SKIRT STEAK FAJITAS

1 1/2 pounds outside-cut skirt steak
1/2 cup olive oil
1/4 cup lime juice
1/4 cup soy sauce
1 teaspoon kosher salt, plus more as needed
1/2 teaspoon ancho chile powder
1/2 teaspoon ground cumin
2 tablespoons canola oil
1 red bell pepper, stemmed and seeded, then sliced 1/2-inch-thick
1 poblano chile, stemmed and seeded, then sliced 1/4-inch-thick
1/2 yellow onion, sliced 1/4-inch-thick
Freshly ground black pepper
12 warm corn tortillas
Serving suggestions: guacamole, pico de gallo, sour cream, shredded iceberg lettuce, pickled jalapenos

Steps:

  • Cut the skirt steak into 3 equal size pieces and place in a gallon-sized resealable bag.
  • Combine the olive oil, lime juice, soy sauce, salt, chile powder and cumin in a bowl. Reserve about 1/4 cup marinade in a squeeze bottle for later use, then pour the rest into the bag with the steaks. Seal the bag and press out all the air, making sure all sides of the steaks are evenly coated. Refrigerate for at least 30 minutes.
  • Remove the steaks from the bag and shake off any excess marinade. Place on a wire rack-lined baking sheet and return to the fridge, uncovered, for another 2 hours. (This will make sure the steaks get a beautiful rich color when seared.)
  • Heat a 12-inch cast-iron skillet over medium-high heat. Add 1 tablespoon canola oil. Give the steaks a generous sprinkle of salt, then put in the hot skillet. Sear until a crust has developed, 2 to 3 minutes per side. Remove to a cutting board. Without cleaning the skillet, add the remaining tablespoon canola oil, followed by the peppers and onions, and cook until slightly softened, 5 to 6 minutes.
  • Meanwhile, slice each steak in half with the grain. Now turn the steaks 90 degrees and slice against the grain into 1/4-inch strips. When the peppers and onions are almost finished cooking, add the steak to the hot skillet for a final sizzle and season with salt and pepper. Squirt the reserved marinade into the hot skillet to create a steamy sizzle. Serve with the tortillas and any toppings you wish.

3 garlic cloves, minced
2 chipotle peppers, mince
2 tablespoons olive oil
1/4 cup fresh lime juice
2 tablespoons brown sugar
2 teaspoons salt
1 teaspoon ground cumin
1 1/2 lbs skirt steaks
1 (15 ounce) can black beans, drained
1 corn, kernels cut off
2 green onions, white and green parts thinly sliced
1 small red bell pepper, stemmed and seeded, finely diced
juice of one lime
2 tablespoons extra-virgin olive oil
1 teaspoon hot sauce (to taste)
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon fresh ground black pepper
1 ripe avocado (chunked or sliced)
1/4 cup chopped cilantro leaf
soft corn or flour tortilla
cheese
salsa
sour cream
fresh cilantro
fresh lime juice

Steps:

  • Whisk all of the marinade ingredients together in a small bowl. Place skirt steak in a zip-lock bag. Pour the marinade over the steak and squeeze to distribute marinade; refrigerate for at least 4 hours or overnight, turning once or twice.
  • To make the salsa: Combine all of the ingredients except the avocado and cilantro in a bowl. Toss to distribute ingredients. Adjust seasoning. (Salsa may be made in advance to this point; cover and refrigerate). Before serving add avocado and cilantro. Gently toss to combine.
  • Remove steak from refrigerator 30 minutes before grilling. Discard marinade. Grill steak over direct high heat, turning once, until desired doneness, 8-10 minutes for medium-rare or 6 about minutes for rare. Transfer to cutting board and rest for 5 minutes. Cut against the grain in thin strips.
  • To assemble fajitas: Warm tortillias (stovetop, microwave or oven method) spoon Avocado Corn Salsa over a tortilla. Top with a few steak strips.
  • Garnish with cheese, tomato salsa, sour cream, fresh cilantro and a squeeze of lime.

1 large lime, juice of
2 teaspoons dried oregano
1 tablespoon chili powder
3/4 cup dark beer
1/4 cup olive oil, plus extra for pan
2 lbs flank steaks
1 red bell pepper, sliced (more if desired)
1 poblano pepper, sliced (more if desired)
1 medium red onion, sliced (more if desired)
salt and pepper
12 flour tortillas (6-8 inch)
sour cream
salsa
shredded cheese
guacamole

Steps:

  • In work bowl of a food processor, combine garlic and chilies; pulse to form a chunky paste.
  • Add lime juice, oregano, chili powder, beer and olive oil. Pulse to combine.
  • Place steak in a shallow dish or large zip-top plastic bag. Add marinade and turn to coat. Cover and refrigerate for at least 3 hours or overnight.
  • Heat grill to medium-high. Brush excess marinade from steak and season well with salt and pepper. Grill until medium-rare to medium. Set aside and let rest, covered loosely with foil, for 10 minutes before slicing.
  • Meanwhile, heat a large sauté pan over high heat. Add enough oil to lightly coat pan.
  • When oil is hot, add peppers and onion; season with salt and pepper. Cook quickly, stirring constantly, until vegetables are just softened and starting to brown. Remove from heat.
  • Cut steak into thin slices across grain. Top with peppers and onion.
  • Serve with tortillas and your favorite toppings.

Grilled Skirt Steak With Avocado-Tomato Salsa image

Living in California, we often see skirt steak available. I found this recipe to be fairly authentic to how they grill it out here. You can use lemon juice, but definitely use the lime juice if you can. The onion is wonderful with this but tends to fall though the grill grates, so have an extra sweet onion sliced thick to grill as well. Allow 2 to 4 hours to marinade. (Time for marinading is included in the cooking time)

2 tablespoons olive oil
1/2 cup fresh lime juice (about 8 limes)
1 garlic clove, minced
1/2 onion, thinly sliced (for marinade)
1 large sweet onion (for grilling)
1/4 teaspoon black pepper
1/4 teaspoon salt
2 lbs skirt steaks
12 medium corn tortillas, warmed
1 large tomatoes, peeled and seeded
1 medium ripe avocado, peeled and pitted
1 tablespoon red onion
2 tablespoons cilantro
1 jalapeno chile, seeded
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Place all the marinade ingredients in a bowl and mix. Place skirt steak and marinade in a ziplock bag and put in the fridge for 2 to 4 hours.
  • Meanwhile, mix all the salsa ingredients in a bowl, cover and refrigerate.
  • Place oven on 200°F and wrap your tortillas, sealed in foil for about 20 minutes.
  • Prepare your barbecue for medium heat grilling. Remove steak from the marinade and place on the grill for 4 to 6 minutes on each side (medium rare to medium).
  • Slice the sweet onion and place on the grill as well, brushing with the marinade. Grill until still firm, but just turning tender.
  • Place the steak and onions on a carving platter. Slice the steak thinly on the diagonal and serve on a platter with the onion.
  • To eat, place some steak, onion and Avocado-Tomato salsa in a warm tortilla and enjoy!

2 large tomatoes, seeded and chopped
1/2 cup diced red onion
1/4 cup lime juice
1 jalapeno pepper, seeded and minced
3 tablespoons minced fresh cilantro
2 teaspoons ground cumin, divided

1 beef flank steak (about 1-1/2 pounds)
1 tablespoon canola oil
1 large onion, halved and sliced
6 whole wheat tortillas (8 inches), warmed

Steps:

  • For salsa, place first 5 ingredients in a small bowl; stir in 1 teaspoon cumin and 1/4 teaspoon salt. Let stand until serving., Sprinkle steak with the remaining cumin and salt. Grill, covered, over medium heat or broil 4 in. from heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°), 6-8 minutes. Let stand 5 minutes. , Meanwhile, in a skillet, heat oil over medium-high heat; saute onion until crisp-tender. Slice steak thinly across the grain; serve in tortillas with onion and salsa.
