A super easy no frosting cake that is delicious warm from the oven. One of my family's favorite cakes of all time.

2 cups flour
1 1/2 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups sour cream
3/4 cup margarine or 3/4 cup butter, softened
1 teaspoon vanilla
3 eggs
1/2 cup sugar
1 teaspoon cinnamon
1 (6 ounce) package chocolate chips (mini or regular)

Steps:

  • Heat oven to 350 degrees.
  • Grease (not oil) a 13 x 9 pan.
  • In large bowl, combine first 9 ingredients.
  • Mix well by hand or use a mixer at medium speed for about 3 minutes.
  • Pour half of the batter (about 2 1/2 cups) into the prepared pan.
  • In separate small bowl, combine the sugar and cinnamon.
  • Sprinkle half of the sugar mixture and chocolate chips (1/2 cup) over batter.
  • Repeat with remaining batter, sugar mixture, and chocolate chips.
  • Bake at 350 degrees for 30-35 minutes or until toothpick inserted in center comes out clean.

1 cup chopped dates
1-1/2 teaspoons baking soda, divided
1-1/2 cups boiling water
3/4 cup shortening
1-1/2 cups sugar, divided
1 large egg
2 cups all-purpose flour
1/2 teaspoon salt
2 cups semisweet chocolate chips
1/2 cup chopped pecans

Steps:

  • Place dates and 1 teaspoon baking soda in a large bowl. Stir in boiling water; cool completely. , In another large bowl, cream shortening and 1 cup sugar. Beat in egg. Combine the flour, salt and remaining baking soda; add to creamed mixture alternately with date mixture., Pour into a greased 13x9-in. baking pan. Sprinkle with remaining sugar; top with chocolate chips and nuts. , Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

1/2 cup semisweet chocolate chips

1 tablespoon butter or margarine, softened
1 3/4 cups Gold Medal™ all-purpose flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
2/3 cup vegetable oil
1 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon salt
2 eggs

Steps:

  • In large bowl, pour boiling water on dates. Stir in 1 teaspoon baking soda. Cool about 15 minutes or until lukewarm.
  • In small bowl, mix all topping ingredients; set aside.
  • Heat oven to 350°F. Stir all cake ingredients into date mixture. Pour into ungreased 9-inch square pan. Sprinkle with topping.
  • Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool completely, about 2 hours.

1 cup dates, chopped
1 tsp. baking soda
1 cup plus 3 Tablespoons hot water
1 cup shortening
1 cup sugar
2 eggs
2 cups flour
1/2 tsp. salt
1 tablespoon cocoa
1 tsp. vanilla
1 cup semi sweet chocolate chips
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees. Place chopped dates in a small bowl and sprinkle with baking soda and pour on hot water. Set date mixture aside to cool. Using your mixer cream shortening and sugar. Add eggs and mix about 30 seconds. Add cooled date mixture. Combine flour, salt and cocoa and gently mix in. Add vanilla and mix until combined. Stir in 1/2 cup of the chocolate chips. Pour into greased 9" x 13" pan. Sprinkle pecans and remaining chocolate chips over the cake. Bake approximately 40 minutes until toothpick inserted in the middle comes out clean. Enjoy!

This is a recipe that has been around a long time but every time I make it people rave about it. Very tasty and not your typical cake.

1 1/2 c chopped dates
1 1/2 c boiling water
1 tsp baking soda
1 c sugar
3/4 c shortening
2 eggs
1 1/2 c all purpose flour
1/2 tsp salt
1 tsp soda
1 tsp vanilla
TOPPING
1/2 c chopped walnuts
1 c semi-sweet mini chocloate chips
1/2 c brown sugar, firmly packed

Steps:

  • 1. Chop dates and place in a medium size heat proof bowl. Add baking soda and pour boiling water over dates and soda. Stir and cool. Water will foam up.
  • 2. Cream shortening and sugar until well creamed. Add eggs and beat until smooth
  • 3. Mix together dry ingredients in separate bowl.
  • 4. Drain cooled water from dates and alternately add flour and date water to creamed sugars. Start and end with flour adding a little of each at a time. Stir in vanilla.
  • 5. Grease and flour a 9x13 cake pan. Pour batter in pan.
  • 6. Mix topping ingredients together in medium size bowl and sprinkle on top of batter.
  • 7. Bake at 350 degrees for 30-35 minutes. Bake until toothpick comes out with a moist crumb on the toothpick. Do not overbake.

1 cup white sugar

1 pinch salt

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch baking pan.

This was my favorite birthday cake growing up as a young boy. Everytime my Grandma Laura would come to visit us in Taos, NM, she'd pick one up from Dory's Bakery and bring it over. I was able to get ahold of Dory long after she'd sold the place and surprisingly she still remembered me and my mother, Joan, who was her friend. She gladly gave me the recipe although the measurements were obviously for multiple cakes, I quartered it and came up with the right increments for just one really large one or a couple regular ones. This cake doesn't include frosting but was sprinkled with powdered sugar and served. Believe me when I tell you the frosting is not missed! This coming from a former little boy with a hell of a sweet tooth!

2 Tbsp. cornstarch
3/4 tsp. salt
3/4 tsp. baking powder

1 cup unsalted butter, softened
1-1/4 cups granulated sugar
2 whole eggs plus 1 egg white
2 tsp. vanilla
1 cup buttermilk
3/4 cup semi-sweet chocolate chips
For the Frosting:
5 cups powdered sugar
1 cup BAKER'S 100% Pure Cocoa Powder
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/2 cup butter, softened
2 tsp. vanilla
1/3 cup whole milk

Steps:

  • Cake:
  • Heat oven to 350°F. Grease, lightly flour and line the bottom of two 9-inch round cake pans with parchment paper.
  • In a medium-size bowl, whisk together the flour, cornstarch, salt, baking powder and baking soda. Set aside.
  • In the bowl of a standing mixer or in a large bowl with a hand-held mixer, cream together the butter and granulated sugar on high speed until fluffy, about 3 minutes, scraping the side of the bowl as necessary.
  • Reduce the mixer to low speed. Add the whole eggs and the egg white, one at a time, to the creamed butter mixture.
  • Add the vanilla and buttermilk; mix until well combined.
  • In 3 separate additions, add the dry ingredients to the wet, mixing after each just until combined. Fold in the chocolate chips.
  • Pour the cake batter evenly between the two cake pans; place in the oven.
  • Bake for 22 to 25 min. or until you insert a toothpick or a cake tester into center of cake, and it comes out clean.
  • Cool the cakes in the pans on wire racks until completely cool.
  • Frosting:
  • Add the powdered sugar, cocoa powder, PHILADELPHIA Cream Cheese, butter, and vanilla to the bowl of a standing mixer or to a large bowl with a hand-held mixer. Mix together, increasing the speed of the mixer gradually.
  • Whip the frosting ingredients together until fluffy, about 2 min. Gradually add the whole milk, whipping after each addition. Keep adding the milk until you reach the desired consistency.
  • Place the first cooled cake layer on a cake stand or plate.* Spread a layer of frosting on top of the first layer, and then place the second layer on top of the first.
  • For a smooth cake, apply a crumb coat of frosting. To apply the crumb coat, apply a thin amount of frosting all over the cake. The cake should still show through and crumbs should be sticking to the frosting. Refrigerate the cake for 20 min. This seals the crumbs to the cake so the final layer of frosting goes on evenly.
  • After the crumb coated cake has chilled, apply the rest of the frosting and decorate as desired.
  • For easy slicing, chill the cake an hour before serving.
