Number Of Ingredients 9

4 tablespoon butter, unsalted
1/3 cup flour
1 1/2 cups milk
1 1/2 cups half and half (or can use all milk)
1 pound shaved chipped baked ham (or can use chopped dried beef)
3 1/2 cups peas (canned or frozen - thawed)
1 teaspoon black pepper
1/2 teaspoon salt
8 slices of bread, toasted - don't forget about the 'anchor' crusts!

Steps:

  • In a medium saucepan over medium heat, melt the butter.
  • Add in the flour and whisk for a minute to cook the flour.
  • SLOWLY add in the milk whisking constantly to break up the clumps.
  • Reduce heat to medium low and cook, whisking often until the mixture thickens. ~3-6 minutes. Watch so it doesn't burn!
  • Once the mixture thickens add in the ham and using a rubber tipped spatula, mix to combine, gently scraping on the base on the pan.
  • Cook for 1 minute.
  • Add in the peas, stir gently and turn off the heat.
  • Toast the bread and place 2 slices of toast on a plate.
  • Ladle a generous portion over the toast.

1 cup water
1/4 cup brown sugar
1/4 cup Worcestershire sauce
1 tablespoon dijon mustard
1 tablespoon white vinegar
1 lb (shaved or thin sliced ham)
6 hamburger buns

Steps:

  • Add ketchup, water, brown sugar, Worcestershire sauce, mustard and vinegar to a saucepan and mix well.
  • Slice ham as thinly as possible.
  • Add to sauce.
  • Heat on medium high heat and mix frequently until boiling.
  • Reduce heat to low and simmer for 15 minutes, stirring frequently as flavors mingle and mixture heats.
  • Serve immediately on buns.

1/4 cup Apple Cider Vinegar
1 tablespoon Worchestershire sauce
1 tablespoon yellow mustard
salt and pepper to taste
1 tablespoon onion powder

Steps:

  • Make a bbq sauce by combining the brown sugar, ketchup, vinegar, Worchestershire sauce, salt, pepper, mustard, and onion powder together in a large bowl.
  • Stir the chipped chopped ham in with the sauce.
  • Heat the ham and barbecue sauce on the stove in a large skillet or pan at medium heat until warmed through about 15-20 minutes.
  • Keep warm in a slow cooker until ready to serve.
  • Serve on Kaiser rolls.

1 tablespoon cider vinegar
¼ cup sweet pickle relish
1 tablespoon Worcestershire sauce
¼ teaspoon ground cinnamon
1 pinch ground black pepper
1 pinch garlic salt
½ teaspoon liquid smoke flavoring
1 pound chipped ham
6 hamburger buns

Steps:

  • In a large saucepan, combine the ketchup, water, brown sugar, cider vinegar, sweet pickle relish and Worcestershire sauce. Season with cinnamon, black pepper, garlic salt and liquid smoke. Bring to a simmer over low heat and simmer for 20 minutes.

Chipped Ham (aka Chip Chop Ham, Chipped Chopped Ham, Chip Chopped Ham) is deli chopped ham thinly shaved ("chipped") and combined with a tangy BBQ sauce and heated through in the slow cooker or on the stove top, then piled high onto fresh buns for a warm and satisfying sandwich like no other.

2 pounds chopped ham (thinly shaved)
BBQ sauce (Isaly's or recipe below)
10 - 12 buns
1 TBSP unsalted butter
1 TBSP all purpose flour
1/2 cup water
1/4 cup white vinegar (can use apple cider vinegar)
1 cup ketchup
3 TBSP brown sugar
1 TBSP Worcestershire sauce

Steps:

  • If making your own BBQ sauce, prepare that first. In medium to large sauce pan on medium heat, melt 1 TBSP unsalted butter. Sprinkle on 1 TBSP all purpose flour and cook, stirring constantly, for one minute. Add 1/2 cup water, 1/4 cup white vinegar, 1 cup ketchup, 3 TBSP brown sugar, and 1 TBSP Worcestershire sauce to flour mixture and stir constantly on medium heat until mixture thickens. It should still be somewhat thin, but thicker than water. At this point, you can take off heat and store in refrigerator until ready to use it, add in the ham (if making this dish in a pan vs a slow cooker), or add it to the slow cooker.
  • If preparing chipped ham in a pan, add the ham to the BBQ sauce and stir to combine. Continue to heat until heated through.
  • If preparing chipped ham in a slow cooker, combine the homemade BBQ sauce or the jarred BBQ sauce with the ham. Heat on LOW for about 1 1/2 hours, or HIGH for about an hour, stirring occasionally until heated through. (May heat quicker depending on whether the BBQ sauce is hot or not when combining).
  • Serve on warm, on buns.
