WHITE CHOCOLATE PUDDING COOKIES
These are some of the most delicious cookies I have ever made. Everyone loves them!! The pudding in the recipe makes the cookies moist and chewy for a long time after they've cooled! I add a liberal amount of white chocolate chips because they are so good, but you could add M&Ms or other chocolate chips in place of the white chocolate chips. Or do 1 cup of white chocolate and 1 cup of M&M's. Add seasonal M&M's to make the cookies beautiful and festive!

Steps:
- Preheat the oven to 350℉ and line two large baking sheets with parchment paper or baking mat. If you don't have parchment paper, you can just drop the cookies onto an ungreased sheet pan, they won't stick.
- In a medium bowl whisk together the flour, baking powder, and instant pudding mix. Set aside.
- In a large bowl using a hand mixer (or a stand mixer fitted with the paddle attachment) cream together the butter, peanut butter, cream cheese, and sugar until light and fluffy, about 1 minute. Scrape bowl with a silicone spatula.
- Add the egg and vanilla, and mix until combined. Scrape bowl with a silicone spatula.
- On low, add half of the dry ingredients and mix until mostly combined. Add the remaining dry ingredients and mix on low until just combined. The dough should be difficult to mix.
- Fold in the chocolate peanut butter chip mixture.
- Use a cookie scoop to drop balls of dough onto the sheet pans 1" apart. Press down down to flatten the cookies slightly. If you'd like a uniform edge on your cookies, roll the dough balls briefly in your hand before pressing chips into them. The cookies will not spread much in the oven, it's important to pat them down a bit.
- Bake for 12-14 minutes, or until the edges of the cookies look dry and are starting to brown. Let them cool on the sheet pan for 3 minutes before transferring to a cooling rack to cool completely.

- Chocolate Pudding Pie. This no-bake pudding pie turns instant chocolate pudding into a cool and creamy dessert. It does need to chill out in the fridge for a couple of hours to set, so you have to think ahead, but preparation is a snap.
- Dirt Dessert Cups. Little kids love playing in the dirt, and they love making edible "dirt cups," too. This easy-to-follow recipe requires chocolate pudding, whipped topping, crushed Oreo cookies, and gummy worms (for the "eew" effect).
- Chocolate Delight Dessert. This rich layered dessert checks all the craving boxes with chocolaty pudding, sweetened cream cheese, whipped topping, and chopped nuts in a graham cracker crust.
- No-Bake Chocolate Cream Pie. It doesn't get much easier than this mix-and-chill pie. You can put it together in 10 minutes, but it needs four or more hours in the refrigerator to set, so plan ahead.
- Easy Chocolate Icebox Pie. This recipe for chocolate icebox pie uses a graham cracker crust, which requires baking. You can avoid turning on the oven by purchasing a premade crust at the grocery store.
- Gluten-Free Black Forest Brownie Trifle. Assemble this dessert ahead of time in individual glasses or one big serving bowl. Basically layers of brownie, pudding, cherry pie filling, and whipped topping, this trifle recipe adapts the ingredients for a gluten-free treat, but you can also make it with standard brownie and instant pudding mixes.
- Triple Chocolate Cake. Chocolate lovers will be absolutely delighted with this triple chocolate cake. Made with devil's food chocolate cake mix, chocolate pudding, and semisweet chocolate chips, this cake will satisfy those chocolate cravings.

- In the bowl of an electric mixer fitted with the paddle attachment, cream butter and both sugars. Mix in vanilla and egg until smooth. Mix in cocoa powder and pudding mix (just the powdery mix, not actual pudding). Beat in coffee or water, flour and baking soda until well blended. Stir in 1 1/4 cups of chocolate chips.
- Drop cookie dough balls (I used a 2 tablespoon cookie scoop) onto a wax paper lined cookie sheet. You don’t have to space them out, you’re going to chill the cookie dough balls. Press a few of the remaining chocolate chips into each cookie. Cover with plastic wrap and chill for at least 2 hours. (You can also just chill the bowl of cookie dough, but you’ll need it to chill for at least 4 hours. It’s harder to scoop cold, so scooping out cookie dough balls before chilling is easier.)
- Preheat oven to 350°F. Line cookie sheets with parchment or a silpat. Bake for 10-13 minutes, until the edges lose their sheen. I like these a little under-done, so I take them out when the center is still a tiny bit shiny.
