NO-YEAST DINNER ROLLS

No-Yeast Dinner Rolls image

We make these quick easy homemade dinner rolls without yeast when we've run out of the baker's standby or don't have the time for yeast to work its magic. Slightly reminiscent of biscuits, they are easier to make and not as crumbly. Feel free to split the leftovers and use for sandwiches the next day.

Categories     side-dish

Time 50m

Yield 12 rolls

Number Of Ingredients 6

1 1/2 sticks (12 tablespoons) unsalted butter, melted and cooled, plus more for the baking dish
4 cups all-purpose flour (see Cook's Note)
5 teaspoons baking powder
2 teaspoons sugar
2 teaspoons kosher salt
1 1/2 cups milk, at room temperature

Steps:

  • Preheat the oven to 375 degrees F. Coat the bottom of a 9-by-13-inch baking dish with butter.
  • Whisk together the flour, baking powder, sugar and salt in a large bowl. Whisk together the milk and 1/2 cup of the butter in a medium bowl. Pour the wet ingredients into the dry and combine with a wooden spoon; do not overwork the dough. It should be wet.
  • Divide the dough into 12 pieces and shape each into a ball. Arrange the dough balls in the prepared baking dish. Pour the remaining 1/4 cup butter all over the dough and bake until golden brown, 35 to 40 minutes.

BAKING POWDER BISCUITS

Baking Powder Biscuits image

Provided by Food Network Kitchen

Categories     side-dish

Time 50m

Yield 8 biscuits

Number Of Ingredients 8

2 cups all-purpose flour, plus more for dusting
1 tablespoon baking powder
1 teaspoon sugar
1 teaspoon fine salt
7 tablespoons cold unsalted butter, sliced
3/4 cup milk
1 tablespoon heavy cream
1 tablespoon melted unsalted butter

Steps:

  • Place a rack in the center of the oven and preheat to 450 degrees F. Line a baking sheet with two layers of parchment paper. Set aside.
  • In a large bowl, whisk the flour, baking powder, sugar, and salt until evenly combined. Rub 2 tablespoons of the butter into the flour with your fingertips, until it is completely absorbed. Work the remaining butter into the flour until it is in even pieces about the size of a pea. Gently stir the milk into the flour mixture with a fork to make a loose dough.
  • Turn the dough out onto a well-floured work surface. Pat the dough by hand into a 1/2-inch-thick rectangle. Fold the dough in thirds like a business letter. (For a flakier biscuit repeat this folding a second time.) Pat the dough into a 5 by 8-inch rectangle about 3/4-inch thick. Use a 2- to 3-inch round cutter to make 6 biscuits, and place them on the prepared baking sheet. Press together the scraps of dough, cut 2 more biscuits, and place them on the baking sheet.
  • Make a glaze by mixing the cream and melted butter together in a small bowl. Lightly brush the tops of the biscuits with the glaze. Bake until lightly browned, about 15 minutes. Cool on a rack for 5 minutes before serving.

BEST "NO ROLL" BAKING POWDER BISCUITS

Best

I love home made biscuits but hate the mess of rolling them out on my counter. With this recipe you can simple form the dough into balls with your hand and then press them onto a baking sheet... no rolling or cutting required! This is a Better Homes and Gardens recipe.

STIR AND ROLL BISCUITS (BETTY CROCKER COOKBOOK)

Stir and Roll Biscuits (Betty Crocker Cookbook) image

I'm a biscuit fanatic--over the course of my final two years of college, I must have made several dozen batches of biscuits for all occasions! This recipe is my favorite to make because of its simplicity and its deliciousness. Taken and embellished upon from a 1970s-era Betty Crocker Cookbook. These are also great as the top crust of chicken pie!

Provided by finch stew

Categories     Breakfast

Time 20m

Yield 16 1 3/4 inch biscuits, 4 serving(s)

Number Of Ingredients 5

2 cups flour, sifted
3 teaspoons baking powder
1 teaspoon kosher salt
1/3 cup canola oil
2/3 cup milk

Steps:

  • Heat oven to 450 degrees.
  • Measure and sift (important!) dry ingredients into bowl.
  • Pour oil and milk into measuring cup- do not stir together; pour all at once into flour mixture.
  • Stir until mixture cleans side of bowl and forms a ball. If dough is too sticky, add some flour. If it's not sticking together enough, add a bit more milk.
  • To knead dough, turn onto a sheet of wax paper (or plastic wrap--I use plastic wrap because it's much cheaper and I don't always have wax paper) that's big enough so that you can fold the paper (or plastic) over on to the ball of dough and press it flat. Fold the dough over on itself several times or until it looks smooth. This is kind of like kneading bread dough.
  • Pat or roll the dough until it's 1/2 inch thick.
  • Cut dough with unfloured biscuit cutter (or just a regular knife--square biscuits are just as delicious as round ones!). Ensure that each of the biscuit has been cut around its entire perimeter; the cut edges have the best texture! I usually make a dough rectangle and then cut it into squares with a sharp non-serrated knife, taking care to cut off the outer 1/4 inch so that all of the biscuits have four nice cut edges.
  • Place on ungreased, single-layer baking sheet. Bake 10-12 minutes or until golden brown. Be sure to check to see if the bottoms have browned before removing from oven!

ROLLED BAKING POWDER BISCUITS

Rolled Baking Powder Biscuits image

One of my earliest memories is of my mother making biscuits and gravy for breakfast. All the kids would stand around while Mom cut the biscuits hoping for a little scrap of dough to play with. We weren't disappointed! Before baking them, Mom would melt bacon grease in the skillet and dip the biscuit top in the grease before turning the bisuit over and placing it in the skillet. Makes a really good old-fashioned biscuit! I think Mom must have doubled her recipe to feed all of us.
