SALTED CARAMEL ICE CREAM

1 1/4 cups sugar
3/4 cup heavy cream
2 teaspoons flaky sea salt, such as Maldon
Ice Cream Base (recipe follows)
1 tablespoon pure Tahitian vanilla extract
1 cup whole milk
4 large egg yolks
3/4 cup sugar
2 cups heavy cream

Steps:

  • Heat the sugar in a dry heavy-bottomed sauce pan over medium heat, stirring with a fork to heat the sugar evenly, until it starts to melt, then stop stirring and swirl the pan so the sugar melts evenly, and continue cooking until it is a dark amber color.
  • Carefully add the heavy cream (the mixture will splatter) and cook, stirring until all the caramel has dissolved. Transfer to a heat-proof bowl and stir in the sea salt. Set the caramel mixture over a bowl filled with ice water and stir until chilled to room temperature. Combine the caramel mixture with the Ice Cream Base and add the vanilla.
  • Freeze in an ice cream machine according to manufacturer's directions.
  • Heat the milk in a sauce pan over medium-low heat.
  • Prepare an ice bath by setting a 2-quart bowl over a larger bowl partially filled with ice water.
  • Set a strainer over the smaller bowl and set aside.
  • In a separate bowl, whisk together the egg yolks and sugar until pale yellow in color and the sugar has dissolved. Gradually pour the warmed milk into the yolk mixture, whisking constantly. Pour the mixture back into the same saucepan you used to warm the milk. Cook for 3 to 5 minutes, stirring constantly, until the custard thickens and coats the back of a wooden spoon.
  • Strain the custard into the top bowl of the ice bath to stop the cooking process. Add the heavy cream and stir over the ice bath until cool. Cover the bowl with plastic wrap and chill thoroughly, preferably overnight.

Steps:

  • Salted Caramel Sauce: In small deep saucepan over medium-high heat, stir sugar with water until dissolved, brushing down side of pan with pastry brush dipped in cold water. Bring to boil; boil vigorously, without stirring but brushing down side of pan often, until deep amber, about 6 minutes. Averting face, add cream and salt; cook, stirring, until smooth and slightly thickened, about 2 minutes. Transfer to heatproof bowl; let stand (not in refrigerator) until at room temperature, about 1-1/2 hours. To swirl, alternate layers of puréed or soft ice cream and caramel sauce in freezer container, swirling with tip of knife or skewer. Cover and freeze until firm, about 4 hours.

2 cups sugar
2 cups heavy cream, plus
2 tablespoons heavy cream
1 1/2 cups milk
6 large egg yolks
1 teaspoon vanilla extract

Steps:

  • In a small saucepan, bring ¾ cup of the sugar and ¼ cup of water to a boil over medium-high heat, stirring occasionally to dissolve the sugar.
  • Boil without stirring until the caramel turns a golden amber colour, 5-8 minutes.
  • Remove from heat and immediately add ½ cup plus 2 tblsps of the heavy cream - AVOID SPATTERS!
  • Stir well, then cook over low heat, stirring, until smooth, about 1 minute.
  • Remove from heat, add a dash of salt, and let cool.
  • Transfer the caramel to a container, cover and refrigerate until cold, atleast 1 hour and up to 2 days.
  • In a large saucepan, bring the milk and remaining 1 ½ cups heavy cream just to a boil over medium heat.
  • In a large bowl, whisk the egg yolks with ¾ cup of the sugar until smooth.
  • Gradually whisk the hot cream into the egg yolks.
  • Pour the custard back into the saucepan.
  • Cook over medium heat, stirring constantly, until the custard thickens slightly and coats the back of a spoon, about 7 minutes.
  • DO NOT BOIL.
  • Immediately strain the custard into a large heatproof bowl and set aside.
  • In a small saucepan, bring the remaining ½ cup sugar and 3 tblsps water to a boil over medium-high heat, stirring to dissolve the sugar.
  • Boil with stirring until the caramel turns a deep amber colour, about 7 minutes.
  • Remove from heat and add 2 tblsps of cold water - stand back to avoid spatters.
  • Stir until smooth.
  • Whisk the hot caramel into the warm custard, making sure the caramel doesn't get on the whisk as you pour as it will harden.
  • Stir in vanilla.
  • Let cool to room temperature, stirring once or twice, then cover and refrigerate until cold, atleast 2 hours or overnight.
  • Pour the custard into an ice-cream maker and freeze according to the manufacturer's instructions.
  • Transfer the ice cream to a chilled container and freeze until partially set but not hard, about 1 hour.
  • Spoon 1/3 of the ice cream into a chilled container.
  • Spoon 1/3 of the chilled caramel on top; it does not have to be an even layer.
  • Top with a layer of ice cream.
  • Continue layering, ending with caramel.
  • Stir once; do not overmix as you want a thick caramel swirl running through the ice cream.
  • Cover and freeze for atleast 3 hours or up to 2 days.

Unsalted butter, softened, for the pan
14 pizzelle (thin Italian waffle cookies) or thin butter cookies
3/4 cup chocolate fudge sauce
1 quart vanilla-caramel swirl ice cream, slightly softened
1 quart chocolate ice cream, slightly softened
1/2 cup dulce de leche or caramel sauce
1/2 teaspoon flaky sea salt
5 sugar cones
1/4 cup toffee bits

Steps:

  • Cut a 24-by-6-inch strip of parchment paper. Butter the side of an 8-inch springform pan, then line the side with the parchment; the paper will extend above the rim of the pan so you can build a tall cake. Cover the bottom of the pan with half of the pizzelle cookies, breaking them into smaller pieces as needed to cover the surface. Spread 1/4 cup fudge sauce over the cookies. Pack about half of the vanilla-caramel and chocolate ice cream into the pan, alternating scoops of each flavor, until the bottom is covered. Drizzle with 1/4 cup dulce de leche and sprinkle with 1/4 teaspoon sea salt. Top with the remaining pizzelle cookies, pressing gently to pack in the ice cream and create an even surface. Spread 1/4 cup fudge sauce over the pizzelle cookies. Top with scoops of the remaining vanilla-caramel and chocolate ice cream. Drizzle with the remaining 1/4 cup each dulce de leche and fudge sauce and sprinkle with the remaining 1/4 teaspoon sea salt. Arrange the ice cream cones, point-side up, on top. Freeze until firm, at least 6 hours or overnight. Remove the side of the springform pan and the parchment. Press the toffee bits into the side of the cake. Serve immediately or freeze for up to 2 days.

Featherlight choux pastry is stuffed with salted caramel and drizzled with a double dose of chocolate in this deliciously indulgent dessert

75g plain flour
2 tbsp cocoa powder
85g slightly salted butter , chopped into small pieces
3 medium eggs , beaten
0.5 x 397g can caramel (we used Carnation)
0.5-1 tsp sea salt flakes
300ml pot double or whipping cream
100g white chocolate , finely chopped
50g dark chocolate , finely chopped
chocolate sprinkles or edible glitter (optional)

Steps:

  • Sieve the flour and cocoa into a bowl. Put the butter in a saucepan and add 225ml water. Bring to a fast boil, then simmer until the butter has melted. Tip in the flour mixture and quickly beat with a wooden spoon until the mixture comes together to a smooth, shiny dough, and pulls away from the sides of the pan. Tip the dough into a bowl and spread it up the sides with your spoon to help it to cool down quickly (but don't let it cool completely - it's easier to incorporate the eggs while it's still warm). Heat oven to 200C/180C fan/ gas 6 and line 2 baking sheets with baking parchment.
  • While the dough is still warm, add the eggs a little at a time, beating well with a wooden spoon between each addition. You're looking for a smooth consistency, that reluctantly falls off the spoon in a V shape (you may not need to use all the egg). If the mixture becomes too runny, you won't be able to pipe it; if it's too thick, it won't puff up in the oven. When you're happy with the consistency, spoon it into a disposable piping bag.
  • Snip off the end of the piping bag to give you a 1cm opening. Holding the bag at a 90-degree angle to the baking tray, pipe balls of the dough, about the size of a walnut, over the 2 sheets - you should make 18-20 in total. Dip your finger in a little water and gently pat down any peaks on the top of the balls of dough. Place the 2 sheets in the oven and bake for 25-30 mins, swapping the trays over after 20 mins. The choux buns should be puffed up and crisp when cooked. Leave to cool completely.
  • Spoon the caramel into a large bowl, add 1/2 tsp salt, mix well and taste - add a little more salt if you like. Add the cream and whisk until holding soft peaks (the cream can now be stored in the fridge for up to 1 day).
  • Split the choux buns in half, spoon a generous dollop of salted caramel cream into each and replace the lids. Melt the white and dark chocolates in 2 bowls suspended over pans of gently simmering water, or in the microwave. Transfer the dark chocolate to a piping bag and set aside to cool a little. Top each bun with a spoonful of white chocolate, stack the profiteroles on a plate or cake stand, then drizzle over the dark chocolate and sprinkle with chocolate sprinkles or edible glitter, if you like. Serve straight away.

  • In a mixing bowl, combine heavy cream, evaporated milk and salt. With a stand mixer, beat until stiff peaks form gradually increasing speed to high, as mixture thickens. Slowly drizzle in sweetened condensed milk starting mixer speed at low and gradually increasing it to high. Beat on high speed until stiff peaks form. Add vanilla extract. Beat until it is well blended, maintaining stiff peaks. Spread one-third of the ice cream onto the bottom of a freezer-safe container. Spread half of the fudge swirl over ice cream. Spread one-third of the ice cream over the fudge swirl. Spread half of the fudge swirl over ice cream. Spread remaining one-third ice cream over the fudge swirl. With a knife, gently swirl the ice cream with the fudge swirl back and forth about two times. Cover tightly. Freeze until firm and completely solid, about 8-10 hours.
  • Fudge Swirl:.
  • Place heavy whipping cream and semisweet chocolate chips in a double-boiler. Stir until all of the chocolate chips have melted and the mixture is smooth. Cool completely. Store in a tightly covered container in the refrigerator.

1 (14 ounce) can sweetened condensed milk
1 tablespoon vanilla extract
1/4 cup caramel sauce (try sea salt caramel sauce)
rum (to taste) (optional)
1/2 cup dark chocolate, chopped fine

Steps:

  • Combine whipping cream, condensed milk and vanilla in a large bowl or the bowl of your stand mixer. Whip together until medium peaks form. Add in the chopped chocolate and gently fold it in until evenly distributed.
  • You can use your favorite caramel recipe or store-bought caramel. If using rum, pour it into the caramel and mix together until fully combined.
  • Add half of your ice cream mixture into a freezer-safe container. Drizzle half of the caramel over top and using a knife, swirl it through the ice cream. Pour the other half of the ice cream mixture over top and drizzle the remaining caramel over top. Again, use a knife to swirl it through the ice cream.
  • Place in the freezer for at least 6 hours until firm. Remove from the freezer for about 10 minutes so that it softens enough to scoop.

Steps:

  • For the Caramel: Heat the sugar in a saucepan on medium heat stirring contently until at the sugar dissolves into an amber. While still on heat add the heavy cream and stir until smooth (it will splatter and create a hard caramel mass, keep stirring until it remelts). Once combined into a smooth caramel, remove from heat and add the vanilla and salt, then let cool to room temperature.
  • For the sweet cream base: Whisk the eggs until light and fluffy then add the sugar and whisk again until blended. Pour in the cream and milk and whisk until blended.
  • Once caramel is cool, mix it into the sweet cream base then allow the whole mixture to cool for several hours in the refrigerator. Once mixture is well chilled transfer the ice cream mixture and follow manufacturers instructions.
