- Let egg and cream cheese come to room temperature.
- Preheat mini waffle iron.
- In a small bowl, mix coconut flour, powdered swerve, cocoa powder, and baking powder.
- in another bowl, beat eggs lightly.
- Beat in the soft cream cheese, vanilla extract, and vanilla stevia until combined.
- Stir egg mixture into coconut flour mixture.
- Stir in chocolate chips.
- Pour half of mixture into mini waffle maker; cook 4-5 minutes.
- Repeat with the other half of mixture for 2 chaffles.
- Serve with whipped cream, sugar free maple syrup, or a dusting of powdered swerve, or spread with peanut butter.
