Grated lemon peel adds flavor to this basic muffin recipe for citrus-accented homemade muffins you can achieve quickly and easily.

2 cups all-purpose flour
½ cup white sugar
3 teaspoons baking powder
1 tablespoon grated lemon zest
½ teaspoon salt
¾ cup milk
⅓ cup vegetable oil
1 egg

Steps:

  • Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
  • In a medium bowl, combine flour, sugar, baking powder, lemon zest and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
  • Fill cups 2/3 full. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

1 medium lemon
1 cup sugar
1 teaspoon baking soda
1 cup plain buttermilk or 1 cup yogurt
1/4 cup fresh lemon juice
1/2 cup butter
2 large eggs
2 cups flour
3/4 cup chocolate chips

Steps:

  • Finely grate lemon peel, avoiding pith.
  • Beat butter and sugar until pale and creamy. Add eggs, one at a time, beating well after each. Stir in baking soda and grated peel. Fold in half the flour, then half the buttermilk. Repeat. Fold in chocolate chips.
  • Scoop 1/4 cup batter into prepared muffin tins.
  • Bake at 375 degrees for 20-25 minutes. Remove from oven.
  • Brush lemon juice over hot muffins until used up. Sprinkle with sugar. Let stand 5 minutes before removing from pans.

1 1/4 cups granulated sugar, divided
2 teaspoons baking powder
2 eggs
3/4 cup milk
1/2 cup butter, melted
2 teaspoons grated lemon zest
1/4 cup fresh lemon juice
1/2 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 375*. Grease muffin pan or line with paper liners.
  • In a medium bowl, combine flour, 1 cup of the sugar and baking powder.
  • In a large bowl, whisk together eggs, milk, butter, lemon zest and lemon juice. Stir in flour mixture, mixing just until combined. Fold in the chocolate chips. Do not overmix.
  • Scoop batter into prepared muffin cups. Sprinkle remaining sugar evenly over tops.
  • Bake in preheated oven for 20 to 24 minutes or until puffed, light golden and a skewer inserted into center comes out clean. Let cool in pan on rack for 5 minutes. Remove from pan and let cool completely on rack.

3/4 cup milk
1 tablespoon vegetable oil
2 teaspoons pure vanilla extract
1 cup semisweet chocolate chips
Serving suggestions: strawberry jam

Steps:

  • Preheat the oven to 350 degrees F.
  • Line the muffin tin with paper liners and lightly coat with cooking spray. (This may seem like overkill, but otherwise the muffins will stick.)
  • Whisk the flour, cocoa, baking powder, baking soda and salt in a medium bowl. In another medium bowl, lightly whisk the eggs, then whisk in the butter, brown sugar, milk, oil and vanilla.
  • Quickly fold the wet ingredients into the dry with a rubber spatula. Just before the batter comes together, fold in the chocolate chips¿don¿t mix the batter too much or the muffins will be tough. Divide the batter among the muffin cups (1/4 cup of batter per muffin). Bake until a tester inserted in the center comes out clean, about 25 minutes. Turn the muffins out of the tins, cool on a rack. Serve slightly warm with jam.

3/4 cup semisweet chocolate chips
TOPPING:
1/4 cup semisweet chocolate chips
2 tablespoons brown sugar
2 tablespoons chopped walnuts, optional

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in yogurt and vanilla. Combine the flour, baking soda, baking powder and salt; add to the creamed mixture just until moistened. Fold in chocolate chips. 1/3 cup baking cocoa
