PEPITOS (MEXICAN STEAK SANDWICHES WITH CHIPOTLE CREMA)



Pepitos (Mexican Steak Sandwiches with Chipotle Crema) image

The pepito might be one of the lesser known of the Mexican tortas but it is one of my favorites. This northern Mexican sandwich is served on toasted bolillos (small French rolls), smothered with a tangy, spicy and smoky chipotle crema. The steaks are quick-marinated in lime juice, olive oil and garlic for an easy weeknight skillet torta. But if you have more time, let the steaks marinate for a few hours and fire up the grill for a smokier version of this mouthwatering torta.

3 tablespoons fresh lime juice
4 tablespoons extra-virgin olive oil
3 cloves garlic, finely grated
Kosher salt
1 1/2 pounds flank or skirt steak, cut to fit your skillet
1/2 cup Mexican crema, crème fraiche or sour cream
1 to 3 canned chipotles in adobo (depending on your heat preference), smashed, plus 1 tablespoon adobo sauce
4 large scallions, trimmed
4 Mexican bolillos or hoagie rolls, split and toasted
2 ripe avocados, sliced
4 to 8 pickled jalapeños, quartered lengthwise
1 cup packed cilantro leaves and tender stems
2 ripe tomatoes (or one large), sliced

Steps:

  • Stir together the lime juice, 3 tablespoons of the olive oil, 2 of the grated garlic cloves and 1 1/2 teaspoons salt in a medium bowl until completely combined. Add the steak, toss to coat and let sit until ready to cook. (Steaks can be marinated for up to 6 hours in the refrigerator, covered tightly with plastic wrap.)
  • Stir together the crema, chipotle (1 for mild, 2 for medium, 3 for spicy), adobo and remaining 1 grated garlic clove in a small bowl until completely combined. Let sit until ready to assemble.
  • Heat a large skillet, preferably cast-iron, over high heat until very hot, about 2 minutes. Cook the scallions until charred on both sides, 3 to 5 minutes. Transfer to a plate and set aside until ready to serve.
  • Add the remaining 1 tablespoon oil to the hot skillet and cook the steaks (they will soak up all of the marinade so no need to drain), until charred on both sides, 2 to 3 minutes per side for medium rare. Let rest 10 minutes. Slice against the grain into thin strips.
  • Spread a generous amount of the chipotle crema on the split sides of each bolillo and divide the steak among the 4 bottom bolillos. Top with the sliced avocado, jalapeños and cilantro. Top with the tomatoes and season with salt. Close the sandwiches and serve with the charred scallions.

  • Grill or BBQ steak, basting with marinade.
  • Slice steak against the grain and pour remaining marinade over meat.

1 small bunch fresh cilantro, leaves picked
1/2 medium yellow onion
Juice of 1 1/2 limes
1/2 teaspoon crushed red pepper flakes
4 ounces sour cream
1 large chipotle pepper in adobo, finely diced, plus 1 tablespoon adobo sauce
Mixed greens
6 small fajita-size flour tortillas, warmed
1 pound skirt or flank steak
7 cloves garlic
1 teaspoon Dijon mustard
1/4 cup, plus 2 tablespoons olive oil
1/3 cup, plus 2 tablespoons red wine vinegar
Kosher salt and freshly ground pepper

Steps:

  • For the chimichurri: While the steak rests, place the cilantro leaves, onion, remaining 4 cloves garlic, juice of 1 lime, and remaining 1/3 cup vinegar to a blender and puree until combined. With the blender on low speed, drizzle in the remaining 1/4 cup olive oil in a slow stream. Remove the sauce from the blender and stir in the red pepper flakes and salt, to taste.
  • For the chipotle cream: Combine the sour cream, chipotle pepper, adobo sauce, juice of 1/2 lime, and pinch of salt.
  • Place the steak, 3 cloves garlic, 2 tablespoons each olive oil and vinegar, 1 teaspoon salt, and 1/2 teaspoon pepper, and Dijon mustard in a resealable bag. Rub the ingredients into the meat and place in the refrigerator to marinate for 2 hours.
  • After 2 hours, remove the meat from the bag and pat dry to remove any excess moisture. Lightly season both sides with salt and pepper. Set aside.
  • Spray an indoor, stovetop grill with nonstick cooking spray and preheat on medium-high heat. Place the steak on the preheated grill and grill about 6 minutes on each side for medium rare. After grilling the steak, cover with tented foil and allow to rest for 10 minutes, before thinly slicing across the grain.
  • To serve, top each warm tortilla with some mixed greens and sliced steak. Drizzle with the chimichurri and chipotle cream.
  • Servings: 4 to 6 tacos

2 cups fresh parsley leaves
2 cups fresh cilantro leaves
1 cup fresh mint leaves
8 garlic cloves, chopped
1-3/4 teaspoons kosher salt, divided
1/2 teaspoon plus 3/4 teaspoon freshly ground pepper, divided
2 cups olive oil
2/3 cup red wine vinegar
2 tablespoons lemon juice
1/2 teaspoon crushed red pepper flakes
4 pounds beef flat iron steaks or top sirloin steaks (1 inch thick)

Steps:

  • Place herbs, garlic, 1 teaspoon salt and 1/2 teaspoon pepper in a food processor; pulse until herbs are chopped. Gradually add oil, vinegar, lemon juice and pepper flakes, processing just until blended., Sprinkle steaks with remaining salt and pepper. Grill, covered, over medium heat or broil 4 in. from heat 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Cut steaks into 1/4-in. slices; serve with sauce.

3 lbs flank steaks, trimmed of fat (it's hard to find a 3 lb flank steak so it might be more than one)
marinade
2 tablespoons minced chipotle chiles in adobo
1 tablespoon minced garlic
3 tablespoons chopped cilantro
1/3 cup olive oil
3/4 cup red wine (I prefer Merlot)
1/2 cup soy sauce
1/2 cup honey
2 tablespoons minced chipotle chiles in adobo
3 tablespoons balsamic vinegar
2 tablespoons dijon-style mustard
1/2 cup fresh lime juice
1 1/2 tablespoons minced garlic
1 teaspoon allspice
1/4 cup chopped cilantro
1 teaspoon kosher salt (or to taste)
fresh ground black pepper

Steps:

  • Marinade flank steak for 4 hours or overnight.
  • Remove from marinade and pat dry.
  • Grill on BBQ until just medium rare.
  • Grill time will depend on the size of flank steak (s) (DO NOT OVERCOOK THE FLANK STEAK).
  • Cover loosely with aluminum foil for 7-10 minutes.
  • Slice the meat against the grain in about 1/4 inch thick slices or as thin as you can reasonably get.
  • (It is VERY important to slice the meat against the grain or it will be tough.) At last minute pour some of the dipping sauce over the cut up flank steak and serve.
  • Put the left over dipping sauce on the table for everyone to enjoy.
  • Goes great with grilled corn on the cob and white sticky rice.

2 tablespoons minced chipotle chiles in adobo
1 tablespoon minced garlic
3 tablespoons chopped fresh cilantro
1/4 cup olive oil
3/4 cup hearty red wine (such as burgundy)
1/2 cup soy sauce
1/2 cup honey
2 tablespoons minced chipotle chiles in adobo
3 tablespoons balsamic vinegar
2 tablespoons brown mustard
1/2 cup fresh lime juice (about 4 limes)
1 1/2 tablespoons minced garlic
1 teaspoon ground cumin
1/2 teaspoon ground allspice
1/4 cup chopped fresh cilantro
1 teaspoon kosher salt (to taste)

Steps:

  • To make meat: Carefully trim steak of any fat.
  • Mix together chipotle, garlic, cilantro, oil, wine and soy sauce; pour over steak. Cover and refrigerate 4 to 6 hours or overnight, turning occasionally. I always marinate overnight for the best flavor. To make sauce: In food processor, briefly blend honey, chipotle, vinegar, mustard, lime juice, garlic, cumin, allspice, cilantro and salt. Set aside. Correct seasoning with salt and pepper.
  • Prepare grill and hot coals according to manufacturer's instructions. Remove steak from marinade and discard marinade. Pat steak dry and grill over hot coals to desired doneness, approximately 4 to 5 minutes per side for medium-rare. Let steak rest 3 minutes before slicing.
  • To serve, slice meat thinly across grain on angle and arrange on warm plates with grilled sweet onions and peppers. Drizzle sauce over or serve on side.
  • NOTES : This is a great outdoor dish because it doesn't involve any stove-top or oven cooking. Any leftover meat and sauce can be turned into a filling for tacos or burritos.

Grilled Lime-Marinated Flank Steak With Chipotle-Honey Sauce image

The flank is not the tenderest cut of beef, but it may be the most flavorful. To make it tenderer, I marinate it and slice it against the grain very thin on the bias after cooking it. So what you start with is very thin steak, and what you end up with is large thin slices of char-flavored meat that resembles roast beef. The acid in the lime marinade is very complementary to the char flavor of the meet. Marinated it anywhere from 4 to 6 hours: Any longer than that, and the lime juice will actually cook the steak, leaving you with gray meat. Recipe adapted from Chris Schlesinger Adopted 9/06

1 canned chipotle chile, chopped
2 garlic cloves, chopped
1 tablespoon chopped cilantro
1/4 cup vegetable oil

1/4 cup honey
2 tablespoons peanut oil

  • TO MARINATE STEAK: Place the steak in a large dish or baking pan.
  • Mix together the chipotle, garlic, cilantro, vegetable oil, and lime juice in a bowl and pour over the steak.
  • Cover, and marinate in the refrigerator for 4 to 6 hours (do not marinate longer), turning occasionally.
  • Prepare the grill.
  • FOR SAUCE: Combine the chipotles, honey, peanut oil, vinegar, mustard, lime juice, garlic, and cumin in a blender or food processor and puree until smooth.
  • Stir in the cilantro and season with salt and pepper to taste.
  • TO PREPARE STEAK: Remove the steak and season with salt and pepper.
  • Grill over high heat for about 5 minutes on each side for medium-rare, 7 minutes on each side for medium, or to the desired doneness.
  • Remove the steak from the grill and let it rest for about 4 minutes.
  • With a sharp knife, thinly slice the steak across the grain and at a sharp angle.
  • TO SERVE: Serve the steak on top of a slice of the French bread and accompany each serving with several tablespoons of the sauce.
