3 cups rolled oats
1 1/4 cups sliced raw almonds
3/4 cup unsweetened coconut flakes
1/2 cup cocoa powder
1/4 teaspoon salt
1/2 cup turbinado sugar
2/3 cup melted coconut oil (measured in liquid form)
1/3 cup maple syrup
1 teaspoon vanilla (optional)
1 1/2 cups chocolate chips
sea salt for finishing

Steps:

  • Preheat the oven to 250 degrees Fahrenheit. Toss the oats, almonds, coconut, cocoa, salt, and 1/3 cup of the sugar in a large bowl. Whisk the melted coconut oil, maple syrup, and vanilla together. Set aside. Pour the liquids over the dry ingredients and stir to combine. Spread the granola into two large jelly roll pans in an even layer.
  • for 50 minutes total, stopping about halfway through to check the granola and shake or stir the pan if needed. After 50 minutes, sprinkle the chocolate chips over the top of the granola, return to the oven for 5-10 minutes until chocolate chips are very soft. Sprinkle with the remaining turbinado sugar and coarse sea salt to taste. The added sugar and salt should stick the outside of the chocolate chips. *YES*
  • Let the granola stand for 1-2 hours. Gently scoop the granola into jars or an airtight container for storing. The advantage of doing this when the chocolate chips are still soft (at the 1-2 hour mark) is that it makes for great texture once it cools - the chocolate chips will sort of melt their way into the clusters and harden within each individual granola cluster. SO GOOD. You can also leave the granola out overnight or for several hours until the chocolate chips are fully cooled and hardened if you want to preserve the shape of the individual chocolate chip pieces in the granola.

1 1/2 cup brown sugar
1/2 cup water
4 teaspoons pure vanilla extract
1 teaspoon salt
8 cups rolled oats
2 cup chopped pecans or walnuts, or slivered almonds

Steps:

  • Preheat oven to 275 degrees F.
  • Line 2 cookie sheets with parchment paper and reserve.
  • Combine brown sugar and water in a 4-cup microwave proof glass measuring cup or bowl. Place in microwave on high for 5 minutes and cook until sugar is completely dissolved. Remove from microwave, add vanilla extract and salt.
  • In a large mixing bowl, combine oats, nuts, and brown sugar syrup mixture. Stir until thoroughly mixed. Spread the granola onto cookie sheets and bake 45 minutes to 1 hour or until golden and crunchy.
  • When the mixture comes out of the oven, it is still very pliable. You may choose to add in dried fruit as a finishing touch at this time. When granola has cooled completely, store in an airtight container.

1 cup crispy rice cereal (like Rice Krispies)
1/2 cup brown sugar, packed
1/3 cup pecans, chopped
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 cup honey
2 tablespoons canola oil
1 teaspoon vanilla extract
2 ounces bittersweet chocolate, finely chopped
1/2 cup dried cranberries (or raisins)

Steps:

  • Preheat oven to 300°F.
  • Cover a rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine oats, Rice Krispies, brown sugar, pecans, salt and cinnamon. Set aside.
  • Place the honey and oil in a microwave safe dish, like a 2 cup glass measuring cup, and microwave on high for 30-60 seconds until warm. Add vanilla and chocolate. Stir with a whisk until chocolate is melted and mixture is smooth. If necessary, microwave at 50-70% power for 30-45 seconds to completely melt chocolate. Alternatively, heat the honey and oil in a small pot on the stovetop until warm, remove from heat and stir in vanilla and chocolate.
  • Pour chocolate mixture over oat mixture and gently mix until combined.
  • Bake at 300F for 20-30 minutes, stirring every 10 minutes.
  • Let granola cool on pan. Stir in cranberries.

4 cups old-fashioned oats*
1 cup slivered almonds (or your preferred nuts)
1/3 cup unsweetened cocoa powder
1 teaspoon fine sea salt
1/2 cup melted coconut oil
1/2 cup maple syrup
2 teaspoons vanilla extract
2/3 cup unsweetened flaked coconut (or 1/2 cup shredded coconut)
1/2 cup semisweet chocolate chips (optional)

Steps:

  • Heat oven to 350°F. Line a large baking sheet with parchment paper, and set aside.
  • In a large mixing bowl, stir together oats, almonds, cocoa powder and sea salt until evenly combined.
  • In a separate mixing cup, stir together the melted coconut oil, maple syrup and vanilla extract until combined. Pour the coconut oil mixture into the oats mixture, and stir until evenly combined.
  • Spread the granola out evenly on the prepared baking sheet. Bake for 20 minutes, stirring once halfway through. Then remove from the oven, give the mixture a good stir, then sprinkle the coconut evenly on top. Bake for 5 more minutes, until the granola is lightly toasted and golden.
  • Remove baking sheet from the oven and transfer to a wire baking rack. Let cool until the granola reaches room temperature. Then stir in the chocolate chips and/or any other add-ins that you prefer.
  • Serve immediately, or store in an airtight container at room temperature for up to 1 month.

1/4 lb dark chocolate (50-55 % cacao)
3/4 cup loosely packed dark brown sugar
3 tablespoons sunflower oil or 3 tablespoons mild olive oil
3 tablespoons maple syrup
6 cups rolled oats (about 1 1/2 lb) or 6 cups quick oats (about 1 1/2 lb)
1 3/4 cups Rice Krispies or 1 3/4 cups puffed rice cereal
1/2 cup shredded coconut
1/2 cup sliced almonds or 1/2 cup chopped hazelnuts
2 -3 tablespoons unsweetened cocoa powder
1/2 teaspoon cinnamon
1 pinch fine sea salt

Steps:

  • Preheat the oven to 350°F Line a deep metal baking sheet with parchment paper, so that the parchment paper overlaps the rim.
  • Chop the chocolate. Place water and sugar into a small pot and bring to a boil until the sugar has dissolved, then remove from heat. Stir in oil, maple syrup, and chopped chocolate until well blended.
  • Mix the remaining ingredients together in a large bowl, then pour the chocolate syrup over it. Stir well (either with a large spoon or with your hands) and make sure all oats are well covered with the dark syrup. Break down larger clusters to your liking.
