LAVENDER LEMONADE (FOR ADULTS)
Lemonade with a kick-not for the kiddies! Cook time is refrigerating time.

Steps:
- 1. Bring 2 1/2 cups water to a boil in a 2-qt saucepan. Reduce heat to medium and add sugar, stirring until dissolved. Add lavender stems and remove from heat.
- 2. Cover the pot and allow mixture to cool about 10 minutes.
- 3. Remove lavender stems from syrup and strain syrup to remove small pieces of flower.
- 4. In a large pitcher, combine lemon juice, remaining water and lavender syrup and stir well. Chill for about 1 hour in refrigerator.
- 5. Add vodka and stir. Serve over ice in tall glasses, garnished with lemon slices.

- Place the lavender in a pitcher; pour the boiling water over the lavender; cover with plastic wrap and allow to steep 10 minutes; strain and discard the lavender from the water and return the water to the pitcher. Add the cold water, lemon juice, and sugar to the pitcher and stir until the sugar dissolves. Refrigerate until serving.

Lavender lemonade is a lovely spring and summer beverage. This simple recipe uses fresh-squeezed lemons and lavender honey syrup to capture the floral flavor.

- Gather the ingredients.
- In a small saucepan, combine 1 cup of water and the lavender. Bring to a boil .
- Reduce the heat. Stir in the sugar until dissolved, then stir in the honey. Simmer for 10 minutes.
- Remove from the heat, cover, and let steep and cool for at least 1 hour, or until the flavor reaches your desired intensity.
- Strain out the lavender using a fine-mesh strainer layered with cheesecloth .
- Bottle and store in the refrigerator for up to one week.
- Juice 5 or 6 lemons; enough for about 1 1/2 cups of juice. Strain the juice through a fine-mesh strainer to remove seeds and pulp.
- In a pitcher, combine 1 cup each of the lavender syrup and lemon juice along with 4 cups of cold water. Stir well, taste, and add more of any ingredient to your preference.
- Serve over ice and garnish with lavender sprigs and lemon slices. The lavender lemonade can be stored with a lid in the refrigerator for about one week.
- Enjoy.

- Using a vegetable peeler, remove zest from two lemons, leaving white pith behind. Squeeze all of the lemons for 2/3 cup juice and set aside. In a large pot bring 5 1/2 cups of water and zest to a boil over high heat. Stir in the lavender. Partially cover the pot, lower the heat, and simmer for 10 minutes.
- Meanwhile, place a large strainer lined with cheesecloth or a damp paper towel over another pot or heat-proof bowl. Strain tea, pressing on herbs to extract all liquid. Stir in honey until dissolved. Stir in lemon juice. Let cool completely, about 45 minutes. Fill four tall glasses with ice. Pour tea over ice and serve immediately.

- Place ice cubes into a 2 quart pitcher. Place the lavender into a bowl, and pour boiling water over it. Allow to steep for about 10 minutes, then strain out the lavender and discard. Mix the sugar into the hot lavender water, then pour into the pitcher with the ice.
- Squeeze the juice from the lemons into the pitcher, getting as much juice as you can. Top off the pitcher with cold water, and stir. Taste, and adjust lemon juice or sugar if desired. Pour into tall glasses, pull up a lawn chair and a good book, and relax!
