2 tablespoons flour
1 tablespoon sugar
plus 1 teaspoon
2 tablespoons cocoa powder
¼ teaspoon baking powder
A pinch of salt
1 tablespoon vegetable oil
2 tablespoons milk
1 sugar-free chewy caramel

Steps:

Place the flour, sugar, cocoa powder, baking powder and salt into an 8-ounce mug and mix with a fork until combined
Add the vegetable oil and milk, and mix until smooth
Place a sugar-free chewy caramel into the middle of the cake batter then microwave for 1 minute and 30 seconds
Serve warm

1/4 cup all-purpose flour
3 tablespoons sugar
2 tablespoons unsweetened cocoa powder
1/4 teaspoon baking powder
1/8 teaspoon kosher salt
2 tablespoons heavy cream
2 tablespoons vegetable oil
2 (heaping) tablespoons 3-Ingredient Microwave Caramel Sauce or storebought caramel sauce, divided
Vanilla ice cream (optional; for serving)
1 teaspoon coarsely chopped roasted, salted peanuts
Special Equipment
A 12-ounce microwave-safe mug (preferably thin-walled) or deep bowl

Steps:

Mix flour, sugar, cocoa powder, baking powder, and salt in mug. Add cream, oil, and 3 Tbsp. water and mix until smooth. Using a spoon, make a well in the center; spoon half of the caramel sauce into well. Microwave on high 60 seconds. Carefully remove from microwave. Top with ice cream (if desired), peanuts, and remaining caramel sauce. Serve immediately.

Splash of vanilla
1 tablespoon semisweet chocolate chips
2 individually wrapped soft caramel squares, cut in half
1 heaping tablespoon marshmallow creme or vanilla ice cream, for serving
Caramel sauce, for serving

Steps:

Put the flour, sugar, cocoa, pecans, baking powder and salt in a 12-ounce microwave-safe mug. Combine well with a fork. Add the milk, vegetable oil and vanilla and mix well until smooth. Add the chocolate chips and caramel pieces and submerge them in the batter. Wipe the mug to clean.
Microwave on high for 90 seconds. Let cool for 1 to 2 minutes in the microwave before topping with the marshmallow creme (or vanilla ice cream) and drizzling with caramel sauce.

Steps:

Special equipment: a 12-ounce microwave-safe ceramic mug and a microwave oven
Put the flour, sugar, cocoa powder, baking powder and salt if using in a 12-ounce microwave-safe ceramic mug. Blend thoroughly with a fork. Add the milk, vegetable oil and vanilla if using and blend until smooth. Stir in the chocolate chips.
Microwave on high for 90 seconds. Do not overcook or the cake will be dry. Let cool for 2 to 3 minutes before eating.

300g butter , plus extra for greasing
300g light muscovado sugar
3 large eggs
1½ tsp baking powder
85g cocoa powder
225g plain flour
225ml soured cream
300ml pot double cream
5 tbsp dulce de leche or caramel sauce
25g caramel flavoured chocolate , finely chopped (we used Lindt)

Steps:

Heat oven to 180C/160C fan/gas 4. Lightly grease 2 x 23cm loose-bottom cake tins and line with a circle of baking parchment. Beat together the butter and sugar until pale and creamy. Add the eggs, one at a time, beating well between each addition, then add the baking powder, cocoa and a third of the flour. Mix well to combine, then stir in half the soured cream. Alternating between adding the flour and soured cream, mix everything until just combined. Spoon into the prepared tins, then smooth over the surface with a spoon.
Bake for 30 mins or until the cakes are firm to touch and a skewer inserted into the centres comes out clean. Leave to cool in the tins for 5 mins, then turn out onto a rack and cool completely.
When you're ready to serve, whip the double cream with 2 tbsp Dulce de leche until soft peaks form. Place 1 cake on a serving plate and spread with half the cream, then drizzle over the remaining Dulce de leche. Top with the other cake, then spread the remaining cream on top. Sprinkle with the chocolate. Chill until ready to serve.
