CHOCOLATE BANANA BREAD
Chocolate chips and cocoa powder give this chocolate banana bread deep chocolate flavor, while the addition of sour cream makes it tender.

Steps:
- Preheat the oven to 350° F. Grease a 9 x 5 x 3-inch loaf pan with non-stick cooking spray.
- In a medium bowl, combine the flour, cocoa powder, baking soda and salt. Whisk until there are no more lumps in the cocoa powder and the mixture is well combined. Set aside.
- In a large bowl or electric mixer fitted with the paddle attachment or beaters, beat the butter and sugar until light and fluffy, 2 to 3 minutes. Add the eggs one at a time, incorporating well after each addition. Add the dry ingredients and beat gently until just combined. Add the bananas, sour cream and vanilla and mix on low speed to combine. Fold in the chocolate chips. Do not overmix.
- Pour the batter into the prepared loaf pan and spread evenly with a spatula. Bake until a toothpick inserted into the center comes out with a few moist crumbs attached, about 1 hour and 10 minutes. Let the loaf rest in the pan for about 10 minutes, run a blunt knife around the edges to loosen, then turn it out onto a rack to cool completely.
- Note: There are two types of unsweetened cocoa powder: natural (such as Hershey's) and Dutch-processed. Dutch-processed will not work in this recipe.
- Freezer-Friendly Instructions: The bread can be frozen for up to 3 months. After it is completely cooled, wrap it securely in aluminum foil, freezer wrap or place in a freezer bag. Thaw overnight in the refrigerator before serving.

- Prepare the pan and preheat oven: Butter or spray with cooking spray the inside of a 5 x 9-inch loaf pan. Preheat oven to 350°F (175°C) with a rack in the middle.
- Puree the bananas: Using a blender, food processor, or a fork, puree the peeled ripe bananas until smooth. You should have 1 1/2 to 1 3/4 cups of banana puree.

- Preheat oven to 350°F. Lightly grease and flour a 9×5-inch loaf pan and set aside.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder and salt.
- In the bowl of an electric mixer fitted with the paddle attachment, beat together the yogurt, honey, egg and vanilla.
- Add half the flour mixture into the yogurt mixture and beat on low speed while slowly pouring in half the milk. Turn mixer off, scrap down the sides with a spatula then add remaining flour mixture to the bowl beating on low speed again while slowly pouring in the remaining milk. Batter will be thick. Stir in the mashed bananas until well combined. Fold in the chocolate chips.
- Spread batter evenly into prepared loaf pan. Press more chocolate chips into the top of the batter before baking, if desired. Bake on the middle rack of the oven for about 50 minutes or until a toothpick inserted in the center of the loaf comes out clean. Let the bread cool in the pan for about 20 minutes before removing to a wire rack to cool completely and serve.

- Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan, preferably glass.
- Mix flour, baking powder, baking soda, and salt in a bowl. Stir bananas, milk, and cinnamon in another bowl. Beat butter and sugar in a third bowl until light and fluffy. Add eggs to butter mixture, one at a time, beating well after each addition. Stir banana mixture into butter mixture. Stir in dry mixture until blended. Fold in chocolate chips until just combined. CHOCOLATE BANANA BREAD
A 'quick bread' based on a cake mixture but baked in a loaf pan. I was in the situation where I had 3 over-ripe bananas, a bit too soft for eating but perfect for a cake. Normally I would make a simple banana bread or banana cake for my husband, but as he is away on a trip, I have a brother-in-law to contend with who won't think of eating anything that looks remotely healthy. So I made this wonderful loaf, with the goodness of bananas and the comfort of chocolate. Enjoy.

- Preheat oven to 180 degrees C with a rack positioned in the centre of the oven. Grease a loaf pan, and place a square of baking paper in the pan, allowing the paper to overhang over the long sides of the pan (to easily remove the loaf once cooked).
- Place the flour, baking powder, bicarb soda, sugar, salt and cocoa in a large bowl. Use a fork to combine the dry ingredients together.
- In another bowl, use a fork to mash the bananas. Add the eggs, vanilla and melted butter, and mix together well.
- Make a well in the dry ingredients and pour in the banana mixture. Use a wooden spoon to fold everything together, until the batter is just combined (don't overmix). Ensure there are no areas of unmixed flour at the bottom of the bowl. Fold in the white chocolate chips.
- Spoon batter into the loaf pan (it should be quite thick and smell fantastic). Scatter over the chopped nuts.
- Bake for 55 mins to 1 hour, until a skewer inserted into the centre of the loaf comes out clean. Cool 5-10 mins in the loaf pan, and then remove to a wire rack. Delicious warm as a dessert, or at room temperature with a cup of tea.
