- melt chocolate discs in a double boiler.
- dump in raisins
- stir for a while.
- when raisins are fully covered in chocolate pour into strainer until all access chocolate is gone
- pour the raisins onto pan and let sit until dry
- eat.

Steps:
- In a microwave, combine milk and chocolate. Microwave on high for 2 minutes or until chocolate is melted; stir until smooth. Stir in raisins; set aside to cool slightly. , In a large bowl, cream butter and brown sugar until light and fluffy. Beat in vanilla. Combine the remaining ingredients; gradually add to creamed mixture and mix well (dough will be crumbly). Set aside half for topping. , Press remaining crumb mixture into an ungreased 13-in. x 9-in. baking pan. Spread with the chocolate raisin mixture. Sprinkle with reserved crumb mixture; press down lightly. , Bake at 375° for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into bars.

CHOCOLATE COOKIES WITH CHOCOLATE COVERED RAISINS
We bought a bunch of dark chocolate covered raisins from the candy bins where you scoop out what you want. So my DH scooped up a lot! I hid half of it till I tossed this recipe together. The outside is crunchy, but the center will be moist and chewy. This recipe has two methods of directions so it's not a hard recipe to put together. Your choice.

Steps:
- Whisk the flour, baking powder, salt, and baking soda, together in a medium bowl.
- Melt the butter in a saucepan over medium heat or in the microwave oven. Remove pan from the heat, and add the bittersweet chocolate, set aside until melted.
- Whisk the eggs, yolk, brown sugar, and vanilla together in a medium bowl then slowly whisk in melted chocolate mixture.
- Stir in the flour mixture to make a loose dough. Don't over work the dough. Fold in the chocolate covered raisins. Cover with plastic wrap and refrigerate until firm, about 2 hours.
- Alternate Method for Food Processor owners:.
- Melt butter in micro.
- Finely chop chocolate in food processor with metal blade.
- Pour in warm melted butter and process till smooth.
- Add vanilla, brown sugar, pulse to blend. Add slightly beaten eggs and yolk pulse to blend.
- Whisk together flour, baking soda baking powder and salt add to chocolate mixture and pulse to blend.
- Remove dough and and fold in chocolate covered raisins.
- Cover with plastic wrap and refrigerate until firm, about 2 hours.
- Preheat oven to 350°F.
- Line a baking sheet with parchment paper. Form dough into balls, about 2 inches or 1 1/2 ounces each, and put on the prepared baking sheets, leaving a couple inches between the cookies. Bake about 13 to 15 minutes. Cool on a rack.

Steps:
- Put milk chocolate chips and white chocolate in microwave safe bowl.
- Microwave on high 1 minute and stir.
- Microwave another 45 seconds and stir until smooth. (all microwaves vary so you may have to microwave yours a bit more).
- Add raisins and stir. You can also add more raisin or sometimes I add peanuts too.
- Drop on a cookie sheet covered with wax paper.
- Cool and serve.

- Peel oranges and separate into sections.
- Wrap sections in plastic wrap so they do not dry out.
- Rinse strawberries under cold running water, do not remove the stems.
- Pat berries completely dry with paper towels.
- Set fruit aside.
- Fruit should be at room temperature for dipping.
- Place peanuts in a small bowl.
- Into a double boiler top, not over water, grate semi sweet chocolate squares.
- Set candy thermometer in place, set aside.
- Heat water to boiling in double boiler bottom; remove from heat.
- Place double boiler top over hot water; melt chocolate, stirring constantly with rubber spatula, until temperature reaches 130 degrees.
- Immediately discard hot water from double boiler bottom and refill with cold water to come one-third of the way up the side of the double boiler.
- Set top in place and cool chocolate, stirring constantly, until chocolate temperature reaches 83 degrees.
- Remove double boiler top and replace cold water in bottom with warm water (about 85 degrees).
- This will keep the chocolate and dipping consistency longer.
- With fingers, hold one piece of fruit at a time and dip it into chocolate, leaving part of fruit uncovered.
- Shake off excess chocolate or gently scrape one side of fruit to remove excess.
- Place on waxed paper.
- Working quickly, stir peanuts into leftover chocolate in pan.
- Drop mixture by tablespoonfuls onto waxed paper.
- Let chocolate covered fruit and peanut clusters stand until chocolate is set (about 10 minutes) before removing from waxed paper.
- Serve dipped fresh fruit same day.
- Store peanut clusters in tightly covered container; use within one week.
- Note: Chocolate can be easily melted in the microwave as well.
- Break chocolate into chunks and microwave in increments of 20-30 seconds, stirring in between each session.
RAISIN PEANUT CLUSTERS
Steps:
- In a heavy 3-quart saucepan, melt chocolate and the shortening on low heat.
- Remove from the heat and stir in the raisins and peanuts.
- Drop by heaping tablespoonfuls onto waxed paper or parchment paper.
- Allow to dry and firm. (This will take about 2 hours.) Store in airtight containers on the countertop.

- BUTTER a 9x13 inch glass baking dish.
- MICROWAVE 1 1/3 cups butterscotch morsels, semi-sweet morsels and peanut butter in large, microwave-safe bowl on HIGH (100 percent) power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth.
- ADD pretzels, peanuts and chocolate covered raisins; stir well to coat. Spread into prepared baking dish.
