- Preheat oven to 350 degrees, and set a kettle of water to boil. Butter a shallow 2-quart baking dish; coat with granulated sugar, tapping out excess.
- In a large bowl, whisk egg yolks with granulated sugar until lightened in color. Whisk in melted chocolate; set aside.
- In a large, clean bowl, using an electric mixer on high, beat egg whites with salt until soft peaks form. Whisk 1/3 of whites into chocolate mixture. Add remaining whites, and gently fold with a rubber spatula just until combined (do not overmix).
- Transfer batter to prepared baking dish. Set dish in a roasting pan, and pour enough boiling water into pan to come about 1 inch up side of dish. Bake until puffed and just set (center of cake should barely move when jiggled), 25 to 35 minutes. Let cool 5 minutes; dust with confectioners' sugar just before serving.

- In ungreased 9 inch square pan, stir together flour, white sugar, cocoa, the baking powder, and salt. Mix in milk, oil, and vanilla with a fork until smooth.

STEAMED CHOCOLATE PUDDING CAKES

- Special equipment: six 6-ounce ramekins
- Preheat the oven to 350 degrees F. Butter the ramekins and then dust with sugar. Place the ramekins in a 9-by-13-inch baking dish.
- Place the chocolate chips and the butter in the top of a double boiler set over simmering water. Heat until melted, stirring occasionally so that the chocolate chips and butter are well blended and have a smooth, silky texture.
- In a medium bowl, combine the cocoa powder, flour and salt. Mix together with a fork.
- Using a hand-held mixer or a whisk, beat the egg whites in a large bowl until stiff peaks form.
- In a medium bowl, beat the egg yolks and sugar with a hand-held mixer or a whisk until the mixture turns pale yellow, about 2 minutes. Slowly temper the melted chocolate into the egg yolks and mix until well combined. Mix in the milk. Add the dry ingredients and blend until fully incorporated. With a rubber spatula, fold in the egg whites in three separate additions.
- Fill the prepared ramekins with batter two-thirds of the way up. Pour hot water into the baking dish two-thirds of the way up the sides of the ramekins. Cover the baking dish tightly with aluminum foil. Place in the oven and bake until the cakes are set, 15 to 20 minutes.
- Carefully remove the ramekins from the baking dish and set aside to cool for about 30 minutes. Unmold the cakes onto individual plates. If the cakes are not releasing from the ramekins, run a small knife or offset metal spatula along the inside of the ramekins. Garnish each cake with a dusting of powdered sugar and a sprinkling of orange zest.

CHOCOLATE PUDDING CAKE I
This is a very quick and simple no bake dessert cake. I've been making it for years without a written recipe. I have also tried it with different flavors such as Coconut/Pineapple. This recipe lends itself well to experimentation. - Preheat the oven to 350 degrees F.
- For the cake: Whisk together the sugar, flour, cocoa, baking powder and salt in a bowl. Whisk in the milk, butter and vanilla. Stir together until smooth with a wooden spoon or spatula.

- Preheat oven to 350 degrees F and grease a 12°C muffin pan.
- Combine Flour, B. Powder, B. Soda, salt and cocoa in a medium size mixing bowl and set aside.
- In a small saucepan combine chopped chocolate, milk, cornstarch and butter. Over medium heat stir ingredients until chocolate and butter are melted and there are no lumps from the cornstarch remaining. Put mixture in the fridge for 15 minutes or until set.
- Put the eggs, milk and canola oil in a large mixing bowl and stir with a wire whisk until frothy. Add the pudding mix to the egg mixture and stir until just incorporated into the batter. Add the dry ingredients to the mixture and stir until smooth and creamy.

- Pre-heat the oven to 180*C. Line a 8" baking pan with parchment paper.
- In a large bowl, beat together oil and sugar until the mixture is pale and light. Beat in vanilla.
- Add yogurt and milk and mix well.
- In the same bowl, sift in maida, cocoa powder, baking soda and baking powder.
- Mix only until well combined. Don't over mix.
- Pour the batter into the pan and bake at 180*C for 30 minutes or until a toothpick inserted in the center comes out clean.
- In a saucepan, combine milk, cream, chocolate and coffee bring it to a simmer over medium heat.
- In a separate bowl, stir together sugar, cornflour and cocoa.
- Once the cream mixture comes to a simmer, gradually add this to the dry ingredients and whisk well.
- Transfer the entire mixture back into the saucepan and bring it to a boil, whisking continuously.
- Once the mixture comes to a boil, bring it off the heat and add butter and vanilla. Whisk well.
- Cover the surface with a cling wrap and let it cool down.
- In a saucepan add in sugar and spread it evenly on the surface.
- Add in water and let the sugar caramelize
- Once it reaches golden amber color, add in almonds and using a wooden spoon, coat them in the sugar.
- Transfer the hot praline mix onto a silicone sheet and let it cool down completely and become firm.
- Break it into pieces and blitz it to a fine powder in your mixer.
- Cut out a hollow circle in your cake, leaving space on the edges.
- Fill the hollow space with chocolate pudding. Sprinkle some sea salt on top of the pudding (optional).
- Top it off with almond praline.

- Place the chocolate in a medium bowl and set aside. Combine the milk and all but 1 tablespoon of the sugar in a small saucepan. Heat over medium heat, stirring constantly until the sugar is completely dissolved. Stop stirring and cook until the milk begins to bubble around the edge of the pan. Remove the pan from the heat. Whisk in the vanilla. Scrape the batter into a 6-inch round cake pan and smooth the top with a rubber spatula. Cover the pan with a plastic wrap and place it in the freezer for at leas 6 hours, or overnight. To unmold the cake, carefully immerse the pan in hot water for a few seconds. Wipe the bottom and side of the pan dry and invert the cake onto a serving platter. Decorate the top of the cake by running a hot dull knife across its surface in a wave pattern (dip the knife in hot water and wipe completely dry before using it). Lightly dust the top of the cake with sifted cocoa powder. Allow the cake to stand at room temperature for 45 minutes before serving.
