Time 1h45m

Yield Serves 16

Number Of Ingredients 24

250ml passion fruit purée, (see notes below)
1 whole egg
2 egg yolks
100g caster sugar
25g cornflour
85g unsalted butter, softened, plus extra for the tin
150g soft light brown sugar
50g caster sugar
2 eggs
125g plain flour
35g cocoa powder
1 tsp baking powder
¼ tsp sea salt
50ml (instant is fine) strong coffee
50ml whole milk
50ml passion fruit purée
100g caster sugar
200g (65%-75% cocoa content) dark chocolate, chopped
200g (38% cocoa content) milk chocolate, chopped
35g butter
225ml double cream
130g (65%-75% cocoa content) dark chocolate, chopped
250ml double cream
2 tbsp golden syrup or runny honey

Steps:

  • To make the passion fruit curd, put the passion fruit purée into a pan and bring to a simmer. Meanwhile, whisk the egg, yolks, sugar and cornflour until smooth and pale. Pour the passion fruit purée over the egg mix, whisking to combine. Scrape the curd mixture back into the pan and cook, whisking constantly, until the mixture bubbles and thickens. Scrape the curd into a bowl and press a sheet of clingfilm onto the surface (this will prevent a skin forming). Chill until needed.
  • Heat the oven to 180C/fan 160C/gas 4 and lightly butter a deep 20cm round cake tin, lining the base with baking paper.
  • For the chocolate cake, put the butter and sugars into a large bowl and beat using an electric mixer until light and fluffy. Add the eggs one at a time, beating the first until fully combined before adding the second.
  • In a separate bowl, mix the flour, cocoa powder, baking powder and sea salt. In a jug, combine the coffee and milk. Mix the flour mixture into the butter mixture 1 /3 at a time, alternating with the milky coffee, until fully combined. Scrape into the prepared tin and bake for 35-40 minutes or until the cake springs back when pressed. Allow the cake to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
  • As the cake cools, make the passion fruit syrup by putting the purée and sugar into a small pan with 50ml of water. Simmer and stir until the sugar has dissolved.
  • To make the ganache, put the dark and milk chocolate and butter into a bowl. Put the cream into a pan and bring to a simmer, then pour over the chocolate and allow to sit for a few minutes before stirring until smooth. Put aside until thickened and spreadable.
  • When ready to assemble, use a large serrated knife to carefully slice the cake into three equal layers (use a ruler to mark up the layers before cutting). Put the bottom layer of cake onto a piece of baking paper and brush the cut side liberally with syrup. Then spread over 1 /2 of the curd and a 1 /3 of the ganache. Repeat with the second layer. Sandwich the two layers together. For the final layer, brush the cut side with the remaining syrup and place syrup-side down on top. Spread the remaining ganache over the top and sides of the cake. Put the cake into the freezer for 1 hour.
  • For the glaze, put the chocolate in a bowl. Heat the cream and golden syrup in a small pan until simmering. Pour over the chocolate and mix until smooth and combined. Put aside for 10 minutes or until it has slightly thickened.
  • Remove the cake from the freezer and put onto a wire rack. Pour the glaze over the cake, allowing it to drip down the sides until it covers the entire cake. Allow the glaze to set for a few minutes before using a couple of spatulas to lift from the wire rack onto a cake stand or plate. Allow the cake to come to room temperature before serving. This cake will keep in the fridge for 4 days.

CHOCOLATE AND PASSIONFRUIT LAYER CAKE

Chocolate and Passionfruit Layer Cake image

Chocolate cake is a beautiful thing on its own, but adding a thick layer of sharp passionfruit curd undercuts the heavy richness and balances the sweetness-which dangerously means that one slice is no longer enough...

Provided by Martha Collison

Categories     HarperCollins     Cake     Dessert     Bake     Chocolate     Passion Fruit     Milk/Cream     Dark Chocolate     Birthday

Yield 10 servings

Number Of Ingredients 14

Butter, for greasing
2 x My Favorite Chocolate Cake
Filling:
150ml (2/3 cup) heavy cream
1 tbsp confectioners' sugar
10 tbsp Passionfruit Curd, with or without seeds
Icing:
50g (1/4 cup/1/2 stick) butter
100g (3 1/2oz) dark chocolate, chopped
75g (2/3 cup) confectioners' sugar
1 tsp milk
Sprinkle of chocolate shavings, to decorate
Special Equipment
2 [20cm (8-inch)] round tins

Steps:

  • Preheat the oven to 180°C/160°C fan/gas 4/350°F then grease two 20cm (8-inch) tins and line with baking parchment.
  • Make two batches of My Favorite Chocolate Cake recipe and use it to fill the tins.
  • Bake for 25-30 minutes until risen and a skewer inserted comes out clean. Leave to cool in the tin for ten minutes before turning out onto a cooling rack.
  • Whip the cream and confectioners' sugar together in a small bowl until it forms soft peaks and holds its shape when mixed. Be careful to stop when it reaches soft peaks or you might over-whip the cream, which will ruin the finished cake.
  • Spread the whipped cream all over the top of one of the cake layers, then cover with spoonfuls of passionfruit curd. Carefully sandwich the second layer on top of the first.
  • To make the icing, melt the butter and chocolate together in a microwave or in a heatproof bowl over a pan of simmering water. Remove from the heat and mix in the confectioners' sugar and the milk, then use a palette knife to spread it over the top of the cake. Sprinkle over chocolate shavings before serving. Keep any leftover cake in the fridge, where it will keep well for 2-3 days.

PASSION FRUIT AND CHOCOLATE SORBET CAKE

Passion Fruit and Chocolate Sorbet Cake image

A luscious chocolate ganache coats this chocolate-and-passion-fruit sorbet cake with a chocolate cookie crust.

Provided by Food Network Kitchen

Time 5h

Yield 8

Number Of Ingredients 7

6 tablespoons unsalted butter, melted, plus more, for the pan
9 ounces chocolate wafer cookies, crushed
1 quart chocolate sorbet, softened
1 quart passion fruit sorbet, softened
3/4 cup heavy cream
8 ounces bittersweet chocolate, chopped
1/4 cup flaked coconut

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-inch springform pan and line the bottom with a parchment paper circle.
  • Put the melted butter and wafer cookies in a medium bowl and mix well. Press the mixture into the bottom and slightly up the sides of the prepared pan. Bake for 10 minutes, then let cool completely before using.
  • Scoop the chocolate sorbet and passion fruit sorbet onto the cookie crust, packing them in tightly and alternating the scoops to create a marbled or checkerboard effect. Spread with an offset spatula to make a smooth top. Cover with plastic wrap and freeze until firm, 2 to 2 1/2 hours.
  • Unmold the cake by running a knife around the edge of it, then unhinge the springform and remove. Invert the cake onto a sheet of plastic wrap and remove the bottom of the pan and the parchment. Place a plate on the bottom and invert once more.
  • Bring the heavy cream to a simmer in a small pot. Pour the cream over the chocolate in a heatproof bowl and stir until smooth. Allow to cool 10 minutes before using.
  • Frost the top and sides of the cake with the ganache and sprinkle with the coconut. If the cake begins to get too soft, put it back into the freezer for a few minutes.
  • Freeze another 1 1/2 to 2 hours or overnight. Before serving, let the cake sit at room temperature for about 20 minutes.

Categories     Afternoon tea, Treat

Time 1h25m

Number Of Ingredients 17

150ml sunflower oil , plus a little extra for the tin
300g self-raising flour
1 tsp ground cinnamon
1 tsp baking powder
300g caster sugar
50g desiccated coconut
2 eggs , plus 2 egg whites, whole eggs beaten
2 over-ripe bananas , mashed
140g carrots , grated
432g can crushed pineapple in juice, drained in a sieve, reserving the juice (or briefly whizz a can of pineapple chunks, then sieve)
100ml milk
4 ripe passion fruits , halved
25g caster sugar
200g tub soft cheese
100g softened butter
85g icing sugar
1 tsp vanilla extract

Steps:

  • Heat oven to 180C/160C fan/gas 4. Oil and line the bases of 3 x 20cm sandwich tins with baking parchment. Mix the flour, cinnamon, baking powder, half the sugar and the coconut in a large mixing bowl. In another bowl mix the beaten whole eggs, mashed bananas, grated carrot, drained crushed pineapple, milk and oil. Beat the egg whites until stiff, then add the remaining sugar and beat until stiff and shiny again.
  • Stir the wet mixture into the dry until smooth and lump-free, then using a large metal spoon or spatula, fold in the egg white mixture. Divide evenly between the tins and bake for 25 mins until risen and a skewer comes out clean. You might need to swap the position of the tins after 20 mins.
  • For the drizzle, scoop out the passion fruit pulp into a small pan. Add the pineapple juice and caster sugar and heat until bubbling, then bubble until syrupy. For the icing, beat the cheese and butter until lump-free, then beat in icing sugar and vanilla. Chill until ready to assemble.

Yield Makes 6 individual cakes

Number Of Ingredients 16

For cakes:
4 ounces almond paste (not marzipan)
1/2 cup sugar
8 tablespoons (1 stick) unsalted butter, room temperature
3 large eggs, room temperature
1/2 teaspoon pure vanilla extract
1/2 cup all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon kosher salt
Confectioners' sugar for dusting
For chocolate passion-fruit sauce:
5 ounces good-quality bittersweet chocolate, finely chopped
1/4 cup heavy cream
1/4 cup passion fruit juice, such as Loóza Passion Fruit Nectar
Special Equipment
6 (1/2-cup) ramekins, food processor, stand mixer with paddle attachment

Steps:

  • Make cakes:
  • Preheat oven to 350°F. Butter and flour ramekins.
  • In food processor, process almond paste and sugar until mixture resembles fine sand, 10 to 15 seconds. Transfer to bowl of stand mixer fitted with paddle attachment, then add butter and beat until light and fluffy, about 2 minutes. Add eggs, 1 at a time, beating well after each addition and scraping down bowl as necessary, about 1 minute. Add vanilla and beat until incorporated, about 30 seconds.
  • In small bowl, whisk together flour, baking powder, and salt. Sift over almond paste mixture, then mix until incorporated, about 30 seconds.
  • Divide batter among prepared ramekins, smoothing tops. Transfer to baking sheet and bake until cakes are golden brown and springy to touch, about 30 minutes. Transfer to rack to cool while making sauce. (Cakes can be baked ahead, removed from ramekins, and frozen, wrapped tightly in plastic wrap, up to 1 week. Allow 4 hours for cakes to thaw at room temperature. To rewarm, place on parchment-paper-lined baking sheet and bake at 350°F for 10 minutes.)
  • Make sauce:
  • Transfer chopped chocolate to small bowl.
  • In small saucepan over moderate heat, stir together cream and passion fruit juice. Bring to boil, then pour over chocolate and let stand 30 seconds. Using heat-proof silicone spatula, stir until smooth, about 30 seconds. Cover with plastic wrap and keep warm.
  • To serve:
  • Pour about 2 tablespoons sauce into center of each plate.
  • Run small, thin knife around inner edge of 1 ramekin, then invert onto palm of hand and, using other palm, smack bottom of ramekin to release cake. Transfer cake to rack and sift confectioners' sugar over, then transfer to prepared plate. Unmold remaining cakes in same manner. Serve immediately.

DARK CHOCOLATE, COCONUT & PASSION FRUIT MOUSSE CAKE

Dark chocolate, coconut & passion fruit mousse cake image

Sandwich our best ever chocolate sponge with a fruity coconut mousse and smother in a rich ganache for a stunning party centrepiece

Provided by Cassie Best

Categories     Afternoon tea, Buffet, Dessert, Treat

Time 1h30m

Number Of Ingredients 20

150ml vegetable oil , plus extra for greasing
200g plain flour
8 tbsp cocoa powder
2 tsp baking powder
1 tsp bicarbonate of soda
280g light brown soft sugar
200ml buttermilk
100ml strong coffee or espresso
2 tsp vanilla extract
2 large eggs
4 tbsp coconut rum liqueur (I used Malibu)
toasted coconut shavings , to serve (optional)
6 gelatine leaves
6 ripe passion fruits (the skin should be crinkled when ripe)
160g can coconut cream
85g golden caster sugar
2 tbsp coconut rum liqueur
300ml pot double cream
200g dark chocolate , around 70% cocoa solids, finely chopped
300ml pot double cream

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease and line two 20cm cake tins with baking parchment - if your cake tins are quite shallow, line the sides to a depth of at least 5cm. Put the flour, cocoa powder, baking powder, bicarbonate of soda, sugar and 1 tsp salt in a bowl and mix well. If there are any lumps in the sugar, squeeze these through your fingers to break them up.
  • Measure the buttermilk, coffee, oil and vanilla in a jug. Add the egg and whisk until smooth. Pour the wet ingredients into the dry and whisk until well combined. Pour the cake mixture evenly into the two tins, and bake for 25-30 mins until risen and a skewer inserted into the centre comes out clean. Cool in the tins for 10 mins, then turn out onto a wire rack, peel off the baking parchment and leave to cool. These sponges can be made up to three days ahead and will stay moist if wrapped in cling film, or you can wrap well and freeze for up to two months.
  • To make the mousse, put the gelatine leaves in a bowl of cold water, one at a time, so they don't stick together. Set aside for 5 mins to soften. Scoop the pulp and seeds from the passion fruit into a sieve suspended over a bowl, and push through the juice - you should have about 100ml. Put 1 tbsp of the seeds in a small bowl and set aside. Save 2 small empty passion fruit halves and discard the rest.
  • Pour the coconut cream, passion fruit juice and sugar into a saucepan and bring to a gentle simmer. Remove from the heat and stir in the coconut rum liqueur. Add the gelatine to the hot liquid, a leaf at a time, squeezing out the water before you add them. Stir until the gelatine has dissolved. Fill each reserved passion fruit half with some of the mixture, place in a small dish and chill until needed. Leave the remaining mixture to cool to room temperature. Pour the double cream into a large bowl and whip until it's holding its shape. Add half the passion fruit mixture, fold together, then add the remaining mixture and fold through again.
  • Line a deep 20cm cake tin with a double layer of cling film. Slice each sponge in half through the middle and drizzle each layer with 1 tbsp coconut rum liqueur. Place one of the layers into the tin, flat-side down, and spread with a third of the passion fruit mousse - don't worry if a little trickles down the sides. Layer the remaining sponges and mousse on top, finishing with a layer of cake. Cover the top of the cake with cling film and chill for at least 4 hrs, or preferably overnight.
  • When the cake has chilled and the mousse is set, turn out onto a cake stand, so the base now becomes the top, and remove the cling film. Using a palette knife, scrape any passion fruit mousse off the edges of the cake, to give it a smooth surface. Place the cake back in the fridge while you prepare the ganache.
  • Put the chocolate and cream in a pan and gently heat, stirring now and then, to make a runny chocolate sauce. Leave to firm up at room temperature until it reaches a spreadable consistency.
  • Remove the cake from the fridge. Spread the ganache over the top and sides of the cake with a palette knife until completely covered. Decorate with a ring of toasted coconut shavings, if you like. Remove the filled passion fruit shells from the fridge and place these on top too, topped with the reserved passion fruit seeds. Chill until ready to serve, but bring out of the fridge 1 hr before slicing (don't forget to serve the passion fruit jellies to your favourite guests too). Leftovers will keep in the fridge for 2 days.

DOUBLE CHOCOLATE & PASSION FRUIT TART

Double chocolate & passion fruit tart image

Pair the sharpness of passion fruit with the sweetness of white chocolate in this delightful tart from Tom Kerridge served in a dark chocolate pastry casing

Provided by Tom Kerridge

Categories     Dessert

Time 1h20m

Number Of Ingredients 13

175g plain flour, plus a little extra for dusting
80g icing sugar
40g 70% cocoa powder, the best quality you can find
140g butter, chilled and cut into small cubes
2 medium egg yolks, lightly beaten
185ml whole milk
185ml double cream
60g white caster sugar
4 egg yolks
300g white chocolate
6 passion fruit
75ml caster sugar
100ml orange juice

Steps:

  • To make the pastry, sift the flour, icing sugar and cocoa powder into a small food processor. Add the butter and blitz together until it is the texture of breadcrumbs. Add the egg yolks and mix together gently with your fingers until it forms a soft paste. You may need to add a little water, 1 tbsp at a time. Wrap in cling film and place in the fridge to rest for at least 1 hr.
  • Heat the oven to 190C/170C fan/gas 5. Roll out the pastry on a lightly floured surface to the thickness of a pound coin. Use the pastry to line a 20cm round tart tin with a slight overhang. Prick the pastry with a fork and chill in the fridge for 1 hr. Line the inside of the pastry case with baking parchment and fill with baking beans, uncooked rice or dried pulses to keep the base flat. Place the tart tin on a baking sheet and bake for 25 mins. Remove from the oven, take out the parchment and beans and return to the oven to cook for a further 10-20 mins until the pastry case is cooked through and dried out. Remove from the oven and leave to cool. Trim off the excess pastry with a serrated knife.
  • To make the custard filling, pour the milk, cream and sugar into a saucepan and bring to the boil. Remove from the heat and put the egg yolks in a bowl. While whisking the yolks, pour in the cream mix, until fully incorporated. Pour the custard back into the saucepan and heat to 85C (use a digital probe to check the temperature), or until it's thick enough to coat the back of a spoon. Tip the white chocolate into a large bowl and pour over the hot custard, stirring to make a rich chocolate custard. Leave to cool, then ladle the custard evenly into the pastry case and chill for at least 2 hrs, or overnight if possible.
  • For the passion fruit syrup, cut the fruit in half, scrape out the seeded flesh into a saucepan and add the caster sugar and orange juice. Put the pan on a medium heat, bring to the boil and simmer for 25 mins until thickened and syrupy. Remove from the heat and leave to cool. Can be made several days ahead. Pour the chilled passion fruit syrup over the chilled tart just before slicing.

CHOCOLATE LAYER CAKE WITH PASSION FRUIT ICING

Chocolate layer cake with passion fruit icing image

Great British Bake Off winner Jo Wheatley shares her never-fail sponge recipe in this layered cake with a zingy butter icing

Provided by Jo Wheatley

Categories     Dessert

Time 1h35m

Number Of Ingredients 13

175g unsalted butter, softened, plus extra for greasing
300g golden caster sugar
3 large eggs, beaten
75g self-raising flour
200g plain flour
1 tsp bicarbonate of soda
75g cocoa
200ml soured cream, at room temperature
50g full-fat cream cheese, at room temperature
250g unsalted butter, softened
500g icing sugar
150g full-fat cream cheese
3 very ripe passion fruits

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease and line the base of a 20cm springform cake tin with baking parchment. Beat the butter and caster sugar together until pale, light and fluffy - this is easiest using a freestanding machine or an electric hand-held mixer. Gradually add the egg, a little at a time, beating well between each addition.
  • Sift both flours, the bicarbonate of soda and the cocoa into a bowl. Add half the sifted dry ingredients to the egg mixture and fold in using a large metal spoon. In another bowl, mix the soured cream and cream cheese together until smooth. Add half to the cake batter and fold in. Repeat this process with the remaining flour and soured cream, and mix until smooth. Pour into the cake tin. Bake on the middle shelf for 1 hr or until a skewer inserted into the middle of the cake comes out clean. Leave the cake to cool in the tin for 10 mins before turning out onto a wire rack and removing the baking parchment.
  • Meanwhile, make the icing. Using an electric mixer, beat the butter until pale and softly whipped. Add the icing sugar and whisk until smooth, then add the cream cheese and whisk again. Sieve the juice from the passion fruits, reserving the pulp and seeds. Add the juice to the icing.
  • To assemble, split the cake into 3 even layers and place the bottom layer on a cake stand or plate. Spread one-third of the icing over the bottom layer, swirling out to the edges. Repeat with the remaining 2 layers of cake and icing, finishing with a layer of icing. Top with the passion fruit pulp and seeds. Serve straight away. Will keep for 3 days, chilled - but bring back to room temperature before serving.

ULTIMATE WHITE CHOCOLATE PASSIONFRUIT MUDCAKE

Ultimate White Chocolate Passionfruit Mudcake image

This mudcake is absolutely divine - a gooey and decadent dessert which has been served many times and always to rave reviews - and often a request for the recipe! The passion fruit adds a different dimension to the cake which enhances the flavour without taking away from the white chocolate taste. I hope you enjoy it as much as I do!

Provided by Kristie.NZ

Categories     Dessert

Time 2h

Yield 12 serving(s)

Number Of Ingredients 12

250 g butter, chopped
250 g white chocolate
150 ml water
1 cup caster sugar (if using fresh passionfruit, use 1 1/4 cups sugar)
50 ml tasti passion fruit in syrup (or 50ml fresh passionfruit)
1 3/4 cups plain flour
1 cup self raising flour
2 eggs, lightly beaten
1/2 cup sweetened condensed milk
100 ml full fat cream
250 g white chocolate
130 ml 'tasti' passion fruit in sweetened syrup. fresh can also be used here however if it ends up too tart icing sugar

Steps:

  • Cake:.
  • Preheat oven to 150 °.
  • Place first four ingredients in a saucepan over a low heat and stir until all ingredients are melted and combined. Take off heat and leave to cool for 10 minutes.
  • Sift both flours together and add to cooled chocolate mixture, beat gently.
  • Stir in eggs, sweetened condensed milk and passonfruit syrup.
  • Pour the mixture into a deep round dish (20-22cm is ideal) and cook for 1 hourish - cooking times can vary greatly between ovens so keep checking with a toothpick.
  • Leave to cool completely before turning out.
  • Poke holes in cake with a skewer/toothpick and pour over 50ml of passionfruit through a sieve, leave to sit for an hour or so.
  • Ice with ganache (see below).
  • Ganache:.
  • Using a double boiler system (a glass bowl sitting in a pot with 2 inches or so of water on a low heat works just as well) pour cream into the bowl and heat on a low temperature for 5 minutes.
  • While waiting for cream to heat, grate chocolate as this speeds up the melting process once in the cream.
  • Once cream is heated add grated chocolate and stir until melted and slightly thickened.
  • Take off heat - add passionfruit/syrup. Leave to cool for 15 mins (at least) before putting on cake. I find that once it fully cools it goes thick very quickly so it is best to work quickly once you see this happening. To speed up the process you could put it in the fridge but I find this sometimes takes the glossy look away from the ganache.
  • Enjoy!
