Hazelnuts are toasted and then blended with chocolate chips to make a spread that rivals the popular brand. Serve with French bread or it's even good on crackers.

- Preheat oven to 350 degrees F (175 degrees C).
- Line a baking sheet with aluminum foil. Spread hazelnuts on the sheet in an even layer. Bake until skins have split and nuts are fragrant, 10 to 15 minutes; rub with a damp towel and blow the skins away. If they cooled off when you removed the skins, go ahead and warm them in the oven again. This will help them to release more oil.
- Combine the nuts and chocolate chips in the bowl of a food processor. Add the honey and process into a smooth paste, adding more oil if needed. Spoon into a container and store at room temperature.

CHOCOLATE-HAZELNUT GELATO

- In a saucepan combine the milk, cream, and 1/2 cup sugar over medium heat. Cook until the sugar dissolves, about 5 minutes.
- Meanwhile, in a medium bowl whip the egg yolks with the remaining sugar using an electric mixer until the eggs have become thick and pale yellow, about 4 minutes. Pour 1/2 cup of the warm milk and cream mixture into the egg mixture and stir. Add this mixture back into the saucepan. Cook over very low heat, stirring constantly, until the mixture becomes thick enough to coat the back of a wooden spoon, about 7 to 10 minutes.
- Place a strainer over a medium bowl and pour the warm custard mixture through the strainer. Stir in the vanilla and hazelnut spread until it dissolves. Chill mixture completely before pouring into an ice cream maker and follow manufacturer's instructions to freeze. To serve, scoop gelato into serving bowls and top with hazelnuts.
HOT HAZELNUT CHOCOLATE-TOFFEE LATTE

- Put the hot coffee and some Chocolate-Toffee Syrup in a large mug and mix until combined. Stir in the hot milk, top with some whipped cream and drizzle with more syrup, if desired.
- Cook the sugar in a medium, heavy saucepan over medium heat, undisturbed, until it begins to melt, then continue to cook, stirring slowly with a fork, until melted and pale golden. Continue to cook, swirling the pan, until the sugar is a deep golden caramel.
- Remove from the heat and carefully add the warm cream down side of pan (the mixture will bubble and steam vigorously), return the caramel to the heat, add the chocolate and salt and stir until smooth. Remove the mixture from the heat and stir in the vanilla.
- Yield: about 1 1/2 cups
COLD HAZELNUT CHOCOLATE-TOFFEE LATTE

- Combine the coffee ice cubes, half-and-half and 1/4 cup Chocolate-Toffee Syrup in a blender and blend until smooth. Pour into 2 glasses, top with whipped cream and drizzle with more of the syrup.

- Preheat the oven to 350°F. Line a springform pan with parchment paper. Brush the bottom and sides of the pan all the way to the top.
- Separate 6 large eggs into two bowls. Using a handheld mixer, whip the egg whites until they are frothy, about 2 minutes. Once the egg whites are frothy, turn the mixer up to a medium speed and gradually begin adding in the sugar in a slow, steady stream. Continue to whip until stiff peaks form.
- In a large bowl, stir together the Nutella, oil, amaretto, water, egg yolks, and salt. Sift and mix in the espresso powder. Once fully combined, add about a third of the whipped egg whites. Gently fold the meringue into the cake batter with a rubber spatula until most of the streaks are gone. Continue to fold a third of the egg whites at a time until fully combined.
- Gently pour the cake batter mixture into the springform pan. Smooth out the surface. Pop the cake into the oven and bake for about 30-33 minutes. The cake will rise several inches and the top will be crispy. Stick a toothpick into the center and look for it to come out clean to know when it's done.
