½ cup almond flour
½ cup dark chocolate, melted
1 teaspoon vanilla extract
sea salt, optional

Steps:

  • In a bowl, mix almond flour, almond butter, and vanilla extract. Create round balls using your hands.
  • Place onto a baking sheet and chill for 20 minutes or until solid.
  • In a microwave-safe bowl, melt the chocolate in 30-second intervals.
  • Individually coat eat ball in the chocolate and place back onto the baking sheet.
  • Sprinkle with sea salt, if desired.
  • Chill until chocolate is set.

These No-Bake Almond Joy Energy Balls are inspired by the ever popular Almond Joy chocolate bar but without all the gunk! They pack a serious nutrition punch and are also gluten-free, vegan AND paleo.

3/4 cup unsweetened coconut flakes (reserve 1/2 cup for rolling)
2 cups dates*
2 cups raw almonds
1/4 cup unsweetened cocoa powder
1/4 tsp sea salt
1/2 tsp vanilla extract (you can also use almond extract if you prefer)
1-2 tbsp unsweetened almond milk

Steps:

  • Put 1/2 cup of coconut flakes into the food processor and process to break up flakes slightly. Do not over-process or it will become coconut butter.
  • Remove flakes and set aside in a bowl.
  • Place dates in the food processor and process until they have broken up and then come together into a ball.
  • Break up date ball with hands and add in almonds, cocoa powder, 1/4 cup of coconut flakes and sea salt.
  • Process for several minutes, scrapping down the sides as needed.
  • Add in vanilla extract and 1 tbsp of almond milk.
  • Process until mixture comes back together into a ball. If it doesn't do this, add in 1 more tablespoon of almond milk. It should look like the photo above.
  • Remove mixture from the food processor and roll into roughly 2 dozen balls.
  • Roll each ball in the coconut flakes you processed earlier.
  • Optional: place balls on a baking sheet and flash freeze in freezer for 15-20 minutes. This ensures the balls won't stick together when you place them in your container.
  • Store in an airtight container in the fridge for several weeks or the freezer for several months.

1/2 lb dried apricot
1/2 lb almonds, toasted
2 ounces bittersweet chocolate, cut into small pieces
1 cup sugar
8 tablespoons water
confectioners' sugar, for rolling

Steps:

  • In food processor, process apricots, almonds and chocolate until very finely chopped.
  • In medium saucepan over medium-high heat, cook sugar and water until soft ball stage, approximately 240°F (approximately 10 minutes).
  • Stir in apricot mixture and cool.
  • Squeeze mixture together with hands to form firm ball.
  • Using approximately 1 Tbsp of mixture, form into 1-inch balls.
  • Roll in powdered sugar.

½ cup icing sugar
1 teaspoon salt
1 teaspoon vanilla extract
⅔ cup sweetened condensed milk

Steps:

  • In a large bowl mix together coconut, sugar, salt, vanilla, and condensed milk. If the mixture is too dry add additional milk until it all just comes together.
  • Roll the mixture into 1-inch (2.5 cm) balls and place on a wax paper lined baking sheet. Freeze for 15 minutes.
  • Break apart chocolate bars and add to a microwave safe bowl. Microwave chocolate for 75 seconds, stopping every 30 seconds to check and stir.
  • Remove the coconut balls from the freezer and individually roll in melted chocolate to coat. Place back on a wax paper lined tray and sprinkle with additional coconut and top with an almond (optional).

1/2 cup confectioners' sugar
1/2 teaspoon salt
1/4 teaspoon almond extract
2 cups flour
10 ounces white chocolate
2 1/3 cups flaked coconut

Steps:

  • Heat oven to 325°F.
  • Spread nuts on baking sheet and toast in the oven until golden brown, 8 to 10 minutes.
  • Cool and chop.
  • With an electric mixer set at medium low speed, beat butter, sugar, salt and almond extract until creamy.
  • On low speed, beat in flour until mixture just comes together.
  • Stir in nuts.
  • Chill until firm.
  • Roll into approximately 1-inch balls.
  • Put on ungreased baking sheets.
  • Bake until golden brown on bottom, 15 to 18 minutes.
  • Cool completely on wire racks.
  • Chop chocolate, put in a small bowl and melt in a 250°F oven.
  • Put coconut in a bowl.
  • Drop cookies, one at a time, into chocolate.
  • Coat and remove with a fork, letting excess drip off.
  • Drop the cookies into coconut.
