This easy Chipotle Chicken Marinade combines some of my favorite Mexican flavors, chipotles in adobo sauce and fresh lime! Add some staple spices and you have a delightful flavor combined and ready to really take a simple piece of chicken to fiesta-worthy heights!

2 Tbsp adobo sauce ((with chopped chipotle peppers))
2 Tbsp olive oil ((extra virgin))
1 Tbsp lime juice
1/2 tsp cumin
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp each, salt & pepper

Steps:

  • Combine adobo sauce, olive oil, lime juice, cumin, onion powder, garlic powder, salt, and pepper in a small mixing bowl. Stir together.
  • Pour marinade in a Ziplock bag.
  • Add the chicken and press out any air in the bag and seal.
  • Massage the marinade into the chicken through the bag.
  • Refrigerate for at least 4 hours before use. A 24-hour marinade will yield the best results for marinade flavor.

Smoky chipotles, garlic, and honey are combined in this Chipotle Marinade. This simple marinade is packed with awesome smoky southwestern flavor.

6 tablespoons olive oil
2 tablespoons honey
4 large cloves garlic
4-5 chipotle peppers in adobo sauce* (I put frozen peppers directly into the blender)
1/2 teaspoon cumin
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 lbs chicken (breasts, thighs, drumsticks, bone-in or boneless)

Steps:

  • Place all ingredients, except chicken, into the blender or small food processor and puree for a few moments. Pour the marinade over chicken in an airtight container or large ziploc bag and shake to coat each of the pieces.
  • Place in the refrigerator and turn the chicken (or flip the bag) a couple times over the next few hours. I let mine marinate for about 6 hours.
  • When you are ready to cook the chicken, remove from the refrigerator about 30 minutes prior to cooking. Enjoy!

This is a great, smokey, spicy marinade for chicken or firm fish. The marinade itself is very spicy, not to be used as a sauce. But the end result has just a little kick, not overpowering.

3 chipotle peppers in adobo sauce
2 garlic cloves
¼ teaspoon cayenne pepper
¼ teaspoon paprika
⅛ teaspoon ground black pepper
⅛ teaspoon ground cumin
2 tablespoons lime juice
2 tablespoons Worcestershire sauce
2 tablespoons honey
¼ cup balsamic vinegar
¼ cup olive oil
kosher salt to taste
4 skinless chicken drumsticks

Steps:

  • Place the chipotle peppers, garlic, cayenne pepper, paprika, black pepper, cumin, lime juice, Worcestershire sauce, honey, vinegar, and olive oil into a blender. Puree until no pieces of garlic remain. Pour 1/4 of the marinade into a small dish and set aside. Rub a pinch of kosher salt into each chicken drumstick and place into a resealable plastic bag. Pour in the marinade, shake, and seal. Marinade at least 2 hours in the refrigerator.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove the chicken from the marinade and shake off excess. Discard the remaining marinade.
  • Cook the chicken legs on the preheated grill until no longer pink at the bone and the juices run clear, about 8 minutes per side. An instant-read thermometer inserted near the bone should read at least 165 degrees F (74 degrees C). Once the legs are completely cooked, baste well with the remaining marinade, cover the grill, and cook and additional 2 minutes per side to glaze.

2 tsp cumin powder (a perfect complement to any Mexican dish)
2 tbsp oregano
3 tsp garlic flakes
2 tsp salt
1/3 cup dried onion
3/4 cup oil

  • Blend in food processor until smooth. I slow cook my meat in a crock pot then cooled it before coating with this marinade. I can use this right away for burritos or fajitas or store for future use. A little goes a long way and it comes in handy for quick dinners.

What interested me about this flank steak was that it had all the ingredients that I loved and that it could made this ahead of time. Any leftover chipotle peppers can be frozen in a zip lock bag and broken off when needed (This does not include the marinating time)

3 tablespoons olive oil
3 tablespoons lime juice
1 teaspoon cumin
1 1/2 lbs flank steaks
2 tablespoons honey
1 tablespoon Dijon mustard
1 tablespoon hoisin sauce
1 tablespoon lime juice
2 teaspoons chipotle chiles in adobo
1 large garlic, minced

Steps:

  • Score the flank steak on both sides to tenderize the meat.
  • For the marinade, combine the oil, lime juice, garlic and cumin.
  • Add the marinade to the meat. Marinate steak in this mixture for up to 2 days.
  • For the glaze, mix the honey, mustard, hoisin, lime juice, chipotles and garlic in bowl. Set aside. (can make ahead of time).
  • Grill steak, basting with glaze until done. Let steak sit for 5 minutes.
  • Slice steak against the grain.

1/2 cup onion, finely chopped
2 -3 chipotle chiles in adobo, minced
1 1/2 tablespoons garlic, peeled and minced
2 teaspoons ground cumin
2 teaspoons sea salt
1 teaspoon chili powder
1 teaspoon paprika
1 tablespoon olive oil (EVOO)
2 lbs skirt steaks, rinsed and patted dry
1 lime (optional)

Steps:

  • Mix onion, chipotle chiles, garlic, cumin, salt, chili powder, paprika and olive oil in a large bowl or ziploc bag.
  • Add steak and coat completely and evenly.
  • Cover and let stand at room temperature for 30 minutes.
  • Preheat grill to high heat.
  • Cook steak over high heat, until nicely browned and cooked to your desired doneness. (about 6 minutes for rare; 8 minutes for medium-rare).
  • Remove from grill and place on cutting board; loosely tent with foil.
  • Let rest 10 minutes.
  • Squeeze juice of fresh lime over steak, if desired.
  • Slice into thin strips, across grain.
  • Serve.
  • If making fajitas, grill some onions & peppers along with the steaks. Add other garnishes as desired, such as avocado slices and tomatoes.
  • For tacos you may want to add lettuce, cheese & salsa.
  • These make delicious sandwiches served on crusty rolls with grilled onions, mushrooms & peppers; topped with melted swiss or jack cheese.

3 garlic cloves
1/2 cup chipotle chile in adobo
1 large lime, juice of
2 teaspoons dried oregano
1 tablespoon chili powder
3/4 cup dark beer
1/4 cup olive oil, plus extra for pan
2 lbs flank steaks
1 red bell pepper, sliced (more if desired)
1 poblano pepper, sliced (more if desired)
1 medium red onion, sliced (more if desired)

12 flour tortillas (6-8 inch)
sour cream
salsa
shredded cheese
guacamole

Steps:

  • In work bowl of a food processor, combine garlic and chilies; pulse to form a chunky paste.
  • Add lime juice, oregano, chili powder, beer and olive oil. Pulse to combine.
  • Place steak in a shallow dish or large zip-top plastic bag. Add marinade and turn to coat. Cover and refrigerate for at least 3 hours or overnight.
  • Heat grill to medium-high. Brush excess marinade from steak and season well with salt and pepper. Grill until medium-rare to medium. Set aside and let rest, covered loosely with foil, for 10 minutes before slicing.
  • Meanwhile, heat a large sauté pan over high heat. Add enough oil to lightly coat pan.
  • When oil is hot, add peppers and onion; season with salt and pepper. Cook quickly, stirring constantly, until vegetables are just softened and starting to brown. Remove from heat.
  • Cut steak into thin slices across grain. Top with peppers and onion.
  • Serve with tortillas and your favorite toppings.

This makes a thick, delicious paste that coats the chicken with tons of flavor. I like to make more than one batch at a time, apportioned into quart-sized ziplocs containing enough marinade for two chicken breasts. I freeze my chicken in the same bag with the marinade; the night before I intend to grill, I put the whole bag in the fridge and let it defrost / marinade overnight and all through the next day. I like to serve some fresh, homemade pico de gallo on top. Note: When I open a new can of chipotles, I always freeze them individually with the adobo sauce split evenly among each "batch." Therefore, I'm not positive about the amount of adobo sauce I add, but the 1 tablespoon listed below is a decent approximation!
