Steps:
- Preheat oven to 350 degrees with the rack in the middle position.
- Melt the butter in a large microwave safe bowl.
- Add the brown and white sugars and let cool a bit.
- Add egg, baking powder, baking soda, salt, cinnamon, nutmeg, and vanilla.
- Add flour and mix. Then add the chocolate chips and oats and mix everything up. The dough will be quite stiff.
- With a spatula spread dough evenly into a greased 8x8 baking pan.
- Bake at 350 for 25- 30 minutes.
- Cut into bars when cool.

- Preheat oven to 375°.
- Mix together the dry ingredients and set aside.
- Use an electric mixer to beat the butter, sugars, egg and vanilla together. Mix for at least 2-3 minutes.
- Add the dry ingredients to the butter/sugar mixture and mix until combined.
- Add the chocolate chips and mix them in.
- Press the cookie dough into a greased 9X13 pan until evenly distributed.
- Bake for 18-20 minutes, or until the tops and edges start to turn a light golden brown. Cool, then slice and serve!

- In a large mixing bowl beat together the butter, brown sugar, and white sugar until smooth and light.

- In a large bowl, cream shortening and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in molasses and vanilla. - Have ready, ungreased, two 9x9" square baking pans or one 15x10" jelly-roll pan.
- Preheat oven to 375 degrees.
- In a large glass or plastic mixing bowl, soften the butter (a few seconds in the microwave); it should be very soft but not completely melted. Using a heavy spoon, beat in both sugars, then beat in the eggs until smooth. Beat in the vanilla, baking soda and salt. Mix in the flour just until combined, then stir in the oatmeal and chocolate chunks.
- Spoon the cookie dough into ungreased baking pans. Using the back of the spoon, lightly spread the dough, leaving it a little higher at the sides and corners than in the middle. Bake on the middle rack of the oven for 17-20 minutes, until set in the middle and brown around the edges. Because of the brown sugar, this cookie gets much darker than "golden brown" when it is done.
- Cool in the pan. Cut into bars to serve. Take some to work or school to give away, because the large amount of oatmeal makes them dry out in a few days if you have leftovers.
