PUMPKIN-CHOCOLATE CHUNK COOKIES

Steps:
- Heat oven to 375°F.
- Mix flour, baking soda and salt. Beat butter, sugars and pumpkin spice in large bowl with mixer until light and fluffy. Add egg, pumpkin and vanilla; mix well. Gradually beat in flour mixture until well blended. Stir in chocolate and nuts.
- Drop by heaping tablespoonfuls, 2 inches apart, onto baking sheets.
- Bake 12 to 13 min. or until lightly browned. Cool on baking sheets 1 min.; remove to wire racks. Cool completely.

CHOCOLATE MUNCHKIN SNOWBALLS
Done Just like the Chocolate Munchkin Pumpkins but with white chocolate to look like snowballs!! Great for the winter season parties. This recipe came out of a Womans World magazine several years ago. I read it and never copied it down because it's so simple therefore Im not sure how much chocolate really covers the a dozen Munchkins. Use a toothpick in the Munchkin for easier dipping in the chocolate.

- Dip one Munchkin at a time into chocolate, cover all of the Munchkin.
- Place on wax paper or foil,pull out toothpick if used.

GLAZED CHOCOLATE MUNCHKINS (DONUT HOLES)
Easily made at home from scratch, these Copycat Glazed Chocolate Munchkins are the perfect snackable little donut hole!

- In a double boiler, melt butter and baker's chocolate. Remove from heat.
- In a large bowl, whisk flour, sugar, cocoa, baking powder, baking soda, and salt.
- Add buttermilk and vanilla to melted chocolate. Add whisked egg.
- Add wet ingredients to dry and mix until combined. With your hands, mix until dough is all well combined and form into a ball. Wrap in plastic and cool in fridge for 30 minutes.
- Once cooled, roll dough into 1 -2 tablespoon balls.
- Heat a deep skillet or sauce pan with 3 inches of vegetable oil until oil reaches 350 degrees (candy thermometers or digital infrared thermometer). Add 4 - 5 balls into the oil and fry until cooked (they'll looked a little puffed), approximately 2-4 minutes. With a slotted spoon, remove from oil and place on paper towel lined plate. Finish with all balls.
- Line baking sheet with parchment paper and rack.
PUMPKIN CHOCOLATE CHIP COOKIES
The secret to these cookies is baking them at a low temperature.They are dense like a scone, with a cake-like inside. Recipe from "The Market" in Denver. My teenaged son LOVES these! Tip: I flatten the cookies slightly with a greased bottom of a measuring cup, about halfway through baking, which produces a flatter cookie.

- Preheat oven to 300 degrees.
- Cream butter and sugar together until light and fluffy.
- Beat in egg, pumpkin and vanilla(mixture will look slightly curdled).
- Mix and sift flour, baking powder, baking soda, salt, and nutmeg, and cinnamon.
- Add to creamed mixture and mix well.
- Add chocolate chips and mix thoroughly.
- Using a large ice cream scoop, scoop cookies onto ungreased baking sheet (do not crowd cookie dough, since it will spread).
- Bake at 300 degrees around 22 to 24 minutes.
- Remove from oven, let sit on cookie sheet for a minute or so, then place cookies on racks to cool.
