CHOCOLATE-CINNAMON PUDDING



Chocolate-Cinnamon Pudding image

There's just no substitute for old-fashioned, homemade chocolate pudding that you can whip up before dinner and let cool until you're ready to serve.

4 tablespoons cornstarch
6 tablespoons sugar
1 1/2 tablespoons cocoa powder
3/4 teaspoon ground cinnamon, plus more to taste
Pinch of salt
2 1/4 cups heavy cream
1 1/4 cups milk
6 ounces semisweet chocolate, finely chopped
1 1/2 tablespoons unsalted butter, cut into small pieces

Steps:

  • In a medium saucepan, whisk together cornstarch, sugar, cocoa, cinnamon, and salt. Combine 1 1/4 cups cream with milk. Whisk 1 cup cream mixture into dry ingredients until cornstarch is dissolved. Whisk in remaining cream mixture; place saucepan over medium-high heat.
  • Cook, whisking constantly, until mixture comes to a boil and thickens, about 5 minutes. Add chocolate; cook, whisking, 1 minute more. Remove from heat, and whisk in butter until melted. Transfer to a bowl and place a piece of plastic wrap directly on pudding to prevent a skin from forming. Let stand until lukewarm, about 45 minutes.
  • Whip the remaining cup of cream to soft peaks. Divide pudding among four bowls, and serve with whipped cream. Lightly sprinkle cinnamon on whipped cream, if desired.

3/4 cup sweetened flaked coconut
2/3 cup heavy cream
6 ounces bittersweet chocolate, broken into pieces
1 teaspoon ground cinnamon
Pinch salt
1 1/2 pints dulce de leche ice cream
1/4 cup redskin or unsalted peanuts

Steps:

  • Preheat oven to 350 degrees. Spread coconut on a rimmed baking sheet; toast, tossing occasionally, until brown and fragrant, about 10 minutes. (Store at room temperature up to 1 day.)
  • In a medium saucepan over medium-high, bring cream to a boil; remove from heat. Add chocolate, cinnamon, and salt. Let stand 1 to 2 minutes. Whisk until chocolate is melted and mixture is shiny. (Cover and refrigerate up to 2 days; before serving, reheat in a double boiler or the microwave.)
  • Remove ice cream from freezer 15 minutes before serving. Scoop into bowls; top with warm sauce, peanuts, and coconut.

Butter, for greasing the pan
1 (14-ounce) can sweetened condensed milk
2 teaspoons ground cinnamon
1 teaspoon pure vanilla extract
1 pound (about 2 cups) bittersweet (60 percent cacao) chocolate chips (recommended: Ghiradelli) see Cook's Note
3 tablespoons unsalted butter, cut into 1/2-inch pieces, at room temperature
Kosher or flake salt, optional

Steps:

  • Butter the bottom and sides of an 8 by 8-inch baking pan. Line the pan with a sheet of parchment paper, about 14-inches long and 7-inches wide, allowing the excess to overhang the sides. Set aside
  • In a medium glass or stainless steel bowl, combine the condensed milk, cinnamon, and vanilla. Stir in the chocolate chips and butter. Put the bowl on a saucepan of barely simmering water and mix until the chocolate chips have melted and the mixture is smooth, about 6 to 8 minutes (mixture will be thick). Using a spatula, scrape the mixture into the prepared pan and smooth the top. Sprinkle with salt, if desired. Refrigerate for at least 2 hours until firm.
  • Run a warm knife around the edge of the pan to loosen the fudge. Remove the fudge to a cutting board. Peel off the parchment paper and cut the fudge into 1-inch pieces. Store refrigerated in an airtight container or freeze.

4 bananas
1/2 cup flour
1 egg
1 cup half-and-half
1 tablespoon half-and-half
1/2 cup panko breadcrumbs
1 cup semi-sweet chocolate chips
1 teaspoon cinnamon
1/2 cup whipped cream
vegetable oil (for frying)

Steps:

  • Add 1 cup half and half and chocolate chips to a small saucepan, and melt together over low heat. Add cinnamon, stir well.
  • Cut bananas into quarters.
  • Beat egg with 1 tbsp half and half.
  • Dredge bananas in flour, egg, and then panko crumbs.
  • Heat oil in a wide skillet over medium heat.
  • Fry bananas just until crisp and lightly browned.
  • Serve 1 banana in each dish, drizzled with chocolate sauce and topped with whipped cream.

1 1/3 cups biscuit mix
3/4 cup sugar
1/3 cup cocoa
1 teaspoon cinnamon
3 tablespoons soft butter
1 egg
3/4 cup milk
1 pint vanilla ice cream
1 cup chocolate syrup, mixed with
1/4-1/2 teaspoon cinnamon

Steps:

  • Heat oven to 350.
  • Spray 8x8 baking pan with cooking spray.
  • In large bowl combine biscuit mix, sugar, cocoa,cinnamon, butter,egg,and 1/4 cup of the milk.
  • Beat one minute at medium speed in mixer, scraping sides and bottom of bowl frequently, or beat vigorously by hand.
  • Add remaining milk; beat 1/2 minute.
  • Pour batter in prepared pan. Bake 35 to 40 minutes.
  • Cut cake into serving pieces.
  • Serve warm or cold topped with ice cream and Chocolate Cinnamon Sauce.
