HOW TO MAKE AN OLD-FASHIONED CHOCOLATE SODA
To create a perfect Old-fashioned Chocolate Ice Cream Soda, it takes only three ingredients - ice cream, club soda, and chocolate syrup - and a little finesse!

- Drop one scoop of vanilla ice cream into the bottom of a tall soda-style glass (16 to 20 ounces) glass. Pour 2-3 tablespoons of chocolate syrup on top.
- Use a long-handled spoon to mash and mix the ice cream and chocolate syrup together, until they have become a sort of chocolate ice cream slurry.
- Now comes the tricky part: Using the soda spoon, slowly stir the ice cream-chocolate mixture with one hand, while at the same time very slowly pouring the club soda into the glass with your other hand. Continue adding club soda until the glass is about three-fourths full. (Don't fill it all the way or it will overflow.) Taste the soda to make sure it's chocolaty enough for you. (If not, just stir in a little additional chocolate syrup.)
- Finish it all off by adding a scoop of ice cream to the soda glass, and then mount a second scoop to the rim, sidecar style.Top it off with one last splash of club soda, pop in a straw and enjoy!

OLD TIMEY CHOCOLATE SODA

- In four 16-ounce glasses, squirt 1 tablespoon of the chocolate syrup in the bottom of the glasses. Scoop out 2 scoops of ice cream in each and top with another tablespoon of the chocolate syrup. Fill each glass with club soda, and top with whipped cream and a cherry.
ICE CREAM SODAS
Steps:
- Pour 3 tablespoons of Raspberry or Chocolate Syrup or 1 teaspoon vanilla plus 3 tablespoons heavy cream in a tall ice cream soda glass. Whisk with a fork, then slowly, while still whisking, add the club soda until the glass is three-quarters full. Add 2 scoops of ice cream, add soda to the top of the glass, and serve with a spoon and a straw.
- Combine the cocoa, salt, sugar and 1 cup of water in a medium saucepan and bring to a boil. Add the coffee granules, and simmer for 5 minutes. Pour the syrup into a bowl and add the vanilla. Cover and refrigerate until ready to use.
- Combine the raspberries, sugar, and lemon in a container. Cover and refrigerate for at least 2 hours, or overnight. Strain the syrup into a pitcher, pushing down on the berries to extract all the liquid.

CLASSIC CHOCOLATE ICE CREAM SANDWICH
This very simple ice cream sandwich is exactly like the ones you remember from childhood. It tastes just like the ones purchased from the ice cream truck with a soft, sticky, chewy cookie around soft, plain vanilla ice cream.

- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone liner (such as Silpat®). Spray liner with cooking spray and rub it in to be sure it's completely covered.
- Whisk 1/2 cup plus 1 tablespoon flour, salt, baking soda, and cocoa together in a bowl until thoroughly combined. Sift mixture if it seems at all clumpy or chunky.
- Mix butter, both sugars, and vanilla in another bowl with a spatula until you have a smooth paste. Add flour mixture along with milk and stir until batter is smooth and stiff. Clean off the spatula with a cookie scoop and drop 12 scoops batter onto the prepared baking sheet.
- Bake in the center of the preheated oven until the tops of the cookies no longer look wet and shiny, 9 to 10 minutes. Remove from the oven and tap and shake the pan on the counter 5 times to settle and compress the cookies. Let cookies cool to room temperature on the pan, about 15 minutes.
- Transfer baking sheet into the freezer until cookies are firm, about 15 minutes.
- Remove from the freezer and remove cookies from the pan by lifting the silicone liner carefully under each one. Poke 10 or 12 holes in the surface of each cookie with the sharp edge of a chopstick. Return to the freezer until ready to assemble.
- When ready to assemble, remove from the freezer. Turn one cookie upside down, place 1 scoop ice cream on top, and sandwich with a second cookie. Serve immediately or wrap in plastic wrap and freeze for 3 hours before serving. Repeat to make remaining ice cream sandwiches.

ICED CHOCOLATE SODA
