the caramel sauce into each cookie( reheat if necessary prior to spooning) Transfer to wire racks to cool.
- In a small saucepan melt the chocolate and the shortening together and then drizzle on top of each cookie.
- Makes approx 36 cookies. I made mine slightly bigger so it made less.

- To make dream cookies: in a large mixing bowl with an electric mixer, beat sugar, butter and vanilla until light and fluffy.
- Add the canola oil slowly while mixing with the mixer.
- Mix flour and baking powder in separate bowl.
- Stir in flour mixture by hand to form a smooth dough.
- Place the dough in refrigerator for about 30 minutes.
- Preheat oven to 300 F (150°C).
- Roll dream cookie dough into 1-inch balls and place them 2 inches apart on a cookie sheet.
- Bake for 20 minutes or until the dream cookies are lightly browned with cracks on the surface.
- Note: Do not open the oven until cookies are done!
