TOFFEE OATMEAL CHOCOLATE CHIP COOKIES
Toffee Oatmeal Chocolate Chip Cookies are hands down the best oatmeal cookie variation there is! Perfectly balanced flavors with caramelized toffee bits and milk chocolate, and always soft & chewy on the inside while barely crisp around the edges. These cookies are impossible to resist!

- Heat oven to 350 degrees. Line a large baking sheet with parchment paper.
- In a large bowl, beat the butter and brown sugar together until creamy. Add the eggs and vanilla and beat again, scraping sides of bowl as needed, until combined.
- Add the flour, baking soda, baking powder, and salt, stirring just to combine. Mix in oatmeal, toffee bits, and milk chocolate chips.
- Drop dough by rounded spoonfuls onto the prepared baking sheet. I prefer making these cookies extra large with my cookie scoop, which is about 2 tablespoons of dough per cookie.
- Bake for 12-14 minutes (if making large cookies) or 8-10 minutes (if you are making smaller ones, just until light golden brown around the edges. I prefer to underbake slightly for a chewier, softer cookie.
- Cool cookies on the baking sheet for a few minutes before transferring to wire racks to cool completely.

- Mix sugars, butter and shortening until light and fluffy. Mix in egg and vanilla. Stir in flour, baking soda, baking powder and salt. Stir in chocolate chips and brickle chips.

- Preheat oven to 350 degrees Fahrenheit. Line cookie sheets with parchment paper; set aside.
- In a medium bowl, sift together flour, baking soda and salt. Stir in oats. Set aside.

CHOCOLATE TOFFEE NO-BAKE COOKIES

- Line a baking sheet with wax paper. Combine the oats, peanut butter, bitter and semisweet chocolate chips, toffee bits, butter and salt in a medium saucepan. Cook over medium heat, stirring frequently, until the chocolate chips melt, 3 to 5 minutes.
- Scoop heaping tablespoons of batter onto the baking sheet and sprinkle each cookie with extra toffee bits. Freeze for 15 minutes before serving. The cookies can be stored in the refrigerator in an air-tight container for 1 week.

- Preheat your oven to 375° line your baking sheets with parchment or a silicon mat.
- In a small bowl, whisk together the flour, baking soda, cinnamon and salt. Set aside.
- In the bowl of your stand mixer - fitted with your paddle attachment, add in the softened butter and mix until creamy. Next, add in the dark brown sugar and mix until light and creamy, about 2 minutes.
- Then add in the vanilla and one egg at a time, mixing well after each egg. Scrape down the sides and bottom of the bowl.
- Next add in half of the flour mixture, mixing on low until all ingredients are incorporated. Then repeat with the remaining flour. Scrape down the sides and bottom of the bowl.
- Gradually add in the quick oats, mixing until combined. Then with a sturdy spatula, stir in by hand the toffee bits, coconut and chocolate chips. Scrape down the sides and bottom of the bowl one last time.
- Use a (2 or 3 tablespoon**) cookie scoop to measure the cookie dough and place an inch or so apart on prepared cookie sheets.
- Bake for 8-10 minutes and let cool for at least 5 minutes before removing from pan as the toffee may stick.

- Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper. Whisk the flour, baking soda and salt in a medium bowl. Beat the butter, espresso powder and brown sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 3 minutes. Beat in the egg and vanilla until smooth. - Heat oven to 350 degrees. Sift together flour and baking soda, and set aside. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugars on medium-high speed until light and fluffy, 2 to 3 minutes. Scrape down the sides of the bowl once or twice during mixing. Add egg, and mix on high speed to combine. Add vanilla extract; mix to combine. Scrape down the sides of the bowl.
- Add the sifted flour a bit at a time on a low speed until well combined. Add oatmeal, cherries, chocolate, and toffee pieces; mix to combine.
- Divide dough into three equal portions, and roll into logs using plastic wrap, approximately 1 1/2 inches in diameter. To bake, cut logs into 3/4-inch pieces. Bake on parchment-lined baking sheets, until golden brown, 8 to 10 minutes. Remove from oven, and transfer to a baking rack to cool.
