CHOCOLATE BANANA MUFFINS

Chocolate Banana Muffins image

Rich and fudgy dark Chocolate Banana Muffins. These healthy whole wheat muffins are made without butter and NO refined sugar but taste moist and decadent!

Provided by Erin Clarke / Well Plated

Categories     Breakfast

Time 40m

Number Of Ingredients 14

1/3 cup coconut oil (or canola oil)
2 cups white whole wheat flour
2/3 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon espresso powder (optional for a more intense chocolate flavor)
1/2 teaspoon kosher salt
1 cup mashed ripe banana (about 3 medium-large bananas)
2 large eggs
3/4 cup milk (any kind you like (I used unsweetened almond milk))
1/3 cup honey
1/4 cup coconut sugar (or light brown sugar)
2 teaspoons pure vanilla extract
1/2 cup dark chocolate chips (plus additional for sprinkling on top (if desired))

Steps:

  • If using coconut oil, melt it now and let it come to room temperature. (If using canola oil, skip this step.)
  • Preheat the oven to 325 degrees F. Line a standard muffin pan with paper or silicone muffin cups, then lightly coat the cups with nonstick spray.
  • In a large mixing bowl, whisk together the whole wheat flour, cocoa powder, baking soda, baking powder, espresso powder, and salt. Set aside.
  • In a mixing bowl, add the mashed banana (if you are mashing the banana directly in the mixing bowl, double check that you have the correct amount), then whisk in the eggs, milk, honey, brown sugar, vanilla, and oil. If the oil resolidifies, warm the bowl in the microwave in 10-second bursts, just until it melts.
  • Make a well in the center of the dry ingredients and pour the wet ingredients into it. With a rubber spatula or wooden spoon, stir gently and patiently to combine. The batter will look dry at first but will begin to come together as you go. It will also be thick and shaggy, which is just right. Stop as soon as the dry ingredients disappear and don't over mix. Fold in the chocolate chips.
  • Scoop the batter into the prepared muffin pan; the cups will be quite full and the tops will dome when the bake. Sprinkle with extra chocolate chips if desired.
  • Bake the muffins for 22 to 26 minutes, or until a toothpick inserted in the center of a muffin in the center of the pan comes out clean without any wet batter clinging to it. Test a few times to make sure the muffins are cooked through (and that what stuck to the toothpick was in fact batter and not a melted chocolate chip).
  • Remove the muffins from the oven and place them on a wire rack. Let cool in the pan for 3 minutes. Then, using a dull knife or fork to help you out, gently remove the muffins from the pan, allowing them to cool for about 15 minutes on a rack before peeling off the muffin papers. Enjoy!

2 tsp baking powder
¼ tsp ground cinnamon
120g/4¼oz golden caster sugar
100g/3½oz dark or milk chocolate chips (or a mixture)
¼ tsp fine salt
2 tbsp flavourless oil, such as sunflower or light rapeseed, plus extra for greasing
100ml/3½fl oz milk
1 large free-range egg
1 tsp vanilla extract
250g/9oz ripe banana (about 3 large bananas), mashed
seeds or chopped nuts, for decorating (optional)

CHOCOLATE BANANA MUFFINS

Chocolate Banana Muffins image

I think of muffins as a treaty weekend breakfast, but these look so darkly elegant, especially in their matching dark-brown, tulip-skirted party frocks, that they positively beg to be brought out with coffee after dinner. Certainly, while most muffins are at their best pretty well straight out of the oven, the bananas in the mixture make sure these beauties keep their moist, eat-me texture long after those less favoured have staled and lost their allure. For US cup measures, use the toggle at the top of the ingredients list.

Provided by Nigella

Yield Makes: 12 muffins

Number Of Ingredients 7

3 medium - 450 grams (total weight with skin on) - very ripe or overripe bananas
125 millilitres vegetable oil
2 large eggs
100 grams soft light brown sugar
225 grams plain flour
3 tablespoons best-quality cocoa powder (sifted)
1 teaspoon bicarbonate of soda

Steps:

  • Preheat the oven to 200°C/180°C Fan/400°F/gas mark 6 and line a 12-bun muffin tin with papers. Don't worry about getting special papers: regular muffin cases will do the job. Peel and mash the bananas by hand or with a freestanding mixer. Still beating and mashing, add the oil followed by the eggs and sugar. Mix the flour, cocoa powder and bicarb together and add this mixture, beating gently, to the banana mixture, then spoon it into the prepared papers. Bake in the preheated oven for 15-20 minutes, by which time the muffins should be dark, rounded and peeking proudly out of their cases. Allow to cool slightly in their tin before removing to a wire rack.
