Steps:
- Preheat the oven to 180C/350F, get out a small baking dish and grease it well.
- In a bowl, combine together all of the ingredients, except chocolate chips, and mix until smooth.
- Stir some of the chocolate chips through the batter and move to the baking dish.
- Top with the rest of the chocolate chips and place in the preheated oven for 25 to 30 minutes or until cooked through.
- Remove from the oven, top with any optional extra toppings and enjoy.

DARK CHOCOLATE OATMEAL
Steps:
- Bring 3 cups water to a boil in a large saucepan over medium heat. Add the oats, cocoa powder, vanilla and salt and cook, stirring regularly, until thickened, 5 to 7 minutes. Turn off the heat and stir in the honey. Cover and let stand for 2 minutes.
- Top each serving with 2 tablespoons chopped walnuts, half of a sliced banana and 2 tablespoons cherries. Serve immediately.
CHOCOLATE CHIP COOKIE BAKED OATMEAL
Just thought this up one morning and couldn't find any others like it on the site. Still in the tinkering/perfecting process so any suggestions are welcome :) (Thanks to Maito for some wonderful suggestions already!) Also, note that the type of oats you use will change the consistency of the oatmeal... quick oats will yield a cake-like oatmeal, whereas old fashioned oats will be a little more liquidy

Steps:
- Preheat oven to 350 degrees. Grease well an individual sized oven-proof dish/ramekin (at least 12 oz, this will bubble a bit).
- In a small bowl, combine first 5 ingredients (oats through chocolate chips, plus nuts if you're using them).
- In a separate bowl, combine remaining wet ingredients (milk through vanilla).
- Mix together wet and dry ingredients. Pour into baking dish.
- Bake 30-40 minutes or until top is crispy and oatmeal is relatively firm (quick-oats will firm up more than old-fashioned). Let cool 5-10 minutes.
- NOTE: Alternately, all milk can be used, but this may make the oatmeal a little looser in consistency, since oats absorb water a little better than milk. If you choose to use all milk, quick oats may be a better choice :).
- Also, If you want a larger serving size, use 3/4 cup oats and increase water to 1/2 cup.

- Heat the oven to 180C/160C fan/gas 4. Put the oats in a blender and pulse a few times until they start to resemble flour. Add the baking powder, chopped banana, maple syrup or honey, eggs and mixed spice or cinnamon, and whizz until smooth. Stir in the chocolate chips or berries.
- Lightly oil four heatproof ramekins, then divide the batter between them. Bake for 20-25 mins, or until well-risen and the baked oats spring back when lightly pressed. Scatter with more chocolate chips or berries before serving, if you like.

- Preheat the oven to 350 degrees F (175 degrees C). Spray two 8-ounce ramekins with cooking spray on the bottom and sides.

Steps:
- Heat milk and a pinch of salt in a small saucepan over medium heat until begining to simmer.
- Reduce heat and add oats, cocoa and sugar.
- Simmer over low heat, stirring occasionally until thickened.
- If you want your oatmeal thick or watery, this is where you determine the consistency- don't stop until it's pretty much at the consistency you would like.
- Cover and let sit for about 5 minutes (this cooks the oatmeal more thoroughly).
- Remove cover, stir and serve.
- Garnish with chocolate chips, nuts, and/or fruit if desired.
