Spicy crisp potatoes, easy and fun to make, great with Barbacoa or steaks.

1 ½ pounds baby red or gold potatoes
¼ cup Mazola® Corn Oil
Spice Islands® Sea Salt, to taste
1 tablespoon canned chipotles in adobo sauce, or to taste

Steps:

  • Place potatoes in a medium saucepan. Cover with water and bring to a boil. Boil potatoes for 15 to 20 minutes or until cooked through. Drain potatoes and cool for 10 minutes or until cool enough to handle. Position oven rack in the lower third of the oven.
  • Preheat oven to 450 degrees F. Cover a rimmed baking sheet with aluminum foil. Arrange potatoes on baking sheet about 3-inch apart. Using a spatula, smash each potato to about 1/2-inch thickness. Press together if they fall apart. Combine oil and chipotles in an electric blender; puree for 1 minute or until smooth. Drizzle the oil mixture over the potatoes. Gently slide or lift potatoes to ensure oil gets underneath and potatoes are coated. Roast potatoes for 30 to 40 minutes or until deep brown and crisp. Remove from oven and serve immediately.

A quick and super easy sautéed potatoes recipe with homemade chipotle paste. Or use shop bought, if you prefer. Ready in 20 minutes!

6 medium-sized potatoes ((about 700g/1.5 lb))
1 Tbsp salt
1 Tbsp EV olive oil
2 Tbsp chipotle paste (click for homemade recipe)
juice of half a lime
3 sprigs fresh coriander leaves ((cilantro), chopped - optional)

Steps:

  • Scrub the potatoes clean, no need to peel. Then cut them up into 5cm/2" cubes.
  • Bring a large saucepan of water to boil, and add the salt. When boiling, drop the potatoes in and bring back to a boil. Lower heat to medium-low and cook for 10-15 minutes.Check at 10 minutes. If your knife glides right through, they are done. You don't want the potatoes breaking up at all. Drain, and set aside.
  • Heat the olive oil in a large frying pan on medium-high heat. Drop in the drained potatoes and sautè for 2-3 minutes to get a charred colour and flavour. Flip the potatoes to brown all over as much as possible. Don't worry about uncharred sides. The idea in this step is to brown the potatoes before we add the chipotle paste.
  • Add the chipotle paste and stir the paste in, flipping the potatoes to coat all the cubes. You only need to do this for about a minute, to heat the paste through and to coat the spuds.
  • Turn the heat off and squeeze the lime juice all over. Sprinkle the coriander leaves, if using. I don't always bother, preferring just the flavour of the chipotle paste and the lime juice.

2 large potatoes, peeled and sliced
1 chipotle pepper, seeded, or more to taste
2 cloves garlic, minced
½ cup milk
1 small bunch fresh cilantro, chopped, or to taste
2 tablespoons butter, softened
½ teaspoon salt

Steps:

  • Bring water to a boil in a medium saucepan. Add potatoes and cook over medium heat, stirring once in a while, until easily pierced with a fork, 20 to 30 minutes. Drain.
  • Place chipotle pepper and garlic in a food processor; process until minced. Add potatoes and process until mostly smooth. Add milk, cilantro, butter, and salt. Mix until combined but a few lumps remain.

2 pounds baby red potatoes, cut into 1/2-inch-thick slices
Salt
1/4 cup (1/2 stick) unsalted butter, melted
1/2 cup olive oil
1 teaspoon chopped fresh cilantro
1/2 teaspoon chipotle powder
Freshly ground black pepper

Steps:

  • Prepare an indoor grill for direct heat cooking over medium high heat.
  • Cook the potatoes in a large pot of well-salted boiling water for 10 minutes (the potatoes will not be cooked through).
  • Mix the butter with the olive oil, cilantro, chipotle powder and 1/4 teaspoon salt in a bowl. Drain the potatoes and toss with the chipotle oil mixture. Transfer the potatoes to the grill. Grill the potatoes, covered, turning once or twice until tender, about 5 minutes total. Return the potatoes to the bowl and toss again with the chipotle oil mixture. Season with the 1 tablespoon salt and pepper. Serve warm.
  • Cook's Note: If you are using an outdoor grill, try use larger-size potatoes so they don't fall through the grill grate.

4 large russet potatoes, about 2 1/2 pounds, peeled and thinly sliced
Salt
2 chipotles in adobo sauce, chopped, plus 2 tablespoons of sauce
3 tablespoons orange marmalade
3 tablespoons orange juice
3 tablespoons red wine vinegar
3 tablespoons extra-virgin olive oil. eyeball it
1 small red onion or 1/2 large, chopped
Handful chopped cilantro leaves, 2 tablespoons
Couple sprigs fresh oregano, finely chopped (or a couple pinches dried)
Salt and pepper

Steps:

  • Place potatoes in a pot and cover with water. Bring water to a boil and season water liberally with salt and cook the potatoes until just fork tender, 8 to 9 minutes.
  • Combine chipotles, sauce, marmalade, juice, vinegar in a bowl then whisk in the extra-virgin olive oil.
  • Drain the potatoes well, return them to hot pot to let water evaporate, then add immediately to dressing. The dressing will be better absorbed by warm taters. Toss with onions and herbs and season the salad with salt and pepper, to taste. Serve warm or chill. Drizzle a little more extra-virgin olive oil over the salad if it gets dry.

CHIPOTLE SMASHED SWEET POTATOES



Chipotle Smashed Sweet Potatoes image

4 pounds sweet potatoes (6 potatoes)
1 cup whole milk
1 cup heavy cream
1 tablespoon minced chipotle chiles in adobo sauce, with seeds, such as Goya
1 tablespoon adobo sauce (from the can of chiles)
1/4 cup pure Grade A maple syrup
4 tablespoons (1/2 stick) unsalted butter, diced
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Line a sheet pan with aluminum foil.
  • Place the sweet potatoes on the prepared sheet pan and pierce each potato 4 times with a small knife. Roast for 1 to 1 1/4 hours, until very tender inside when tested with a knife. Set aside until cool enough to handle. (Leave the oven on.) Peel the potatoes, discard the skins, and place the potatoes in the bowl of an electric mixer fitted with the paddle attachment.
  • Meanwhile, place the milk, cream, chipotle chile, and adobo sauce in a small saucepan. Bring to a boil, lower the heat, and simmer for 5 minutes. (It might look curdled.)
  • With the mixer on low speed, add the chipotle-milk mixture to the sweet potatoes. Add the maple syrup, butter, and 1 tablespoon salt. Mix until the potatoes are coarsely pureed. Pour into a 9-by-12-by-2-inch oval oven-to-table baking dish and bake for 30 minutes, until heated through. Sprinkle with salt and pepper and serve hot.

1 teaspoon cumin seeds
1 tablespoon extra-virgin olive oil
2 large rainbow carrots, cut into 1-inch half-moons
1 large yellow onion, diced
2 large sweet potatoes (about 2 pounds), cut into 1-inch pieces
Kosher salt
6 cups kale (about 1 pound), woody ends discarded, leaves and stems chopped
Juice of 1 navel orange (about 1/3 cup)
1 tablespoon tomato paste
1 tablespoon dark brown sugar
1 chipotle pepper in adobo, seeded and chopped, plus 1 tablespoon adobo sauce, optional
1 1/2 cups vegetable broth
2 cups cooked brown rice, for serving, optional
2 radishes, cut into thin matchsticks
1/4 cup fresh cilantro, chopped

Steps:

  • Arrange an oven rack in the lower third of the oven and preheat to 350 degrees F.
  • Heat a large braiser or Dutch oven over medium heat. Add the cumin seeds and toast, stirring occasionally, until very fragrant, about 1 minute. Add the olive oil, carrots and onions and cook, stirring frequently, until the carrots soften and the onions start to become translucent, 3 to 4 minutes. Add the sweet potatoes and 1 teaspoon salt and toss together so that everything is coated with the oil and seeds. Cook until the sweet potatoes start to soften slightly on the edges, about 5 minutes.
  • Stir in the kale and 1 teaspoon salt and let wilt slightly, another 2 minutes. While the kale is cooking, stir the orange juice, tomato paste, brown sugar and chipotle into the vegetable broth. Add the adobo sauce, if using. Pour the mixture into the pot. Stir and toss all the vegetables with the broth mixture and bring the mixture to a boil. Taste for seasoning and add more salt if desired.
  • Cover with a lid and bake 30 minutes. Remove the lid, stir and bake, uncovered, until the potatoes are very tender and saucy, about 30 minutes more. Serve on a bed of brown rice if desired, topped with radish and cilantro.

2 tablespoons butter
1/4 cup chicken stock, approximate
2 tablespoons brown sugar
1 chipotle chile in adobo, chopped (Seeded for a milder flavor.)
1 teaspoon adobo sauce
salt
fresh ground black pepper

Steps:

  • Place the prepared potatoes in a large saucepan with cold water and bring to a boil; once boiling add a touch of salt and cook until tender, about 10 minutes.
  • Drain the potatoes and return to saucepan, add 2 tablespoons butter, chicken stock, brown sugar, chipotle pepper and adobo sauce.
  • Mash the potatoes until combined, I like to leave them slightly lumpy.
  • Season with salt and black pepper and serve.

Reheat potatoes, covered, in a 350°F. oven about 30 minutes and season with salt and pepper. Chop cilantro and stir into potatoes.
