CHOCOLATE PUDDING DIPPING POOL

Steps:

• Spoon pudding into center of small bowl.
• Arrange graham snacks and strawberries around sides of bowl.
• Dip graham snacks and strawberries into pudding to eat.

CHOCOLATE PUDDING-TINI

Steps:

• Add a few tablespoons of water to a small rimmed plate. Add 3 tablespoons of cocoa to another small plate and break up the lumps. Dip the rims of 4 martini glasses into the water then into the cocoa. Set aside.
• Fill a saucepan halfway up with water and bring to a simmer over low heat.
• In a large glass bowl, whisk together 2 tablespoons cocoa powder, the cornstarch, sugar, chili powder and salt. Put the glass bowl over the simmering water (making sure the bottom doesn't touch the simmering water) and slowly add the half-and-half while whisking. Stir the mixture occasionally while it cooks and thickens, making sure to scrape the bottom and sides of the bowl with a rubber spatula and to whisk out the lumps when they form.
• Continue to cook the mixture until it becomes very thick and coats the back of the spoon, about 25 minutes. Stir in the chopped chocolate, butter, and vanilla, and cook for an additional 2 to 3 minutes.
• Using kitchen towels, carefully pour the chocolate mixture (it will be hot) into a large liquid measuring cup. Pour the chocolate into the rimmed martini glasses. Let the pudding cool slightly and put a small piece of plastic wrap over the top of the pudding, being careful of the cocoa rim. Refrigerate for 2 hours. Top with a dollop of the chocolate whipped cream.
• Add the cream to a medium bowl and whip with an electric hand mixer until thickened. Whip in the confectioners' sugar and chocolate liqueur and continue to beat until you get medium peaks.

DIPPING CHOCOLATE

Steps:

• In a double boiler, combine the chips and shortening.
• Slowly let chocolate melt, while stirring frequently.
• When chocolate has completely melted to liquid and no lumps are visible, remove from heat and begin dipping! (Great for dipping cookies, pretzels, fruit, whatever!).
• Place your chocolate-covered treats onto a plate covered with waxed paper, then chill in the refrigerator until chocolate has hardened.
• This works great with white chocolate chips too!

PERFECT DIPPING CHOCOLATE

Steps:

• Remove the chilled candy from the refrigerator about 10 minutes before coating (dipping cold centers can result in cracked coating).
• Place the chocolate chips and shortening in a 2-cup measuring bowl.
• Place the bowl into a larger bowl which contains very warm water (about100-110F) the water should reach only halfway up the 2-cup bowl with the chocolate (DO NOT LET EVEN 1 DROP WATER MIX WITH CHOCOLATE!).
• Stir mixture constantly with a small spatula until the chocolate is melted and the mixture is smooth (this should take about 16-18 minutes, do not rush the melted process).
• If necessary replace the water with more very warm water.
• remove the 2-cup bowl with melted chocolate from the water and continue to stir until all the chocolate is cooled slightly (about 2-3 minutes).
• Set one candy onto a two-pronged fork, then completely dip candy into melted chocolate.
• Gently tap the fork against side of the bowl to remove any excess melted chocolate.
• Place onto baking sheet lined with waxed paper.
• Repeat with remaining candy.
• If the chocolate becomes too thick for dipping, place the bowl containing the chocolate into the bowl with warm water until desired consistancy.
• TIPS ON HOW TO WORK WITH DIPPING CHOCOLATE.
• Avoid all types of moisture when melting the chocolate, any steam or drops of moisture can cause the mixture to :seize" or become very firm, crumbly and grainy, if this occurs it can be corrected by stirring in 1 teaspoon shortening for each 2 ounces of melted chocolate.
• Chocolate can also be melted over low heat in a double boiler.
• Store the chocolate tightly wrapped in a cool dry place, do not refrigerate.

CHOCOLATE PUDDING +

Steps:

• Combine first 3 ingredients in large bowl, & using electric mixer, CAREFULLY beat until moist & well blended.
• Gently stir in Cool Whip, mixing completely.
• In another large bowl, combine milk & pudding mix, & with whisk or electric mixer, beat until well blended.
• Add chocolate pudding mixture to cream cheese mixture & beat or stir together until well blended.
• Cover & refrigerate. Serve cold.
