CHOCOLATE AND BUTTERSCOTCH FROZEN BANANAS

10 bananas, peeled, halved crosswise
2 cups chopped semisweet chocolate or chocolate chips
2 cups Butterscotch, homemade or store-bought, recipe follows
Candied Nuts, recipe follows, optional
Sprinkles, optional
8 tablespoons (1 stick) unsalted butter
1 1/2 cups packed light brown sugar
Pinch kosher salt
1/2 cup heavy cream
1 large egg white
1/2 cup packed light brown sugar
1 teaspoon kosher salt
1 cup peanuts
1 cup pecan halves
1 cup walnut halves

Steps:

  • Insert ice-pop sticks into the cut end of the bananas, halfway up. Place on a baking sheet and freeze until firm, at least 4 hours.
  • Melt the chocolate in a double boiler, about 5 minutes.
  • Line a large baking sheet with wax paper and set aside. Dip the frozen bananas in the butterscotch and then sprinkle with candied nuts or sprinkles. Place on the prepared baking sheet and drizzle with melted chocolate. Place back in the freezer for at least 30 minutes to set.
  • Melt the butter in a medium saucepan over medium heat. Whisk in the brown sugar and salt. Cook, whisking continuously, until the sugar dissolves and caramelizes, about 5 minutes. Remove from the heat, carefully pour in the heavy cream, and then return to heat. Continue to cook until the mixture is smooth. Remove from the heat and let cool completely.
  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
  • In a medium bowl, whisk the egg white until frothy. Fold in the brown sugar and salt, and then the peanuts, pecans and walnuts. Spread in a single layer on the prepared baking sheet. Bake until toasted and the sugar has melted, about 10 minutes. Let cool to room temperature, then roughly chop.

2 ripe but firm bananas
6 ounces dark chocolate, chopped, or semisweet chocolate chips
2 tablespoons vegetable oil
1/2 cup granola, chopped pecans and walnuts, or sprinkles (optional)

Steps:

  • 1. Line a baking sheet with nonstick foil or parchment paper.
  • 2. Cut the bananas in half and insert a Popsicle stick into each half, as shown. Place them on the baking sheet and freeze for 15 minutes.
  • 3. Meanwhile, melt the chocolate with the oil in a Pyrex measuring cup in the microwave (check it every 30 seconds) or in a half-full pan of simmering water (about 2 minutes). Stir until smooth.
  • 4. Roll each banana half in the chocolate, then quickly sprinkle with your topping (if using).
  • 5. Freeze until the chocolate sets, 30 minutes. Serve or freeze in an airtight container for up to a week.

4 bananas, peeled and halved horizontally
⅓ cup peanut butter
1 (8 ounce) package semisweet baking chocolate, chopped
½ cup roasted peanuts, chopped
8 ice pop sticks

Steps:

  • Insert 1 ice pop stick into the cut end of each banana half. Place the bananas on a wax paper-covered baking sheet, and freeze until the bananas are frozen through, about 2 hours.
  • Remove the frozen bananas from the freezer and spread a layer of peanut butter on each banana. Place the peanut butter-covered bananas back in the freezer for 30 to 45 minutes.
  • Melt the chocolate in the top of a double boiler over just-barely simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
  • Dip each frozen banana in the melted chocolate, spooning the chocolate over the banana to cover it completely. Roll the dipped bananas in the chopped peanuts and place on the wax paper covered baking sheet; freeze until the chocolate is firm, about 1 to 2 hours.

And speaking of toppings...A few of my favorites include: sprinkles, chopped nuts, toasted coconut, toffee chips, crushed candies ...but don't stop there! A drizzle of melted peanut butter or chopped bacon would be welcome complements to this frozen treat.

Steps:

  • Line a baking sheet with wax paper.
  • Peel the bananas and then slice them in half widthwise. Carefully insert an ice-pop stick into the bottom of each banana, then place on the prepared baking sheet. Freeze the bananas for 1 hour.

  • Cut off a inch off the bottom of each unpeeled banana, and gently insert a popsicle stick into each one. Then unpeel bananas. Place banana's onto a baking sheet and freeze until frozen.

8 wooden popsicle sticks
32 ounces semisweet chocolate, chopped or chips
4 tablespoons unsalted butter

Steps:

  • Dipping decorations: granola, chopped nuts, sprinkles, jimmies, crushed cookies, and toasted coconut
  • Line a sheet pan with waxed paper. Cut 1-inch off the end of each banana. Insert a popsicle stick into the cut-end of each banana, pushing the stick halfway in, leaving the other end exposed for use as a handle. Place the bananas on the sheet pan and freeze 1 hour.

2 chocolate candy bars (I prefer Lindt, Godiva, etc.)
nuts (optional)
coconut (optional)

Steps:

  • Unpeel bananas, slice in half, insert wooden skewers, and press halves back together.
  • Wrap tightly with plastic wrap and place in freezer until firm, about 3 hours.
