HOT & SPICY WINGS WITH MAPLE CHIPOTLE HOT SAUCE
Spice rubs are the secret to mouth-watering barbecued meat, giving these sweet and sticky chicken wings extra crispy skin

- Heat oven to 200C/180C fan/gas 6. In a small bowl, mix the ingredients for the spice rub together. Put the chicken wings in a large bowl and mix with the spice rub and a good amount of seasoning. Spread out in a single layer on a large foil-lined baking tray (or 2 smaller ones). Roast for 45 mins, then remove from the oven and drain off any excess oil.
- Heat a gas or charcoal barbecue to high. Mix the ingredients for the hot sauce in a small bowl and brush all over the chicken wings. Cook the wings on direct heat on the barbecue for 3-4 mins each side or heat oven to 220C/200C fan/gas 7 and cook the wings for 15 mins. Serve with plenty of napkins.

- Open can of chipotle peppers in adobo sauce and take out 3 to 5 peppers. Measure 2 tablespoons adobo sauce. Store remaining peppers and sauce for another use.
- Blend chipotle peppers and 2 tablespoons adobo sauce, honey, lime juice, soy sauce, garlic powder, and flour in a blender until almost smooth.

SAUCY CHIPOTLE MAPLE BAKED CHICKEN WINGS
Steps:
- Place a wire rack inside of a baking sheet or roasting pan and place pan on the middle rack of your oven. Preheat to 350° with the pan inside.
- Mix together all dried spices in the Spice Rub in a small bowl. Set aside.
- Rinse and pat dry chicken wings with a paper towel, and place in a medium bowl.
- Drizzle chicken with 2 teaspoons olive oil and toss to coat. Sprinkle with 1 tablespoon of the spice mixture (or more) to your preferred coating and toss to coat. I just used my hands. Easy.
- Let rest 15 minutes. [If you are pressed for time, then you can skip this step.]
- Place chicken skin side up on the pan or rack and space them out at least 1.5 inches so that they don't steam. Bake 20 minutes. Flip and then bake an additional 20 minutes.
- While the chicken is baking, make the sauce. In a small saucepan whisk together all sauce ingredients. Bring to a boil over medium heat and then reduce heat to low and simmer for 15 minutes to marry the flavors. Set aside. You can also make this several days ahead of time or freeze it for several months. Simply thaw on the counter and then reheat in a saucepan!
- Flip one last time and broil for 3-5 minutes or until the outside is browned but not burned. Toss in several tablespoons of sauce. You can adjust the amount to your taste.
- Let rest a few minutes, if for no other reason than you don't want to burn your mouth. Serve with extra sauce for dipping on the side.

- In a medium saucepan on medium heat, add mango nectar, brown sugar, puréed chipotle in adobo, cold butter, lime juice, garlic and chipotle chili pepper. Whisk the ingredients and bring it to a simmer. As soon as it starts to bubbles, reduce heat to low and whisk often.
- When the sauce thickens, about 35 to 45 minutes, remove from the heat and pour it over wings. Makes one cup.

- Combine the first 5 ingredients in a blender.
- Heat oil in medium saucepan over moderately high heat, until hot, but not smoking; add onion and garlic and cook until golden, roughly 5 minutes.
- Add chipotle puree, season with salt and pepper and cook over low heat, roughly 15 minutes, until thickened.
- Stir in lemon juice and allow to cool.

CHIPOTLE LIME GARLIC WING SAUCE
Found this great Wing Sauce Recipe online. I wanted to trying something different than the normal Buffalo Sauce for my smoked Chicken Wings. The Sauce turned out OUTSTANDING on the Wings. The wife and kids loved the Wings. The In-Laws even said it was the best Wings they have ever had. The Sauce has the best of both worlds, Spicy and Sweet. I'm even thinking about using this Sauce on Smoked Ribs. I'm a big fan of this Website and I just want to share this great recipe with everyone here.
