1 box chocolate cake mix, (both 15 ounce and 18.5 ounce work)
1 box (18.3 ounces) fudge brownie mix,
4 eggs, (room temperature)
1 ¼ cup water
1 cup vegetable oil
1 cup heavy whipping cream
1 bag (12 ounces) semi sweet chocolate morsels

Steps:

  • Heat oven to 350°F. Prepare a bundt pan with bakers spray or use the butter/flour method.
  • Combine first five ingredients in a large bowl and whisk for 2 minutes or until lumps are mostly gone.
  • Pour batter into prepared bundt pan and bake for 50-55 minutes. Check at 45 minutes. A toothpick inserted should be removed with a few crumbs, not clean.
  • When done baking, remove cake and allow to cool in pan for up to five minutes. Carefully turn cake out onto a cooling rack and cool for 30 minutes more.
  • Place heavy whipping cream in a large microwave safe bowl and heat for about 2 minutes. You want the cream to be just boiling.
  • Carefully pour chocolate morsels into cream... it may rise up and bubble and this is ok.
  • Let sit for 5 minutes. Whisk the chocolate and cream until shiny and smooth, about 1 minute.
  • Pour over cooled cake and serve.

100g butter
125g caster sugar
75g light brown or muscovado sugar
125g plain chocolate (plain or milk)
1 tbsp golden syrup
2 eggs
1 tsp vanilla extract/essence
100g plain flour
½ tsp baking powder
2 tbsp cocoa powder

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Grease and line a 20cm cake tin.
  • Place the butter, caster sugar, brown sugar, chocolate and golden syrup in the pan and melt gently on a low heat until it is smooth and lump-free.
  • Remove the pan from the heat.
  • Break the eggs into the bowl and whisk with the fork until light and frothy. 5 Add the eggs, vanilla extract or essence, flour, baking powder and cocoa powder to the chocolate mixture and mix thoroughly.
  • Put the mixture into the greased and lined cake tin and place on the middle shelf of the oven. Bake for 25-30 mins.
  • Remove and allow to cool for 20-30 mins before cutting into wedges and serving.
  • Serve with cream or ice cream and plenty of fresh fruit.

1 box fudge brownie mix
4 large eggs
1 1/4 cups water
1 cup vegetable oil (or canola oil)
1/2 cup mayonnaise
1 cup chocolate chips (I used semi-sweet chocolate chips but you could use milk chocolate or dark chocolate)
2 cups chocolate chips (I used semi-sweet chocolate chips but you could use milk chocolate or dark chocolate)
1 cup heavy whipping cream

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl combine chocolate cake mix, brownie mix, eggs, water, oil, and mayonnaise. Stir or mix with a hand beater until well combined. Fold in chocolate chips and stir to combine.
  • Lightly spray a bundt pan with non-stick cooking spray. Spread batter evenly into a bundt pan.
  • Bake for 45 to 50 minutes or until a toothpick inserted into the center of the cake comes out clean, or with just a few crumbs.
  • Cool cake for 10 to 15 minutes; remove from bundt pan to cool the rest of the way on a cooling rack.
  • When cake is cooled, prepare ganache.
  • Heat heavy cream in a small saucepan or in a microwave-safe container until steaming.
  • Pour cream over chocolate chips in a small bowl.
  • Cover with a plate for 2 to 3 minutes to contain the heat and allow the chocolate chips to soften.
  • Whisk until the mixture forms a smooth, glossy ganache.
  • Pour ganache over cake and serve.

225g dark chocolate, broken into pieces
200g caster sugar
3 medium eggs, separated
65g plain flour
50g chopped pecan nuts

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Butter a 20-25cm cake tin and line with greaseproof paper.
  • Place 175g/6oz of the chocolate, plus the butter and sugar in a heavy-based pan and heat gently until melted, stirring occasionally. Leave to cool.
  • Whisk the egg yolks into the chocolate mixture, then add the flour, nuts and the remaining chocolate.
  • Whisk the egg whites until they form soft peaks, then gently, but thoroughly, fold into the chocolate mixture.
  • Pour into the prepared tin and bake in the centre of the oven for about 35-40 mins until crusty on top. Leave to cool, then run a knife around the sides and remove from the tin. Dust with icing sugar and serve warm with custard or ice cream or cold with cream.

Steps:

  • Preheat oven to 350 degrees F. Butter and flour an oversized, 12-cup muffin tin.
  • In a large bowl sift together the flour, cocoa powder, baking powder and salt. In a mixer with a whip attachment, cream the butter. Add the sugar and blend well. Add the eggs and vanilla, blending well. Add the dry ingredients and mix on low just until incorporated. Scoop into muffin tins and spread to cover the bottom.
  • Sauce: Whisk together the ingredients. Pour over and divide among the brownie batter filled muffin tins. Bake for 20 to 25 minutes until set. Serve at room temperature topped with whipped cream.

  • CAKE.

185g unsalted butter
185g best dark chocolate
85g plain flour
40g cocoa powder
50g white chocolate
50g milk chocolate
3 large eggs
275g golden caster sugar

Steps:

  • Cut 185g unsalted butter into small cubes and tip into a medium bowl. Break 185g dark chocolate into small pieces and drop into the bowl.
  • Fill a small saucepan about a quarter full with hot water, then sit the bowl on top so it rests on the rim of the pan, not touching the water. Put over a low heat until the butter and chocolate have melted, stirring occasionally to mix them.
  • Remove the bowl from the pan. Alternatively, cover the bowl loosely with cling film and put in the microwave for 2 minutes on High. Leave the melted mixture to cool to room temperature.
  • While you wait for the chocolate to cool, position a shelf in the middle of your oven and turn the oven on to 180C/160C fan/gas 4.
  • Using a shallow 20cm square tin, cut out a square of non-stick baking parchment to line the base. Tip 85g plain flour and 40g cocoa powder into a sieve held over a medium bowl. Tap and shake the sieve so they run through together and you get rid of any lumps.
  • Chop 50g white chocolate and 50g milk chocolate into chunks on a board.
  • Break 3 large eggs into a large bowl and tip in 275g golden caster sugar. With an electric mixer on maximum speed, whisk the eggs and sugar. They will look thick and creamy, like a milk shake. This can take 3-8 minutes, depending on how powerful your mixer is. You'll know it's ready when the mixture becomes really pale and about double its original volume. Another check is to turn off the mixer, lift out the beaters and wiggle them from side to side. If the mixture that runs off the beaters leaves a trail on the surface of the mixture in the bowl for a second or two, you're there.
  • Pour the cooled chocolate mixture over the eggy mousse, then gently fold together with a rubber spatula. Plunge the spatula in at one side, take it underneath and bring it up the opposite side and in again at the middle. Continue going under and over in a figure of eight, moving the bowl round after each folding so you can get at it from all sides, until the two mixtures are one and the colour is a mottled dark brown. The idea is to marry them without knocking out the air, so be as gentle and slow as you like.
  • Hold the sieve over the bowl of eggy chocolate mixture and resift the cocoa and flour mixture, shaking the sieve from side to side, to cover the top evenly.
  • Gently fold in this powder using the same figure of eight action as before. The mixture will look dry and dusty at first, and a bit unpromising, but if you keep going very gently and patiently, it will end up looking gungy and fudgy. Stop just before you feel you should, as you don't want to overdo this mixing.
  • Finally, stir in the white and milk chocolate chunks until they're dotted throughout.
  • Pour the mixture into the prepared tin, scraping every bit out of the bowl with the spatula. Gently ease the mixture into the corners of the tin and paddle the spatula from side to side across the top to level it.
  • Put in the oven and set your timer for 25 mins. When the buzzer goes, open the oven, pull the shelf out a bit and gently shake the tin. If the brownie wobbles in the middle, it's not quite done, so slide it back in and bake for another 5 minutes until the top has a shiny, papery crust and the sides are just beginning to come away from the tin. Take out of the oven.
  • Leave the whole thing in the tin until completely cold, then, if you're using the brownie tin, lift up the protruding rim slightly and slide the uncut brownie out on its base. If you're using a normal tin, lift out the brownie with the foil. Cut into quarters, then cut each quarter into four squares and finally into triangles.
  • They'll keep in an airtight container for a good two weeks and in the freezer for up to a month.

It's not finicky in the way some flourless chocolate cake can be, and you can mask any mistakes (though there's not much to go wrong here) with a dusting of fine cocoa powder or powdered sugar. Dollop with whipped cream or creme fraiche when you serve.

1 cup (2 sticks) (225 grams) unsalted butter, cut into small pieces, plus more for the pan
1/4 cup (60 milliliters) heavy cream
7 ounces (200 grams) 70 to 78 percent bittersweet chocolate, chopped
5 large eggs
1 cup (200 grams) sugar
1/2 cup (40 grams) Dutch-processed (or alkalized) cocoa powder, plus more for the pan and garnish
1/4 teaspoon fine sea salt
1 cup (240 milliliters) heavy cream (See Cook's Note)

Steps:

  • For the flourless chocolate cake: Preheat the oven to 350 degrees F (180 degrees C). Butter the bottom and sides of an 8- or 9-inch (20- or 23-centimeter) springform pan and dust it with cocoa powder. Tap out any excess.
  • Heat the butter and cream in a medium saucepan over low heat. When the butter is melted, add the chopped chocolate and stir frequently until melted and smooth.
  • In a separate bowl, whisk together the eggs, sugar, cocoa powder, and salt until even and a bit frothy, whisking for 2 to 3 minutes. Stir in the melted chocolate mixture until smooth and even.

Test with a spoon -- it should slide right off but still hold some shape. Use a whisk to finish it off, whipping a few times by hand until it just holds soft peaks -- but no further: It should dollop lusciously over any cake or pie.
  • Serve the cake warm or at room temperature with the whipped cream.
