1 lb fresh strawberry
1 cup white chocolate
1 cup milk chocolate, or dark
2 tablespoons coconut oil
1 ½ cups crushed peanut
1 ½ cups chocolate cookie crumb

Steps:

  • To make Striped Strawberries, melt 1 tablespoon of coconut oil with chocolate chips, repeat with the white chocolate chips.
  • Insert toothpick into the top of a strawberry.
  • Coat strawberry entirely in chocolate, alternating between white and dark.
  • Chill strawberries for about 15 minutes or until hardened.
  • For white chocolate strawberries drizzle dark chocolate over the top in a quick back and forth motion. For dark chocolate strawberries, do the same with white chocolate drizzle.
  • Chill once more for 15 minutes or until hardened.
  • To make Peanut Strawberries. Melt 1 tablespoon of coconut oil with the chocolate chips, repeat with the white chocolate chips. Insert toothpick into the top of a strawberry. Put peanuts in a bag and smash with rolling pin or cast-iron pan until they are crumbly.
  • Coat strawberry entirely in chocolate, alternating between white and dark.
  • Dip strawberry, while the chocolate is still warm, into a bowl of nuts.
  • Chill once more for 15 minutes or until hardened.
  • To make Cookie-Coated Strawberries. Melt 1 tablespoon of coconut oil with the chocolate chips, repeat with the white chocolate chips. Insert toothpick into the top of a strawberry. Separate chocolate sandwich cookies in a bag and smash with rolling pin or cast iron pan until they are crumbly.
  • Coat strawberry entirely in chocolate, alternating between white and dark.
  • Dip strawberry, while the chocolate is still warm, into a bowl of cookie crumbs.
  • Chill once more for 15 minutes or until hardened.
  • To make Tuxedo Strawberries. Melt 1 tablespoon of coconut oil with the chocolate chips, repeat with the white chocolate chips. Insert toothpick into the top of a strawberry.
  • Coat strawberries entirely in white chocolate.
  • Chill strawberries for about 15 minutes or until hardened.
  • To form the tuxedo, dip one side of the white chocolate coated strawberry into dark chocolate at an angle, going to the top of white chocolate coating. Repeat on the other side, leaving a white "V" in the center of the strawberry.
  • With a toothpick, draw a bowtie and buttons with remaining melted dark chocolate.
  • Chill once more for 15 minutes or until hardened.
  • Enjoy!

6 ounces semisweet chocolate, chopped
3 ounces white chocolate, chopped
1 pound strawberries with stems (about 20), washed and dried very well

Steps:

  • Put the semisweet and white chocolates into 2 separate heatproof medium bowls. Fill 2 medium saucepans with a couple inches of water and bring to a simmer over medium heat. Turn off the heat; set the bowls of chocolate over the water to melt. Stir until smooth. (Alternatively, melt the chocolates in a microwave at half power, for 1 minute, stir and then heat for another minute or until melted.)
  • Once the chocolates are melted and smooth, remove from the heat. Line a sheet pan with parchment or waxed paper. Holding the strawberry by the stem, dip the fruit into the dark chocolate, lift and twist slightly, letting any excess chocolate fall back into the bowl. Set strawberries on the parchment paper. Repeat with the rest of the strawberries. Dip a fork in the white chocolate and drizzle the white chocolate over the dipped strawberries.
  • Set the strawberries aside until the chocolate sets, about 30 minutes.

Rice Krispies
coconut, shredded

  • Melt the dark chocolate in a bowl set over a small pot of simmering water. In a separate bowl, melt the white chocolate.

My son asked me to make some of these to take on a picnic to impress his girlfriend. I found this recipe on the Nestle site and it was so quick and easy, that this is the only recipe I use now. I have found any good chocolate can be used but the Melts or chips are easier to melt, you can use either dark, white or milk chocolate depending on you taste. I also dip some of the strawberries in chopped nuts or sprinkles after dipping in chocolate for a great effect. Preparation time includes setting of the Strawberries.

12 strawberries, with stalks on
1 1/2 cups chocolate chips

Steps:

  • Cover an oven tray with foil or baking paper.
  • Wash the strawberries and dry them thoroughly on paper towels.
  • Melt the Melts according to instructions on the packet, or if using chocolate melt in double boiler or in the micriwave on low.
  • Holding the strawberries by the stalk, dip them into the Melts. Place on the tray.
  • Leave to set.
  • Serve immediately, or refrigerate and use within 4 hours.
  • NOTES~ It is important that the surface of the strawberries are not wet from washing, as this will prevent the chocolate sticking to the fruit. The strawberries must be at room temperature for dipping as the chocolate sets more evenly and doesnt lift from the strawberry. 1 pint strawberry
1 (12 ounce) bag chocolate chips
8 ounces cream cheese
1 tablespoon powdered sugar
1 tablespoon milk
sliced almonds (optional)

Steps:

  • Wash the strawberries. Then, slice the bottom point off the strawberry, so that it can stand up straight. Next, pluck the stem off. Using a paring knife or strawberry huller, scoop out the top to make room for the cheesecake.
  • This is the most important step...dry off the strawberries individually with paper towels. If the strawberries are wet, the chocolate will not stick.
  • Melt the chocolate in a double broiler or microwave. (Note: if using a microwave, only melt it in 20-second increments to make sure it doesn't burn). I use Ghirardelli 60% Cacao Bittersweet Chocolate Chips.
  • Line a cookie sheet (that will fit in your freezer) with waxed paper or a Silpat. Dip the bottom half of each strawberry into the melted chocolate and place on the lined pan. Once the pan is full, place it in the freezer for about 5 minutes or until the chocolate has hardened.
  • While the chocolate is cooling, make the cheesecake filling. In a small bowl, beat together the cream cheese, powdered sugar and milk, until smooth. If it seems too thick, add a splash more milk.
  • Spoon the cheesecake mixture into a piping bag with a star tip. If you don't have a piping bag, scoop it into a large Ziploc bag and snip off the corner. Remove the strawberries from the freezer and pipe in the cheesecake filling. Top with a slivered almond and serve or refrigerate until ready to serve.

2 lbs strawberries
8 ounces cream cheese
1 (8 ounce) package chocolate, candy melts (I use "Dolci frutta" which is found in the produce dept)
1/2 cup confectioners' sugar
1/4 cup chocolate syrup (I use hershey's)

Steps:

  • wash and thoroughly dry the strawberries.
  • using a small melon baller (or a paring knife) scoop out the top of the strawberry removing stem and some of the center.
  • melt chocolate in microwave at medium heat. use small intervals like 30 - 45 seconds. mix between each interval, do not overheat.
  • Dip strawberries in chocolate and place on wax paper to dry.
  • While they are drying mix the cream cheese, sugar and syrup using an electric mixer.
  • you can either scoop the filling into the strawberries with the melon baller or pipe it in using a pastry bag for a nicer presentation.

24 -30 strawberries, green caps in tact
6 ounces chocolate, coarsely chopped (your favorite chocolate or what is on hand, can use sweet, semisweet, bittersweet or white)

  • Rinse strawberries, drying them with paper towels.
  • Melt chocolate in top of double boiler or in microwave (full power in 30 second intervals, until chocolate is melted, stirring often).
  • Note 1: CHOCOLATE SHOULD NOT BE TOO HOT - IF IT GETS TOO HOT IT WILL DRIP ON THE BERRIES INSTEAD OF ADHERING TO THE BERRIES.

100g dark chocolate , roughly chopped
400g strawberries
30g white and milk chocolate , roughy chopped (optional)

Steps:

  • Cut a strip of baking parchment and leave to one side. To melt the dark chocolate, fill a small pan with 2cm water and bring to a simmer. Put the chocolate in a heatproof bowl and rest it on top of the pan, ensuring the bowl isn't touching the water. Stir the chocolate to gradually melt it. Or, melt the chocolate in 20 second blasts in the microwave, stirring after each blast until melted. Put the melted chocolate in a small deep bowl.
  • Gently hold the strawberries by the leafy top and dip into the chocolate. Tap off any excess chocolate and put on the parchment to set. If you have any leftover chocolate, pour it onto another strip of parchment and leave it to set, it can be used again.
