1/2 cup (1 stick) butter, softened
1 cup light brown sugar
3 tablespoons granulated sugar
1 large egg
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons instant espresso coffee powder
1 1/2 cups semisweet chocolate chips

Steps:

  • Preheat oven to 300 degrees F.
  • Cream the butter with the sugars using an electric mixer on medium speed until fluffy, approximately 30 seconds. Beat in the egg and the vanilla extract for another 30 seconds.
  • In a mixing bowl, sift together the dry ingredients and beat into the butter mixture at low speed for about 15 seconds. Stir in the espresso coffee powder and chocolate chips.
  • Using a 1-ounce scoop or a 2-tablespoon measure, drop cookie dough onto a greased cookie sheet about 3 inches apart. Gently press down on the dough with the back of a spoon to spread out into a 2-inch circle. Bake for about 20 minutes or until nicely browned around the edges. Bake a little longer for a crispier cookie.
  • Serve warm with a glass of milk.

Steps:

  • Heat oven to 325°F.
  • Combine flour and baking soda. Beat butter and sugars in large bowl with mixer until light and fluffy. Blend in coffee, egg and vanilla. Gradually beat in flour mixture until well blended. Stir in chopped chocolate and nuts. Refrigerate 30 min.
  • Roll dough into 60 (1-inch) balls; place, 2 inches apart, on baking sheets.
  • Bake 10 to 12 min. or until golden brown. Cool on baking sheet 1 min. Remove to wire racks; cool completely.

Food.com wasn't letting me import this recipe. This is my spin on the original. *** REMINDER the best mug cookies are recipes that have eggs in it! So don't expect heaven in a mug. BUT if you ever find yourself craving this but are out of eggs then this is your recipe! Place butter and milk in a coffee cup or mug. Microwave for 30 seconds to melt the butter and warm the milk. Stir in brown sugar and vanilla extract then mix in flour, chocolate chips and pinch of salt. Microwave for about 1 minute on HIGH. Allow to cool for 5 minutes before serving. This is the BEST thing ever. I'm always craving something sweet and baking a full sheet of cookies and/or a cake is too much. This is my favorite recipe because it has no egg! It's also pretty moist which I personally like but if it is too gooey try adding a few seconds until you find what works best for you! I use large oversized mugs so I can add a scoop of Buttercrunch Blue Bell Ice Cream.. Yummmm!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

1 Tbsp butter
1 Tbsp white sugar
1 Tbsp brown sugar, firmly packed
1 egg yolk (from small eggs)
several drops of vanilla extract
pinch of salt
1/4 c flour, (a "scant" 1/4 cup)
2 Tbsp chocolate chips
ice cream, whipping cream and cherries (optional)

Steps:

  • 1. In a coffee cup add 1 tablespoon of butter and melt in microwave (about 20 seconds)..remove from microwave and add; white sugar, brown sugar, several drops of vanilla extract and stir until blended well...add egg yolk, stir again, then add the scant 1/4 cup of flour and salt, stir one more time before adding the 2 T. of chocolate chips and stir one last time. YOU MUST DO IT IN THIS ORDER...or it won't turn out right. (trust me I know..I did it my way, and oh brother what a mess...directions are for a reason...learned my lesson..lol!)~Picture to the left is the melted butter..before adding other ingredients.
  • 2. Microwave for 50-60 seconds..if using a large base cup then 50 seconds, if using a shallow deep cup then 60 seconds. ~Picture to the left is of the batter once you add all the other ingredients except the chocolate chips..which you add right after blending as shown in the cup.
  • 3. REmove from Microwave and cool for a couple of minutes....eat immediately, or add vanilla ice cream to the mug with chocolate syrup or whipping cream and a cherry on top.
  • 4. I ate mine after about 2 minutes out of the microwave plain..it was soft, yet it was amazing..as I ate it and it started cooling it got the crunch just like a baked chocolate chip cookie ( I have a picture of a spoonful of the cooled crunchy cookie on it, below the main picture)...What a great find, I will do this again and again...it is that good!

1 c. packed dark brown sugar
1/2 c. granulated sugar
2 large eggs
1 tbsp. vanilla extract
2 c. plus 2 tablespoons all-purpose flour
2 heaping teaspoons instant coffee granules
1 tsp. baking soda
1 tsp. kosher salt
8 oz. semisweet chocolate, chopped into chunks
1/2 c. finely chopped pecans (optional)
1 12-ounce bag white chocolate chips
3 tbsp. canola oil
1/2 tsp. vanilla extract

Steps:

  • For the cookies: Melt 1 stick of butter in a medium skillet over medium heat. Let it bubble up for 3 to 4 minutes, swirling the pan to keep the butter moving around. When the butter is a medium golden brown, remove the pan from the heat (the butter will continue browning in the pan over the next 30 seconds or so). Pour the butter and any solids in the bottom of the pan into a heatproof bowl and allow it to cool completely, about 30 minutes.
  • Beat the remaining stick of butter, the brown sugar and granulated sugar in a large bowl with a mixer on medium-high speed until fluffy, 3 to 4 minutes. Reduce the speed to low and beat in the eggs and vanilla until smooth, scraping down the bowl if necessary to make sure everything is incorporated.
  • With the mixer on medium-low speed, slowly drizzle in the cooled browned butter and mix until combined, about 1 minute.
  • In a separate bowl, whisk the flour, instant coffee, baking soda and salt. With the mixer on low speed, slowly add the flour mixture to the dough and beat until totally incorporated, about 2 minutes. Stir in the chocolate chunks and pecans, if using, with a wooden spoon.
  • Preheat the oven to 375˚ and line 2 baking sheets with parchment paper. Scoop heaping tablespoonfuls of dough onto the prepared pans, about 2 inches apart. Refrigerate until firm, about 15 minutes. Bake the cookies until golden brown, 9 to 10 minutes. Let cool 5 minutes on the baking sheets, then remove to a rack to cool completely.
  • For the glaze: Combine the white chocolate chips and oil in a microwave-safe bowl and microwave in 30-second intervals, stirring, until melted. Stir in the vanilla. Pour the white chocolate into a resealable plastic bag and snip off a corner. Drizzle over the cookies. Let set 15 minutes.

Steps:

  • Put the butter in a mug and melt in the microwave until it has melted but is not boiling. This should take 30-60 seconds.
  • Take it out and add the sugar, salt and vanilla extract, mix until well-combined. Then add the egg yolk and mix in until there are no traces of egg are seen. Mix in the flour and then fold in the chocolate chips. (I suggest 1 tbsp of chocolate chips otherwise it is too sickly).
  • Microwave for 40 seconds (maximum 50 seconds). The cookie may look under cooked but do not overheat!
  • Serve warm with a dollop of ice cream. Serves 1 or 2 if there are smaller portions.
