These chocolate covered strawberry Christmas trees are a fun and easy Christmas project to do with your kiddos!

12 ounces dark green candy melts (found at Amazon, Hobby Lobby or Michael's)
1 pound of strawberries, stems removed
24 Oreo cookies
White Icing
Sprinkles
Candy Stars (order them from Amazon)
2 1/2 cups powdered sugar
3 tablespoons heavy cream
Add water by the teaspoon and whisk until the desired consistency is reached. You want it to be thick like toothpaste.

Steps:

  • Set a heat proof bowl over a small pot of simmering water on the stovetop (double boiler). Slowly melt the candy melts in the bowl, stirring occasionally. Do not allow moisture to come in contact with the candy.
  • Spoon or pipe a small amount of icing onto the top of each Oreo. This will adhere the strawberry to the cookie base.
  • Once candy melts are fully melted, turn the heat to low while you dip the strawberries using a toothpick inserted into the cut end.
  • Shake off excess candy coating gently. Using a second toothpick inserted into the pointed end of the dipped strawberry, carefully place the strawberry on top of the icing on the Oreo.
  • Decorate with sprinkles and a candy star while the candy coating is still wet. It will usually dry in about 10 minutes.

6 ounces semisweet chocolate, chopped
3 ounces white chocolate, chopped
1 pound strawberries with stems (about 20), washed and dried very well

Steps:

  • Put the semisweet and white chocolates into 2 separate heatproof medium bowls. Fill 2 medium saucepans with a couple inches of water and bring to a simmer over medium heat. Turn off the heat; set the bowls of chocolate over the water to melt. Stir until smooth. (Alternatively, melt the chocolates in a microwave at half power, for 1 minute, stir and then heat for another minute or until melted.)
  • Once the chocolates are melted and smooth, remove from the heat. Line a sheet pan with parchment or waxed paper. Holding the strawberry by the stem, dip the fruit into the dark chocolate, lift and twist slightly, letting any excess chocolate fall back into the bowl. Set strawberries on the parchment paper. Repeat with the rest of the strawberries. Dip a fork in the white chocolate and drizzle the white chocolate over the dipped strawberries.
  • Set the strawberries aside until the chocolate sets, about 30 minutes.

2 teaspoons coconut oil
3 1/2-4 lbs strawberries, stems removed and berries well dried
25 -30 mint sprigs from 2 bunches of fresh mint
1/2 cup confectioners' sugar

Steps:

  • *Need 12x4-inch (or larger) Styrofoam cone and toothpicks.
  • To prepare cone, wrap completely with parchment paper, using toothpicks to hold parchment in place. Set cone on the center a festive serving platter.
  • In a medium bowl, place chocolate and coconut oil in a double boiler or heatproof bowl set over barely simmering water. Heat chocolate, stirring occasionally, until completely melted, then remove from heat.
  • Working one at a time and starting with the largest berries at the bottom, dip the cut stem side of the strawberry into the chocolate then place it onto the parchment wrapped cone. Repeat process, placing the berries in rows and stacking them on top of each other to reach the top of the tree.
  • Once all of the berries are placed on the cone, arrange mint sprigs in the spaces between the berries. Place confectioners sugar in a sifter and tap around the tree to dust with sugar.
