3 ounces semisweet chocolate, shaved or chopped
4 cups milk
1 cinnamon stick
2 jalapenos, stemmed and quartered lengthwise
1/4 teaspoon vanilla extract
1/2 cup mini marshmallows

Steps:

  • Put the chocolate into a bowl or liquid measuring cup and put a fine mesh sieve over the rim.
  • Add the milk, cinnamon stick and jalapenos, seeds included, to a medium pot over low heat. Bring to a simmer and let steep for 15 minutes. Stir in the vanilla. Pour the milk mixture into the sieve over the chocolate and discard the solids. Quickly stir the milk and chocolate together and pour it evenly into 4 mugs. Top with marshmallows and serve.

4 ears corn, kernels cut from cob
2 tablespoons olive oil, divided
1 onion, diced
1 cup shredded carrot
1 stalk celery, chopped
1 clove garlic
4 cups chicken broth
4 red potatoes, cut into bite-size pieces
2 cups light cream
1 (15 ounce) can cream-style corn
1 teaspoon finely chopped parsley
salt and ground black pepper to taste
3 tablespoons butter
2 tablespoons all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine corn kernels and 1 tablespoon olive oil in a baking dish; stir to coat corn kernels in oil.
  • Roast corn in preheated oven for 20 minutes.
  • Heat 1 tablespoon olive oil in a large pot over medium heat. Cook and stir onion, carrot, celery, and garlic in the olive oil until tender, 5 to 7 minutes. Stir chicken broth, roasted corn, potatoes, light cream, cream-style corn, parsley, salt, and pepper into the vegetable mixture; bring to a boil.
  • Melt butter in a small skillet over medium-low heat; stir flour into melted butter and whisk until a paste forms and begins to thin, about 5 minutes.
  • Stir roux into the chowder; continue cooking until chowder is thickened, about 30 minutes.

1 cup butter
2/3 cup sugar
3 egg yolks
1 tsp almond extract
2 1/2 cups flour
2-3 drops green food coloring
5 squares (1 oz. each) semisweet chocolate, melted

Steps:

  • Cream butter and sugar. Stir in egg yolks and then add almond extract. Add flour, stirring until all ingredients are blended. Add green food coloring to make dough a pretty light green. Preheat oven to 375 degrees. Pinch off small balls of dough, roll between palms of your hands into an acorn shape, pointed at the bottom. place on a greased and floured cookies sheet about 2 inches apart. Bake in a 375 degree oven, about 10 minutes until shininess has disappeared and cookie is solid. Remove cookie from pan and cool. Dip wide end of cookie in melted chocolate.
