CREAM CHEESE STUFFED CHOCOLATE COOKIES
Steps:
- Gather the ingredients.
- In a small bowl, whisk together the flour, cocoa powder, baking soda, and salt. Stir in the chocolate chips, if using.
- In another small bowl, whisk the egg, yolk, corn syrup, and vanilla.
- In the bowl of a stand mixer, fitted with the paddle attachment beat the butter, shortening, and sugars on medium-high speed until smooth and lightened in color, about 2 minutes.
- On medium speed, add the egg-yolk mixture and beat just until combined.
- Reduce the speed to low and slowly add the dry ingredients.
- Stop the mixer once there are still some streaks of flour left, then continue mixing by hand with a flexible spatula.
- Using a 2-tablespoon cookie scoop or measuring spoons, scoop about 36 balls of dough onto 2 parchment-lined baking sheets. Flatten the dough into thick discs with your hands or the bottom of a measuring cup. If the dough is super sticky, wet your hands before pressing on the portioned dough. Place in the refrigerator for 1 hour.
- To make the filling, whisk the softened cream cheese, confectioners' sugar, and salt in a small bowl. Place in the refrigerator while the cookie dough chills.
- Remove the cookie discs from the refrigerator, then press them down so they are about 2 1/2 inches wide. Place 2 teaspoons of filling in the middle of each one.
- With your hands, gently stretch the cookie dough over the filling and roll the ball in your hands until the filling is surrounded by the cookie dough.
- Place additional granulated sugar in a small bowl, then roll each cookie dough in the sugar before returning to the baking sheets and placing in the freezer for 1 hour (this will prevent the cookies from spreading in the oven). Preheat the oven to 350 F.
- Bake the cookies for 10 to 12 minutes, rotating the baking sheets halfway through. The cookies are done, when they look dry and slightly crinkly on top.
- Remove from the oven and let cool briefly before enjoying.

KELLYMAC'S CHOCOLATE CREAM CHEESE FILLED PUFF PASTRIES
Like most of the recipes that I come up with I developed this because I needed a dessert in less than an hour using what I had on hand. This is what resulted, it is a delicious creamy chocolate filling folded into flakey puff pastry. Please note that the cream cheese taste in these is subltle and if you want that flavor to stand out more you should increase the amount of cream cheese until it meets your tastes. Since this was a trial and error process the measurement amounts are all estimates. This recipe would also be good with the addition of some chopped nuts or served with raspberries. Please give me your feedback, changes, and suggestions! Also, please note that this recipe is very easy it just has a lot of steps so that I properly explain everything. Thank you!

- Preheat oven to 350 degrees.
- In a large saucepan over medium low heat combine sugar, cocoa, flour, and salt.
- Add water gradually stirring after every addition. The mixture will look really watery but it thickens up quickly. Cook this over medium heat stirring constantly.
- Once mixture has thickened add Kahlua and chocolate chips. Lower the heat.
- Stir until the chips have all melted and mixture has thickened again.
- Add cream cheese, butter, and vanilla and once again stir until all incorporated and mixture almost starts to boil, or until it reaches the consistency of hot fudge. Be careful not to let the chocolate on the bottom burn!
- Allow to cool while puff pastry is prepared.
- Unfold puff pastry sheets on parchment paper and use a rolling pin to stretch by about 1 inch on all sides and to smooth out folds.
- Cut each pastry sheet into four squares.
- Place sqaures on greased cookie sheets.
- Place approximately 1/4 cup of filling in center of pastry and then immediately fold corners in to make a square envelope. Pinch the corners to ensure that it stays together.
- Repeat for remaining pastry squares.
- Make an egg wash by beating together the egg and milk and brush on each puff pastry.
- Sprinkle puff pastries with cinnamon sugar.
- Place in oven and bake for approxiately 30 minutes or until the puff pastry is golden brown and flakey.
- Allow to cool for 10-15 minutes and then sprinkle powdered sugar over the top of each pastry square before serving.
- Good alone or served with ice cream or whipped cream.

- Make sure that you thaw the pastry according to package directions.
- In small bowl, combine softened cream cheese and sugar and mix well to blend.
- Roll one sheet of the thawed puff pastry into a 14x10" rectangle.
- Spread with half of the cream cheese mixture, leaving a 1" border on one long side of the dough.
- Sprinkle cream cheese filling with half of the chocolate chips.
- Roll up pastry, starting at long side, and finishing at the side with the uncovered border of pastry.
- Brush this edge with a bit of water, and seal pastry by pinching gently.
- Repeat with remaining sheet of pastry and remaining ingredients.
- Cover and chill rolls for at least 1 hour. When ready to bake, preheat oven to 375ºF.
- Line cookie sheets with foil or parchment paper.
- Cut rolls into 1" thick slices using dental floss or thread, and place cut side up on prepared cookie sheets.
- Bake for 20-25 minutes until pastry is golden brown.
- Let cookies cool for 2 minutes on cookie sheets.
- Remove to wire racks to finish cooling.

- In a heavy saucepan over medium heat, bring water, butter and salt to a boil. Add the flour and cocoa all at once; stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add the eggs, one at a time, beating well after each addition. Beat until smooth and shiny., Drop by heaping tablespoonfuls 3 in. apart onto greased baking sheets. - In the bowl of an electric stand mixer, beat the cream cheese and sugar until smooth. Divide the cream cheese between both sheets of puff pastry. Starting at one long end of the pastry, start spreading the cream cheese to the other end, leaving a one inch border at that end without cream cheese. Divide the chocolate chips in half and sprinkle on both sheets.
- Starting with the long end (jelly roll style) and roll the sheet to the other side with the inch border without cream cheese. Moisten the pastry edge with water and seal the edge. Place the roll in the refrigerator for one hour.
