These Banana Chocolate Chip Muffins with Coconut combine so many flavors for a breakfast muffin that the kids go crazy for. These muffins are a great way to use up overripe bananas!

1 1/2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup granulated sugar
5 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1 large egg
3 large ripe bananas
1/2 cup semi sweet chocolate chips
1/2 cup dried, sweetened coconut*, plus more for topping

Steps:

  • Preheat the oven to 350ºF. Line 12** muffin tins with paper liners or spray with nonstick cooking spray.
  • In a bowl, combine the flour, baking soda, cinnamon and salt.
  • In another bowl, cream together the sugar, melted butter, vanilla and egg.
  • Peel the bananas and mash them. Add them to the wet ingredients and stir to combine.
  • Stir the dry ingredients into the wet ingredients, just until combined. Do not over mix.
  • Fold in the chocolate chips and the coconut.
  • Divide the mixture evenly between the prepared muffin cups. Sprinkle a bit of extra coconut over the top of each and transfer the pan to the oven.
  • Bake until the muffins are golden brown and baked through, 22-30 minutes.

One of the best banana-chocolate chip muffins I've ever had, made with coconut flour. No butter or oil needed.

3 ripe bananas, mashed
3 large eggs
¼ cup coconut flour
2 tablespoons coconut flour
1 tablespoon stevia powder
1 ½ teaspoons baking powder
½ teaspoon salt
⅓ cup miniature semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 10 muffin cups with paper liners.
  • Blend bananas, eggs, coconut flour, stevia, baking powder, and salt together in a bowl with a whisk or a fork. Stir in chocolate chips.
  • Pour mixture evenly between the prepared muffin cups, filling each about 1/2 inch from the top as these muffins won't rise as much as others.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 25 minutes. Cool for 5 minutes and transfer to a paper towel-lined plate; the moisture from the bananas will leak through the liners a little and this is normal.

1 ½ cups all-purpose flour
½ cup brown rice flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup white sugar
¼ cup butter, softened
2 eggs
1 cup mashed ripe bananas
½ cup sour cream
1 teaspoon vanilla extract
½ cup chocolate chips
½ cup sweetened flaked coconut

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 12-cup muffin tin with cooking spray and set aside.
  • Whisk all-purpose flour, brown rice flour, baking powder, baking soda, and salt together in a medium bowl.
  • Combine sugar, butter, and eggs in a stand mixer bowl. Beat on medium speed until smooth. Add bananas, sour cream, and vanilla extract. Beat until smooth. Add in flour mixture gradually, in 3 additions. Fold in chocolate chips and coconut; batter will be quite thick.
  • Spoon batter into the prepared muffin cups, filling each 3/4 full.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean and edges are golden, 15 to 17 minutes. Remove from the oven and let cool for 5 minutes before transferring muffins to a wire rack to cool completely, 20 to 30 minutes more.

125 g unsalted butter, melted
165 g caster sugar
3 very ripe bananas
2 eggs
1 teaspoon vanilla extract
300 g self-raising flour, sifted
45 g desiccated coconut
125 g dark chocolate chips
icing sugar, to dust

Steps:

  • Preheat oven to 200°C and grease 12 hole mini-muffin pans.
  • Mash banana in bowl, add butter, caster sugar, eggs and vanilla until well combined.
  • Place flour, coconut and chocolate in a large bowl, then fold in banana mixture. Working in batches, place dessertspoons of mixture into pan.
  • Bake for 15 minutes or until risen and golden.
  • Cool slightly in pan, then turn out onto a rack to cool completely.
  • Repeat with remaining batter.
  • Serve dusted with icing sugar.

3 very ripe bananas
1 egg
125 ml vegetable oil
250 g flour
100 g caster sugar
1 1/2 teaspoons baking powder
150 white chocolate chunks
2 tablespoons desiccated coconut

Steps:

  • 1. Preheat the oven to 180C.
  • 2. Line a muffin tray with 12 paper muffin cases.
  • 3. Mash the bananas well.
  • 4. Beat together the eggs and oil.
  • 5. Put the flour, baking powder and sugar together in a large bowl, and stir through. Mix in the mashed bananas and beaten egg and oil mixture.
  • 6. Fold in the white chocolate chunks and coconut. Spoon evenly into baking cases in muffin tin.
  • 7. Bake in the oven for 20 minutes or until the muffins come away from the side of the pan when touched.

3 extra ripe bananas, mashed.
2 1/2 cups all-purpose flour
1 cup canned unsweetened coconut milk, full fat
1 cup sweetened shredded coconut flakes
2 cups milk chocolate chips

Steps:

  • Preheat oven to 350*F Prepare muffin tin with liners. In a bowl combine oil and sugar. Add eggs (or apple sauce) and mix well. Add vanilla extract and almond extract, mix again. Add baking powder, baking soda and salt. Mix again. Add mashed bananas and mix well, scraping sides of bowl as needed. Alternately add flour & coconut milk, starting and ending with flour, mixing well after each addition until combined. Add coconut and mix again. Add chocolate chips Scoop batter into muffin cups, filling 3/4 full. Bake for 25 minutes or until toothpick inserted into middle of muffin comes out clean.

Steps:

  • Cream together the butter and eggs.
  • Mix in the ripe bananas and vanilla.
