Fresh strawberries are sandwiched with a sweet cream cheese filling in these luscious chocolate shortcake whoopie pies.

1 pkg. (2-layer size) chocolate cake mix
3/4 cup water
1/2 cup oil
3 eggs
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 jar (7 oz.) JET-PUFFED Marshmallow Creme
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
3 cups fresh strawberries, sliced

Steps:

  • Heat oven to 350ºF.
  • Beat first 4 ingredients with mixer until blended. Drop 2 Tbsp. batter, 2 inches apart, into 32 mounds on baking sheets sprayed with cooking spray. Bake 10 min. or until toothpick inserted in centers comes out almost clean. Cool on baking sheets 3 min. Remove to wire racks; cool completely.
  • Beat cream cheese and marshmallow creme in large bowl with mixer until blended. Add COOL WHIP; beat on low speed just until blended.
  • Spread about 2 Tbsp. COOL WHIP mixture onto bottom side of each of 16 cookies. Top with strawberries and remaining cookies.

1 stick butter, softened
1 1/2 cups light brown sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
3/4 cup Dutch process cocoa powder
1 teaspoon baking soda
1 teaspoon kosher salt
1/2 teaspoon baking powder
1/2 cup milk
1/2 cup sour cream
25 strawberries, hulled and sliced
2 tablespoons granulated sugar
1 bag large marshmallows

Steps:

  • Preheat the oven to 425 degrees F. Line 2 baking sheets with silicon mats or parchment paper and set aside.
  • For the cookies: Beat the butter and sugar with a hand mixer until light and fluffy. Add the egg and vanilla until just incorporated. Scrape down the sides of the bowl.
  • In a separate bowl, whisk together the flour, cocoa powder, baking soda, salt and baking powder.
  • In a third bowl, combine the milk and sour cream.
  • Add half of the milk mixture to butter mixture while mixing on low speed. Then add half of the flour mixture and mix until incorporated. Repeat the process.
  • With a measured scoop, portion out the batter into small rounds on the prepared baking sheets, spaced at least an inch apart. You can make the cookies whatever size you like; I like mine a bit big so I use a 4-ounce ice cream scoop.
  • Bake until the tops lightly spring back when touched, 8 to 10 minutes. Remove from the oven and allow to cool completely.
  • For the filling: Add the sliced strawberries to a bowl and sprinkle with the granulated sugar and let sit for 15 minutes.
  • Preheat the oven to a broil and set a rack 6 inches from the broiler.
  • When the cookies are cooled, place them round-side down and then top half of them with sliced strawberries.
  • Press 3 marshmallows together using the palm of your hand, until mostly flattened, and then place them on the other half of the cookies.
  • Place the marshmallow-covered cookies back on the baking sheets and place under the broiler to let the marshmallows char and soften until lightly golden on top, 1 to 4 minutes. Keep an eye on them as they can burn quickly.
  • For assembly: Top the strawberry side of the cookie with one of the marshmallow cookies, gently press together and then stand back and marvel at your creation.

6 tablespoons vegetable oil or 6 tablespoons canola oil
2 eggs
2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
4 tablespoons milk
4 tablespoons milk
4 tablespoons butter or 4 tablespoons shortening, softened to room temp
3 -3 1/4 cups confectioners' sugar
1/4 teaspoon vanilla extract (OR mint extract is good)

Steps:

  • Preheat oven to 425. Lightly coat cookie sheets with nonstick cooking spray.
  • Whoopie Pies: In a mixing bowl, beat sugar and oil until crumbly. Add eggs and beat well. In separate bowl, combine flour, cocoa, baking soda and salt.
  • Gradually beat flour mixture into sugar mixture. Add milk and mix together well.
  • With lightly lightly floured hands, roll dough into 1 1/2" balls. Place balls 2" apart onto cookie sheets lightly sprayed with nonstick cooking spray. Flatten balls slightly with bottom of lightly greased flat-bottom glass.
  • Bake at 425 for 5-6 minutes or until tops are cracked. Cool for 3 minutes before removing to wire racks to cool.
  • Filling: In a mixing bowl, beat together butter and confectioners' sugar. Beat in milk and extract until fluffy.
  • Pipe filling using pastry bag (or spread w/ knife) on to flat bottom of cooled whoopie pie and top with another whoopie pie to make a sandwich.

⅓ cup white sugar
¼ cup cocoa powder
1 tablespoon baking powder
1 teaspoon baking soda
½ teaspoon salt
½ cup butter
1 cup milk
2 pints strawberries, sliced
¼ cup white sugar
1 (12 ounce) container frozen whipped topping, thawed
2 tablespoons chocolate syrup

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Grease two 9 inch layer pans.
  • In a large mixing bowl, combine flour, 1/3 cup sugar, cocoa, baking powder, baking soda, and salt. Cut in butter or margarine until the mixture resembles coarse crumbs. Add milk, mixing until just moistened. Spread batter evenly into two prepared layer pans.
  • Bake at 400 degrees F (200 degrees C) for 15 minutes, or until a toothpick inserted in the center comes out clean. Cool.
  • In a medium-size mixing bowl, combine strawberries and 1/4 cup sugar. Let the mixture stand 10 minutes.
  • Cover the bottom shortcake layer with half of strawberry mixture and half of the whipped topping. Top with second shortcake layer, remaining strawberry mixture and whipped topping. Drizzle with chocolate topping.

Not knowing what to do with some strawberry cake mix, and not wanting to make a boring cake, I came up with this recipe using some other odds and ends in my kitchen. Not only was it surprisingly tasty... it was surprisingly quick as well!

1 (15.25 ounce) package strawberry cake mix
⅓ cup vegetable oil
2 large eggs
½ (8 ounce) container whipped topping (such as Cool Whip®)
½ cup crushed chocolate sandwich cookies (such as Oreo®)

Steps:

  • Preheat the oven to 275 degrees F (135 degrees C).
  • Combine cake mix, vegetable oil, and eggs in a large bowl.
  • Form dough into eighteen 1-inch balls and place on a cookie sheet. Flatten each ball with the palm of your hand.
  • Bake in the preheated oven until edges are golden, about 6 to 8 minutes. Cool on the baking sheet briefly before removing to a wire rack to cool completely, about 15 minutes.
  • Add whipped topping to one side of each cookie, working in pairs. Sprinkle 1/2 of the cookies with crushed Oreos®, then sandwich with remaining cookies. Wrap each whoopie pie with plastic wrap and place in a 1-gallon freezer bag.

1 tablespoon water
1 cup from 1 tub (12 oz) Betty Crocker™ Whipped Strawberry Mist™ Frosting

Steps:

  • Heat oven to 375°F. In medium bowl, stir cookie mix, butter and water until soft dough forms.
  • Drop dough by teaspoonfuls 1 inch apart on ungreased cookie sheet, making 18 cookies.
  • Bake 8 to 10 minutes or until light golden brown. Cool 1 minute before removing from cookie sheet. Cool 4 minutes before assembling.
  • Spread about 1 tablespoon frosting on bottom of 1 cookie. Top with additional cookie, bottom sides together.

1 1/4 cups sugar
1/2 cup Dutch-processed cocoa powder
2 teaspoons baking powder
1 teaspoon baking soda
2 ounces melted unsweetened chocolate (2 - 1 oz squares of baking chocolate)
2 large eggs
3/4 cup coconut milk or 3/4 cup almond milk
2 teaspoons instant espresso powder
2 1/2 cups all-purpose flour
8 ounces cream cheese, softened
1/2 cup unsalted butter, softened
3/4 cup confectioners' sugar (there is really no subbing here)
1 teaspoon pure vanilla extract
1 cup fresh raspberry, mashed with a fork

Steps:

  • Pre heat oven to 350 degrees and line 3 large baking sheets with parchment paper.
  • In a bowl, beat butter, sugar, coco, baking powder and baking soda until creamy.
  • Beat in melted chocolate and eggs, one at a time, until well combined.
  • Beat in milk then flour.
  • Drop batter by heaping tablespoons onto prepared baking sheets, allowing 8 cookies per sheet. Makes about 24 cookies.
  • Bake for 10-12 minutes or until tops spring back when lightly pressed.
  • Remove to wire rack to cool completely.
  • FROSTING: In another bowl, beat cream cheese and butter until smooth. Add sugar and vanilla and continue to mix until fluffy. Fold in mashed raspberries. Be careful not to over mix.
  • Spread half the cookies with filling; top with the remaining cookies, flat side down to form sandwiches and press lightly.
  • ENJOY!
