Steps:
- Toast and cool nuts, set aside.
- Chop chocolate place in a bowl with chipits, nuts,cherries, oatmeal.
- Sift flour, soda, salt, and baking powder and set aside.
- Beat butter with both sugars until fluffy.
- Add eggs one at a time and beat for one minute.
- Add dry ingredients and combine for one minute.
- Add chocolate,nut, cherries, oats.
- Using a wooden spoon combine well.
- Place scoops about 1 3/4 inches onto ungreased parchment lined baking sheet.
- Bake 350 degrees for 12 to 14 minutes, until slightly flattened.
- Cool 2 minutes, then remove to rack.

Steps:
- Put chopped chocolates and butter in a microwave safe bowl and microwave at 30 with 30 second increments, stopping and stirring each time till melted and smooth; let cool slightly.
- Whisk eggs, sugar, and vanilla into chocolate mixture.
- In another bowl, stir together flour, baking powder, and salt.
- Stir dry ingredients into chocolate mixture until evenly mixed, then stir in chocolate chips.
- Cover dough and chill until firm enough to hold its shape, about an hour.
- Meanwhile, make ganache:
- Put chopped chocolate and cream in a microwave safe bowl and microwave at 30 second intervals, till melted and smooth, then let cool.
- Cover and chill, stirring occasionally, until firm enough to spread, about 2 hours.
- If ganache becomes too firm to spread, you may zap it in the microwave for a few seconds to soften.
- Preheat oven to 350°. Line 2 large baking sheets with parchment paper.
- Scoop out 2 tablespoons of dough, roll into rounds, then place on prepared sheets onto sheets about 1 inch apart.
- Press dough to flatten to about a ½ inch thickness. Bake about 10 minutes, till tops lose their wet look, but don't overbake. Let cookies cool on sheets on racks.
- Spread flat sides of half of cookies with ganache and top with remaining cookies.
- Yield: 12-16 cookies
- Total time: 2½ hours with chilling times

Steps:
- In a large bowl, add the butter and sugar and cream together with a hand mixer. Add the eggs and vanilla extract to the creamed mixture and mix until combined. In a medium bowl, mix the cocoa powder, flour, baking soda, and salt. Slowly add the dry ingredients and continue mixing until incorporated.
- Roll the dough into 2 logs that are about 2-inches high and 1-foot long. Wrap them in waxed paper and place in the refrigerator for 2 hours.
- Preheat oven to 350 degrees F.
- Once thoroughly chilled, slice the cookies into 1/2-inch thick rounds and cover with sanding sugar. Place on a parchment paper lined cookie sheet and bake for 10 minutes.
- Remove to a wire rack to cool.

- Preheat oven to 350 degrees F (175 degrees C). Whisk together the flour, cocoa powder, and baking soda.
- Beat the butter, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Beat in one egg until completely incorporated. Beat in the last egg along with the vanilla. Mix in the flour mixture until just incorporated. Fold in the chocolate chips; mixing just enough to evenly combine. Drop by heaped teaspoonfuls onto ungreased baking sheets.
- Bake in the preheated oven until the edges are golden, 9 to 12 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

My best friend's mother owned a bakery. This is her recipe but I've been making it for years. Don't be put off by the long list of ingredients, these are well worth the effort. The nuts and cranberries make these especially great in the colder months.

- Preheat oven to 325°F.
- Spread nuts on ungreased cookie sheet and roast for 7-12 minutes until lightly browned; set aside to cool.
- Grease two cookie sheets.
- In a large bowl combine the chips, cranberries, and nuts; set aside.
- In another large bowl beat together the butter, sugar, cream cheese, and egg until very smooth Beat in milk, melted chocolate, marshmallow, and vanilla.
- Sift together the flour, baking powder, salt, and cocoa Add to the butter mixture Add the chips, cranberries, and nuts.
- Stir well until mixed.
- Batter will be thick.
- Using a 1/4 c measure or a 4 T ice cream scoop, measure out batter and place 2" apart on cookie sheet, putting no more than 6 cookies on a sheet.
- Bake 13-17 minutes until puffed and cooked through.
- Cool on sheet for 1 minute Transfer to wire rack to cool completely.
