CHOCOLATE COCONUT GRANOLA BITES
These four-ingredient bites are so awesome. They're a little crunchy after the chocolate has hardened a bit. The making of them can get a little messy, but it only means you get to lick the chocolate from your fingers constantly and nobody is there to stop you.

Steps:
- Place the chocolate chips in a double boiler or a heatproof bowl set over (but not in) a small saucepan with about an inch of simmering water and melt over medium heat, stirring constantly.
- Remove from the heat and add the granola and flax seeds and stir to combine. Stick the bowl in the freezer to cool and harden the mixture a little bit, about 6 minutes. This makes it easier to roll the mixture into little balls.
- Arrange the coconut on a large baking sheet. Using your hands or an ice cream scoop, scoop out a small amount of the chocolate-granola mixture and roll it around in the coconut, making little balls. Little bites. Little ball bites. Repeat with the remaining chocolate-granola mixture and coconut.
- Place the tray back in the freezer to harden, at least 5 minutes. Store the bites in an airtight container at room temperature for 3 days.

CHOCOLATE CHIP GRANOLA BARS
This recipe originates from the Whole Foods Market website. After a few tries, I tweaked the recipe slightly. Now these granola bars are a family favorite, and I feel good about feeding them the wholesome treat. Use organic ingredients if you can! (Preparation time includes toasting and cooling the oats.)

Steps:
- Preheat oven to 350 degrees.
- Spread oats onto an un-greased cookie sheet and bake for 15 minutes, stirring a couple of times.
- Mix oil, honey and vanilla in a large bowl.
- Add cooled oats, chocolate chips and nuts (if using) and mix well. (Note: If the oats are still warm at all, the chocolate chips will melt.).
- Line a 9x13 baking dish with parchment paper and mist with oil.
- Spread the mixture evenly onto the parchment.
- Lay a sheet of waxed paper over the mixture and press to compact. (I use the palms of my hands to start, and then I use the bottom of a drinking glass to make the surface as smooth as possible.).
- Remove the waxed paper and use a rubber spatula to press in any of the oats that may have "straggled" up the sides of the dish.
- Bake for 20 minutes.
- Cool completely and lift parchment from the dish.
- Cut into 16 bars.

- In a large pot, bring the butter, honey, coconut sugar and molasses on high heat. Once boiling, boil until it just begins to thicken - about 45 seconds to a minute.
- Remove from the heat and whisk in the vanilla until well mixed. Finally, stir in all the remaining ingredients except the chocolate chips until everything is coated.
- Press the mixture VERY FIRMLY into the prepared pan (I find using SLIGHTLY damp hands works super well) and then sprinkle with the chips, lightly packing them in.

- Combine all ingredients in a large bowl. Order doesn’t really matter. Mix well until all ingredients are fully incorporated.
- Using a small cookie scoop, or rolling them by hand, form dough into one-inch balls. They don’t have to be perfect balls. Mine are usually more like semi circles (just because that’s the shape of the scoop).
- Refrigerate for 1-2 hours, then serve. This step is super important! Once chilled, they hold together much better and are easier to handle and eat.

- Pre-heat oven to 325º. Spray a mini muffin pan (see post for notes). In a medium bowl, thoroughly mix the oats, coconut, nuts, and seeds. In another bowl, whisk together the maple syrup, oil, spice and egg whites. Pour the liquid into the dry mix and story until the dry mix is completely and evenly coated. Stir in the chocolate chips.
- In the sprayed mini muffin pan, pack approximately 2 tablespoons of the granola into each well. Tamp down firmly. Bake approximately 25 minutes (that is what it takes in my convection oven), until firm and the edges are just a light golden brown.

- Combine peanut butter and honey in a separate bowl and stir until smooth. (If your PB is hard or cold, you can do this in a small saucepan over medium low heat. It just takes a minute to warm up the peanut butter and get the mixture smooth.) Pour the peanut butter-honey mixture over the granola mix and stir until everything is well coated.
- Wet your hands with water and roll into balls - I did mine about 1-inch wide (a little bigger than a golf ball). To make them easier to roll, you can put the mixture in the fridge for 20-30 minutes to let it firm up a bit. If I'm making these ahead, I'll do that step. If I'm making them with M, we roll and eat immediately.
- Store in the fridge in an air-tight container. You can use wax paper between the layers to keep the balls from sticking to each other. Enjoy!
