Steps:
- Bring first 4 ingredients to a boil.
- Cook for 1 minute.
- Remove from heat.
- Add remaining ingredients.
- Mix well and drop by teaspoon onto wax paper.
- Let cool.
- Note: After I have let them cool, I put them in the fridge.
- They seem to harden better, plus they taste good that way.
CHOCOLATE TOFFEE NO-BAKE COOKIES
Steps:
- Line a baking sheet with wax paper. Combine the oats, peanut butter, bitter and semisweet chocolate chips, toffee bits, butter and salt in a medium saucepan. Cook over medium heat, stirring frequently, until the chocolate chips melt, 3 to 5 minutes.
- Scoop heaping tablespoons of batter onto the baking sheet and sprinkle each cookie with extra toffee bits. Freeze for 15 minutes before serving. The cookies can be stored in the refrigerator in an air-tight container for 1 week.
NO-BAKE CHOCOLATE OATMEAL COOKIES
These are wonderful, quick cookies. It is one of the first things I learned to "cook." You can add more or less oats (3 cups work best for me). I have found that the weather makes a difference on the consistency, its best to make them on a nice sunny day. Also, It is very important not to boil them for longer than one minute.

Steps:
- Add the first six ingredients into a 4-quart sauce pan.
- Bring to a rolling boil and hold for 1 minute.
- Remove from heat.
- Add peanut butter into the hot mixture and stir until melted.
- Add in vanilla. (almond extract is good also, but I only use 1/2 teaspoon almond extract with 1 1/2 teaspoon vanilla extract).
- Mix in the dry oats until they are completely coated.
- Drop cookies by tablespoonfuls onto wax paper.
- Let cool until set.
- *Please remember that even if you do follow the recipe exactly, it doesn't always turn out just right. I've had these not set up for me or be hard and dry. But most of the time, the recipe is just right. I adjusted the sugar in the recipe by substituting 1/2 cup of white sugar for 1/2 cup brown sugar, this makes them more moist. I have also found that it makes a difference if you use quick cooking oats or old fashioned. In my experience it takes more old fashioned oats than quick cooking and I like the texture of the quick cooking better. When you make it a few hundred times like I have you learn a couple of things:) Also, Chunky peanut butter tends to make them more dry and crumbly.

- In a saucepan over medium heat, combine sugar, milk, and margarine. Bring to a boil, stirring occasionally, then boil for 4 to 5 minutes. SUPER-MOIST NO-BAKE CHOCOLATE AND OATMEAL COOKIES
I love these cookies! The only problem I have encountered in the past with making these, is that they seem to fall apart due to dryness. Adding more milk and less oatmeal (as this recipe directs), takes care of that problem.

- Line cookie sheet with parchment paper and set aside.
- Place sugar, milk, cocoa powder and butter into a large heavy saucepan.
- Stir over medium heat until well combined.
- Turn heat to high and boil rapidly for 1 minute and take off heat.
- Add vanilla, rolled oats, coconut and marshmallows.
- Stir until marshmallows are melted.
- Drop using a tablespoon on cookie sheet rough shaped into round cookies.
- Chill in refrigerator for at least 1 hour, remove from sheet and store them back in the refrigerator.

CHOCOLATE DREAM COOKIES (NO BAKE)
My dad brought this recipe home from the Navy nearly 50 years ago. I have been making them since I could stand on a chair by the stove and stir. The peanut butter in this recipe makes these cookies a little different than similar recipes I've seen here.

Steps:
- If using cookie sheet, prepare pan by coating lightly with butter or margarine.
- In a large heavy saucepan, combine the milk, cocoa, butter and sugar.
- Stirring constantly, bring to a full boil, then boil for 1 minute.
- Remove from heat.
- Stir in vanilla and peanut butter until peanut butter is completely melted.
- Stir in quick oats.
- Quickly* drop by spoonfuls onto waxed paper, or spread in a buttered cookie sheet.
- Allow to cool completely.
- If using cookie sheet, cut into squares to serve.
- *If you don't move quickly, cookies will set up in the pan.
- If cookies do not set, you didn't boil long enough.
- If cookies are dry, you boiled too long.

- Preheat oven to 350°F Line a cookie sheet with parchment or Silpat.
- Cream butter and sugar in a large bowl until light and fluffy. Sift 1/3 c cocoa powder into the mixture and beat well. Sift together flour, baking soda and baking powder, and add to mixture. (Optionally, combine everything in a food processor and mix until combined.).
- Form 1 tbsp sized balls. Place on cookie sheet at least 2" apart, pressing down into fat discs. (The dough will be very sticky; gloves may be a good idea.).
- Bake 15 minutes. The tops will develop a cracked appearance. Cool 15 minutes, then transfer to a wire rack until completely cooled. (Placing a sheet of newspaper under the rack will help catch drips in the next step.).
- For the topping, combine 2 tbsp cocoa powder with confectioner's sugar, boiling water and vanilla in a small saucepan. Heat over low heat and whisk until smooth. Cool 10 minutes.
- Drizzle 1 tbsp of glaze on each cookie, spreading lightly with the back of the spoon, then sprinkle with sprinkles or sanding sugar. Work with 6 cookies at a time so the glaze doesn't dry out before applying the sprinkles.
