MALTED CHOCOLATE PANNA COTTA PIE
Learn to make a luscious meringue pie loaded with chocolate flavor. - Preheat the oven to 350 degrees F. Place a shallow pie plate on a baking sheet.
- For the chocolate crumb crust: Stir the cookie crumbs, sugar and salt together in a medium bowl until combined. Stir in the melted butter; the crust should easily hold together in clumps when you press it between your fingers.
- Press the crust evenly into the base of the pie plate. When you've made an even layer in the bottom of the pan, begin to press it up the sides; use the bottom of a small dry measuring cup to help press it in evenly.
- Bake until the crust smells toasty and appears set, 15 to 17 minutes. Cool completely.
- For the malted chocolate filling: Place the water in a small bowl and sprinkle the gelatin over the surface. Let sit while you make the rest of the filling.
- In a medium saucepan, heat the milk over medium heat. In a small bowl, whisk the sugar, malted milk powder, cocoa powder and salt, then sprinkle it into the pan. Cook, stirring constantly, until the sugar is dissolved. Stir in the chocolate and cook over medium-low heat until the chocolate is fully melted.
- Add the bloomed gelatin to the pan and stir until melted. Stir in the heavy cream and vanilla, then gently pour the mixture into the cooled crust. Refrigerate until the panna cotta is firm and set, at least 2 hours.
- Top the set filling with malted milk balls and serve.

- Position rack in center of oven and preheat oven to 350°F In a bowl, combine crumbs and butter. Press firmly onto bottom and up sides of 9" pie pan. Place crumb lined pan on a baking sheet and bake for 6-8 minutes, until set.
- Make Pie filling:.
- In a medium-sized, heatproof bowl, whish egg yolks until blended and set aside. In a medium sauce pan, bring cream to a gentle boil over medium low heat. Remove from heat and stir in chopped chocolate, stirring until chocolate is completely melted and mixed inches Whisk chocolate mixture in a thin stream into egg yolks. When chocolate is thoroughly incorporated, return mixture to saucepan over medium-low heat. Stir mixture constantly with a wooden spoon until thickened to a smooth, pudding-like consistency (about 5-10 minutes). Do not allow mixture to boil. Remove pudding mixture from heat and sift in malt powder, whisking until thoroughly dissolved. Stir in vanilla extract. Strain pudding mixture in to a clean, dry heat-proof bowl and allow cooling for 10 minutes. Whisk mixture to combine any skin that might have formed on top of the pudding during cooling. Fill pie shell and refrigerate for 3 hours or up to 1 day before serving.

- Preheat the oven to 350°F.
- Combine the graham cracker crumbs and sugar in a medium bowl. Sprinkle the melted butter over the crumbs and toss to combine. Pour the crumbs into a 9" pie plate. Press the crumbs onto the bottom and sides of the pan. Bake until golden brown, about 10-15 minutes.
- Take the pan out of the oven. While it's still warm, press down any puffy spots and press to close any gaps in the crust. Cool to room temperature.
- In a large bowl whisk the egg and yolks with the cornstarch. Keep the bowl near the stove and have a mesh sieve next to the bowl
- In a saucepan whisk together the milk and the malted milk powder until all of the lumps are dissolved. Add the sugar. Cook over medium heat until scalding (just before a full boil). Take the pan off the heat.
- Whisk the scalding milk into the egg mixture then pour the mixture back into the pan. Set the sieve over the bowl from the eggs. Return the pan to low heat and cook the custard, stirring constantly, until the mixture thickens and just begins to boil. Just a bubble or two is all you need to see.
- Immediately strain the pastry cream into the bowl. Add the vanilla and butter to the hot custard. Whisk until the butter is melted.
- Pour the warm pastry cream into the pie shell. Cool for 10 minutes, then cover the custard with a piece of waxed paper or buttered parchment (this prevents a skin from forming). Refrigerate for at least 2-3 hours until the filling is completely chilled and set.
- Make the topping: Whisk the malted milk powder into the cream until there are no lumps of milk powder. Add the powdered sugar and whip to full peak.
- Spread the cream over the custard filling. If desired, decorate the top of the pie with white or dark chocolate shavings. Serve immediately or chill until serving.

- In a food processor, finely chop the oreo cookies.add melted butter to cookie crubs.
- and continue processing until well blended.

- 1. Mix flour, sugar, salt, malted milk and cocoa together in sauce pan. Add Milk, cream, butter, and slightly whipped egg yolks to mixture in pan. Cook over medium heat, stirring with a whip tool. When mixture comes to a boil, drop in the 1/2 chocolate bar. Continue to cook for 2 more minutes. Remove from heat and add vanilla.
- 2. Line the baked pie crust bottom with largely chopped walnut pieces. Slowly pour pie filling over the walnuts into the pie shell. Cool and refrigerate for 4 hours.
- 3. Before serving, top pie with cool whip and drizzle with the chocolate sauce. For variation you can use shaved chocolate instead of the chocolate sauce on top of pie. Enjoy!

Refrigerate the crust for about 30 minutes to allow it to set. Prick all over the bottom and sides with a fork about 15 to 20 times. Line the crust with a piece of parchment paper and fill it with pie weights or dry beans. Place the pie on the preheated baking sheet and bake for 20 minutes, until the crimped edges are set but not browned.

- Add Oreo cookies (cream and all) to a food processor and blend until they resemble fine crumbs. Melt butter in the microwave and then pour over crushed Oreos and whiz again until the mixture resembles wet sand.

Drop the batter by heaping TBSP onto greased or silicon lined cookie sheets. 6-8 per sheet. Bake for 10 minutes. Remove to wire racks to cool. When cool, spread filling between two cookies to make whoopie pies.
- In a small bowl, dissolve the malted milk powder in the boiling water. In a medium saucepan over medium heat, stir together the milk, cream, and malted milk mixture. Whisk vigorously for about 1 minute to release excess heat and set aside to cool to nearly room temperature. If mixture is warm, chill in refrigerator for 15 minutes, then beat until stiff peaks form. Fill cookie halves with 1-2 TBSP of the filling, top with other cookie. Makes about 12 filled cookies.
