CHILI-LIME GRILLED PINEAPPLE
I love grilled pineapple. This recipe combines the fruit's natural sweetness with the tart and spicy flavors of lime and chili powder. It's great for dessert and even as a side dish with ham or pork chops. -Geraldine Saucier, Albuquerque, New Mexico

- Peel pineapple, removing any eyes from fruit. Cut lengthwise into 6 wedges; remove core. In a small bowl, mix remaining ingredients until blended. Brush pineapple with half of the glaze; reserve remaining mixture for basting., Grill pineapple, covered, over medium heat or broil 4 in. from heat 2-4 minutes on each side or until lightly browned, basting occasionally with reserved glaze.

CHARRED PINEAPPLE GUACAMOLE

Steps:
- Heat a well-oiled grill or grill pan to high heat. Combine the chili lime seasoning and chili powder in a small bowl. Coat pineapple rings evenly in this mixture. Grill on both sides until grill-marked and charred, 3 to 5 minutes per side. Let cool, then dice.
- Scoop flesh of 2 avocados into a bowl, then mash. Dice the remaining avocado. Add it to the bowl, then stir in the lime juice, minced cilantro, chile, half of the charred pineapple and salt and pepper to taste. Top with the remaining charred pineapple, a sprinkling of chili lime seasoning and a couple of cilantro leaves. Serve with chips alongside.
GRILLED FRUIT SKEWERS WITH CHILI AND LIME
Steps:
- Soak 18 wooden skewers in water 20 minutes. Thread the watermelon, pineapple and mango cubes on the skewers. Put the skewers in a large zip-top plastic bag, being careful not to puncture the bag; add the lime juice, seal and toss gently to incorporate. Refrigerate at least 30 minutes or until ready to use.
- Preheat a grill or grill pan to medium high. Remove the skewers from the bag and place on a baking sheet. Brush the fruit with vegetable oil and place the skewers on the grill. Grill, turning once, until marks appear, 6 to 8 minutes. Transfer to a serving platter.
- Combine the lime zest, chili powder and 1 teaspoon salt in a small bowl. Sprinkle the seasoning over the grilled fruit.

- Prep the pineapple by cutting into it into 12 spears. Start the outdoor charcoal grill or heat the grill pan on the stove at medium heat. Brush the grill with oil to prevent sticking.
- Place the pineapples on the grill and sear it on each side for 2-3 minutes. The pineapple will have brown char marks and release it's grip from the grill when it's ready to flip to the other side.
- Serve the pineapple on a platter with appetizer picks or wooden skewers. Serve the spice blend with the lime wedges. Coat the lime wedge in the spice blend and rub it on the pineapple. Enjoy!

- Peel and slice a large pineapple. Place the pineapple slices on a baking sheet or a plate. (see notes)
- In a small bowl mix the 3 tablespoons of honey, the ground chili powder and Key lime juice. Mix until the honey is no longer thick.
- Heat your grill to piping hot. Place each pineapple slice on the hot grate and grill until you have dark grill marks on the bottom before turning. Grill the pineapple for about 5 minutes on each side. The grilling time will vary depending on how hot your grill is.
