CHOCOLATE MOCHA BREAD PUDDING
Delicious bread pudding made with any leftover stale bread or even doughnuts! Topped with a creamy glaze.

Steps:
- Preheat oven to 350 degrees.
- Break up bread or doughnuts into a 13 x 9 pan.
- Add chopped nuts and chocolate chips.
- Whisk eggs, milk, coffee, sugar, vanilla and cinnamon together.
- Pour mixture over bread and allow to soak in, while stirring.
- Place a pan filled with hot water into oven on lower rack and bread pudding on upper rack of oven. This will keep steam in oven to prevent curdling.
- Bake for 60 minutes.
- Warm cream cheese in microwave for 20 seconds.
- Mix in confectioners sugar.
- Add milk until glaze is proper consistancy to pour over warm pudding.
- Remove pudding from oven and while still warm, drizzle glaze over.
- Best eaten while warm.

- Combine sugar, cocoa, cornstarch, cinnamon and coffee in an 8 cup measure cup or bowl.
- Gradually stir in milk.
- Microwave on high 5 to 6 minutes or until it starts to boil and thicken slightly (whisk twice).
- Stir in butter and vanilla.
- Place plastic wrap on surface of pudding.
- Refrigerate at least 2 hours.
- Whisk until smooth.
- Serve in individual bowls or wine glasses.

CHOCOLATE ALMOND MOCHA DUMP CAKE
I recently started making dump cakes even though they've been around for years. They are so easy! If you don't like coffee, add an extra 1/2 cup milk.

- Heat oven to 350ºF. Spray 9x13 pan with baking spray.
- Pour pudding mix, milk and coffee into prepared pan. Stir together for a couple minutes until pudding is thick.
- Add cake mix and stir until moistened. Spread out batter evenly and sprinkle with chocolate chips and almonds.
- Cover with thin slices of butter as evenly as possible.
- Bake for 35-40 minutes, until edges of cake start to pull away from pan. Serve warm with ice cream or whipped topping.

- Measure the milk in a large jug, then blend with the prunes and coffee in a food processor until smooth. Add the butter, sugar, egg, almonds, cocoa, flour and a pinch of salt, then blitz again to make a thick batter.
- Scrape evenly and cleanly (don't take the mixture up the sides) into 4 x 175ml ramekins (don't use any with metal on them!). Cook in the microwave, spaced round the edge of the turntable, on Medium for 6 mins. The puddings will still look a bit moist, but that's fine. Stand for 5 mins, then serve topped with a scoop of ice cream and a little liqueur, if you like.

- Preheat oven to 325 degrees. Lightly grease a 9-inch cake pan and set aside.
- For the batter: In a large bowl, sift together the flour, baking powder, salt, sugar and cocoa powder. Add the walnuts. Set aside.
- In a medium saucepan over medium heat, combine the milk, butter and chopped chocolate, stirring until the butter and chocolate have just melted.
