Steps:
- Sift the flour and baking powder and mix well.
- In a seperate bowl, mix the butter and sugar and beat till light.
- Add the beaten eggs and mix until well blended.
- Next add the fruit, bread crumbs and orange rind.
- Fold in the flour and orange juice alternately.
- In a pudding mould, Layer the bottom with maple syrup.
- Sprinkle the almond slivers on it.
- Pour the mixed pudding batter into the mold over the syrup it.
- Put a lid on the mold and put it in a rice cooker.
- Pour water in the cooker upto half the mould height.
- Switch the cooker into cooking and let it cook for 1 hours.
- After 1 hr remove the mould from the cooker and let it cool for 5 minutes.
- Invert the mould into a plate and cut into slices.
- Serve warm with custard.

- For the pudding: Preheat the oven to 350 degrees F. Lightly spray a 2-quart baking dish with nonstick cooking spray.
- Whisk together the eggs, milk, cream, granulated sugar, vanilla and salt in a large bowl. Pour in the bread and chocolate chips. Toss until the bread is coated on all sides and the chocolate is distributed. Pour into the prepared baking dish. Bake until puffed and golden brown, 45 to 50 minutes.
- For the sauce: Meanwhile, place a small saucepot over medium-high heat. Set aside 1 tablespoon of the orange juice. Pour the remaining orange juice and sugars into the saucepot and whisk until combined. Bring to a simmer and simmer, whisking occasionally, until the sugars dissolve, about 10 minutes.
- Whisk together the reserved orange juice and cornstarch in a small bowl. Pour into the sauce and whisk until combined. Cook until the sauce becomes syrupy, about 5 minutes. Stir in the orange zest. The sauce will thicken more as it cools. Pour the warm sauce over the pudding and serve.

- Heat the milk, 1 cup sugar and 1/2 cup orange juice concentrate in a saucepan over medium-low heat until the sugar dissolves, stirring. Cool slightly. (It's OK if the mixture curdles slightly.)
- Whisk the milk mixture, 2 tablespoons bourbon and the whole eggs and yolks in a large bowl; fold in the bread. Cover and refrigerate until the liquid is absorbed, about 1 hour 30 minutes.
- Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish. Fold the chocolate chunks into the bread mixture. Spread evenly in the baking dish and sprinkle with sugar. Bake until a knife inserted into the center comes out clean, about 1 hour 20 minutes.
- Meanwhile, make the sauce: Melt 4 tablespoons butter in a small saucepan over medium heat. Add the remaining 1/2 cup sugar and cook, stirring, until lightly caramelized, 5 to 6 minutes. Whisk in the remaining 1 cup orange juice concentrate, 3/4 cup bourbon and the salt. Cook until thick, 10 to 15 minutes. Stir in the cream and simmer until the sauce coats a spoon, about 10 more minutes. Slice the bread pudding and drizzle with the sauce.

- Spread butter liberally over bread slices.
- Remove crusts& cut to fit into a loaf pan.
- Beat eggs& sugar until pale in colour, gradually blend in milk& vanilla.
- Place a layer of bread in a greased pan& sprinkle some choc chips on top.
- Pour egg mixture over the first layer to just cover.
- Allow to soak a minute or two.
- Continue layering bread, choc chips& egg mixture until pan is full, finishing with bread.
- Drizzle with remaining egg mixture.
- Sprinkle with cinnamon& nutmeg.
- Place the pan in a baking dish filled with water to come halfway up the sides of the loaf pan.
- Bake in a moderate oven (180c) for 1 hour or until firm.

- Place orange zest in a small bowl. Pour juice in a measuring cup; add enough boiling water to measure 1 cup. - Preheat oven to 350°F (180°C). Spread brioche in single layer on parchment paper-lined large baking sheet. Bake, stirring once, until golden; about 10 minutes.

- Put the cream, milk, 100g of the dark chocolate, the cocoa powder, sugar, vanilla and a pinch of salt in a saucepan over a low-medium heat and whisk until the mixture is smooth and fully combined. Pour into a large bowl to cool slightly.
- Meanwhile, split the hot cross buns and spoon 1 tsp chocolate spread over the base of each, then sandwich with the bun tops. Arrange the buns in a 5cm-deep, 30 x 20cm baking dish in a single layer, then sprinkle over the rest of the chopped dark chocolate.
- When the chocolate cream mixture has cooled to room temperature, whisk in the eggs. Slowly pour this custard over the hot cross buns, then cover and chill for 1 hr until some of the custard has been absorbed by the buns.
- Heat the oven to 180C/160C fan/gas 4. Bake for 40-45 mins until the top is golden and the custard is gently set. Leave to stand for 5 mins, then serve with ice cream, if you like.

- Soak the raisins in the liquor for 1 hour, reserving the liquor for the custard mix. Thinly slice loaf and butter ( this is optional, I don't always butter bread if using brioche, keeps calories down!).
- Layer brioche in an oven dish scattering in the raisins and pieces of chocolate in between layers.
- Make the custard by gently heating the milk and cream, add the reserved liquor and orange juice, add to the yolks and sugar whisking as you go.
- Pour over brioche and transfer onto a baking tray, fill with boiling water 2/3rds up and place in a pre-heated oven set at 300F for 35-40 minutes After 20 mins brush on warmed marmalade and return to the oven to finish cooking.
- If required you can finish under a hot broiler to caramelize marmalade. Serve with heavy cream.
