Yield Makes Muffins

Number Of Ingredients 8

300g self raising flour
1 teaspoon baking powder
50g cold unsalted butter cubed
80g caster sugar
150g milk or plain chocolate chips
2 eggs , lightly beaten
225ml milk
1 teaspoon vanilla extract

Steps:

  • preheat the oven to 200 c / 400 f / gas mark . line 12 muffin cases.
  • Mix the flour and baking powder together in a large bowl. Rub in the butter untill the mixture is like breadcrumbs. Stir in the sugar and the chocolate chips.
  • In a separate bowl mix the eggs , milk and vanilla extract together , then pour the mixture all at once into the dry ingredients and mix briefly.
  • Spoon the batter into the muffin cases and bake for 15-20 minutes or until risen , golden and firm to touch. cool in the tin for 10 minutes.
  • after 10 minutes of cooling in the tin , transfer to a cooling rack or serve straight away.

Steps:

  • Preheat the oven to 400 degrees F.

Sometimes regular sized muffins just aren't good enough. This recipe is already doubled, and for use in a jumbo muffin tin that holds 6 muffins. 1 cup milk (tad overflowing from cup)

  • Once all mixed together add Chocolate Chips and mix with spoon. The 1 1/4 cup may sound like a lot but it really isn't. Add nuts if you wish. Make sure its mixed well. (here is where you add blueberries if you wish to make blueberry muffins. Don't add too many ore they'll be kinda gross).
  • Fill each cup ALL the way to the top for a bigger topped muffin.

45g/1½oz cocoa powder
125g/4½oz golden caster sugar
65g/2¼oz soft light brown sugar, any lumps crumbled
1½ tsp baking powder
½ tsp fine salt
2 free-range eggs
150ml/5fl oz buttermilk (or milk plus 1 tbsp lemon juice)
1 tsp vanilla extract
175ml/6fl oz hot water
110g/3¾oz unsalted butter, melted, plus a little extra for greasing
125g/4½oz milk chocolate chips, or try a mixture of milk and white

Steps:

  • Preheat the oven to 200C/180C Fan/Gas 6. Grease a 12-hole muffin tin and line with paper cases.
  • Sift the flour and cocoa into a large mixing bowl. Tip in the sugars, baking powder and salt and mix together. Make a well in the centre.
  • Whisk together the eggs, buttermilk, vanilla extract and hot water. Pour into the well, then quickly use a spatula to blend into the dry ingredients, followed by the melted butter. Fold in most of the chocolate chips. Divide the batter between the paper cases - they should be about three-quarters full.   • Heat oven to 200C/180C fan/gas 6 and line a 12-hole muffin tin with paper cases. Sift the flour and bicarbonate of soda into a large bowl, then stir in the chocolate chips and sugar. Add the beaten eggs, yogurt and butter, and stir to combine. It doesn't matter if the mixture looks a bit lumpy, it's more important not to overmix or the muffins will turn out tough.

1 large egg
1/4 cup unsalted butter, softened (see notes)
2 teaspoons vanilla extract
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350. Line a muffin tin with muffin liners and spray with cooking spray.
  • Combine oats and milk and let those soak while you prepare the rest of the recipe, to soften the oats.
  • In a large bowl, whisk together the egg and brown sugar until smooth and caramel colored.
  • Add vanilla and butter and whisk to combine. You may have small pieces of butter in the mixture, which is totally fine. (See notes.)
  • Add flour, oat-milk mixture, baking soda, salt and cinnamon. Stir until well combined but don't over mix.
  • Fold in the chocolate chips.
  • Distribute the batter between the muffin tins - they will be about 2/3rds full.
