These chocolate oat bars are one of my favorite go-to snacks. I love that I usually have all the items on hand and can whip them up quickly. —John Kleckner, Muscoda, Wisconsin

Number Of Ingredients 11

1 cup plus 2 tablespoons butter, softened, divided
2 cups packed brown sugar
2 large eggs, room temperature
4 teaspoons vanilla extract, divided
3 cups old-fashioned oats
2-1/2 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon salt, divided
1 can (14 ounces) sweetened condensed milk
2 cups semisweet chocolate chips
1 cup chopped pecans

Steps:

  • In a large bowl, cream 1 cup butter and brown sugar until light and fluffy, 5-7 minutes. Beat in eggs and 2 teaspoons vanilla. Combine the oats, flour, baking soda and 1/2 teaspoon salt; gradually add to creamed mixture and mix well. Set aside., In a large heavy saucepan over low heat, combine the condensed milk, chocolate chips and remaining butter and salt. Cook and stir until smooth. Add the nuts and remaining vanilla. Press 4 cups oat mixture into an ungreased 13x9-in. baking pan; spread with chocolate mixture. Sprinkle with remaining oat mixture., Bake at 350° for 30-35 minutes. Cool completely on a wire rack. Cut into bars.

1 cup chopped dates
1/2 cup water
1/4 cup sugar
1-1/2 cups quick-cooking oats
1 cup all-purpose flour
1 cup packed brown sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 cup butter, melted
1 large egg white, room temperature

Steps:

  • Preheat oven to 350°. Place dates, water and sugar in a small saucepan; bring to a boil, stirring constantly. Reduce heat; simmer, uncovered, until thickened, about 5 minutes, stirring constantly., In a large bowl, mix oats, flour, brown sugar, baking soda and salt; stir in melted butter and egg white. Press half of the mixture into an 8-in. square baking pan coated with cooking spray. Spread carefully with date mixture; top with remaining oat mixture. , Bake until lightly browned, 20-25 minutes. Cool in pan on a wire rack. Cut into bars.

1 1/2 cups unsifted flour
2/3 cup sugar
1/2 teaspoon salt
3/4 cup margarine or 3/4 cup butter, cold
2 large eggs
14 ounces condensed milk, Sweetened
1 1/2 teaspoons maple flavoring
2 cups nuts, chopped
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, combine flour, sugar and salt; cut.
  • in margarine until crumbly.
  • stir in 1 beaten egg.
  • Press evenly in a 9x13" pan.
  • Bake for 25 minutes.
  • Meanwhile, in medium bowl, beat sweetened condensed milk, remaining egg and flavoring; stir in nuts.
  • Sprinkle chocolate chips evenly over the prepared crust. Top with the nut mixture. Bake for 25 minutes more or until lightly brown.
  • Cool. Cut into bars.
  • Store tightly covered at room temperature. Makes 24-36 bars.

  • Line a 9×5 loaf pan with parchment paper, or use a silicone pan and place on baking sheet, set aside. You may also use an 8×8 square pan, your base will just be thinner.
  • In a food processor add drained/pitted dates and nuts. Process until dates and nuts have broken down, and only small pieces of nuts can be seen. Mixture should be sticky.
  • Transfer mixture to prepared pan, pressing evenly into all corners and press down flat. I like this roller.
  • Using stovetop and small saucepan over low heat, melt chocolate, stirring frequently until smooth. Pour over bars and spread evenly.

  • Preheat oven to 350 degrees F. Line a 8x8 inch pan with parchment paper so that you're able to easily remove the bars after. This is important! Grease the parchment paper with nonstick cooking spray.
  • Prepare the filling first: Add dates, hot water, espresso powder and vanilla to a high-powered blender and blend until mostly smooth, about 2 minutes. It's okay if there are a few chunky pieces of dates. Allow date mixture to cool and thicken up a bit for 5 minutes while you make the base.
  • To make the oat base and crumble: in a large bowl, combine oat flour, oats, brown sugar baking soda, cinnamon and salt. Stir in melted coconut oil until the mixture is crumbly. Measure out 1 cup of the mixture and set aside in a small bowl (this will be for the topping). Press the remaining mixture into the prepared pan; you'll need to press hard to ensure that all of the mixture will stick together well.
  • Gently spread date mixture evenly on top of the base crust. Sprinkle on chopped dark chocolate (or chocolate chips) then sprinkle the reserved oat topping over the top.
