INCREDIBLE RASPBERRY CHEESECAKE COOKIES
I created a monster with these cookies. OMG!! I found these amazing cookies at a local gas station and had to have the recipe...I finally had some help and came up with this recipe for them. Take that Otis Spunkmeyer....I got ya ;-) The flavor just pops right off the cookie and into your mouth! These aren't as gooey as Otis Spunkmeyer cookies but they are INCREDIBLE!!!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
- In a bowl, beat the cream cheese until soft and fluffy with an electric mixer, then beat in the egg until thoroughly combined. Mix in the cookie mix, then stir in the raspberry chips. Drop the dough about 2 inches apart onto the prepared baking sheets with a tablespoon or small scoop. Lightly pat the cookies to flatten.
- Bake in the preheated oven until the edges of the cookies are lightly golden, 9 to 12 minutes. Cool before serving.

Steps:
- Lightly grease a 9- by 5-inch loaf pan; set aside.
- Preheat oven to 350 degrees.
- Melt chocolate chips and butter in a small saucepan; set aside.
- In a large bowl combine flour, sugar, baking soda, baking powder and salt.
- Add nuts; stir well.
- In a separate bowl combine eggs, milk, raspberry jam, and vanilla.
- Beat until blended.
- Add melted chocolate mixture and milk mixture to the flour mixture,stir just until moistened.
- Pour into prepared pan.
- Bake for 50 to 60 minutes, or until a toothpick inserted in the center of the loaf comes out clean.
- Place the pan on a wire rack for 10 minutes.
- Remove from pan, cool completely.

CHOCOLATE RASPBERRY LAYER BARS
With the Christmas holidays drawing near, I thought these would be a great addition to cookie & sweet trays! They are quite an attractive looking bar and they look nice cut into triangles. You can even substitute your favourite jam, such as apricot, peach & strawberry, but I think the raspberry (or the strawberry), red in colour for Christmas would be nicest! Found this recipe in a booklet of baking recipes that I picked up at the grocery store put out by Robin Hood flour. Add 1 1/2 hrs. to the cook time listed for chilling. These are supposed to freeze well for those of you who want to get a head start on your holiday baking! Hope you enjoy!

- For Base: Preheat oven to 375 degrees.
- Spray a 9 inch square cake pan with non-stick cooking spray.
- Combine flour& icing sugar;cut in butter until mixture is crumbly.
- Press firmly into greased pan.
- Bake at 375 for 15-18 minutes, or until golden.
- For Filling: Spread jam on warm crust.
- Melt white chocolate chips as directed on package.
- Beat cream cheese and cream in small mixer bowl.
- Add melted white chocolate,beating until smooth.
- Mix well.
- Spread evenly over jam.
- Chill to set, about one hour.
- For Topping: Melt semi-sweet chocolate chips and butter together over low heat, stirring until smooth.
- Spread over filling.
- Chill until set.

These cookies are so full of raspberry flavor they'll make your mouth pucker. Moist and chewy all at the same time! Pour yourself a tall glass of cold milk and enjoy! FOODBIT: I find the best way to melt chocolate is in the microwave by placing it in a bowl, covering with plastic wrap and microwaving on High approximately 1 minute per ounce, stir well.
